GRILLED TERIYAKI PORK LETTUCE WRAPS

Grilled Teriyaki Pork Lettuce Wraps image

This simple and refreshing recipe works wonders for a quick dinner and makes an excellent lunch. If you like, garnish the wraps with a squeeze of fresh lime juice and some chopped peanuts.

Time 40m

Yield Serves 4

Number Of Ingredients 5

1 pork tenderloin (about 1 pound)
1/3 cup prepared teriyaki sauce, plus more for serving
1 head bibb or Boston lettuce
2 cups shredded crisp vegetables (carrots, Napa cabbage, radishes and/or cucumbers)
1/2 cup chopped fresh herbs (any combination like basil, cilantro, mint or chives)

Steps:

  • Combine pork and teriyaki sauce in a bowl or resealable plastic bag and refrigerate for at least 1 hour and up to 1 day.
  • Prepare a grill for medium-heat cooking.
  • Remove pork from marinade and discard leftover marinade.
  • Grill pork, turning frequently, until browned all over and cooked through, about 12 minutes; if pork browns too quickly, move it to a cooler part of the grill.
  • Transfer pork to a cutting board, cover loosely with foil and let rest 10 minutes.
  • Cut into thin slices, and then cut the slices into thin strips.
  • Meanwhile, rinse 12 of the largest lettuce leaves.
  • Pat leaves dry and place them on a large platter. Top each with shredded vegetables, pork and herbs.
  • Drizzle with additional teriyaki sauce and serve.

SPICY PORK LETTUCE WRAPS

Spicy Pork Lettuce Wraps image

These lettuce cups filled with spicy ground pork take inspiration from Larb. Found in several Southeast Asian countries, Larb usually features seasoned ground meat served with sticky rice or lettuce cups, topped with fresh vegetables and herbs. Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. These can also be made with ground chicken, duck, turkey, or crumbled tofu in place of the ground pork. Fresh and flavorful, these lettuce cups are super easy to make at home any night of the week.

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 20

2 tablespoons soy sauce
1 teaspoon grated fresh ginger (from about 1/2-inch piece)
1 teaspoon sesame oil
1 medium carrot, grated or julienned
1 bunch scallions, thinly sliced
Juice of 1 lime
1 tablespoon vegetable oil
1 pound ground pork
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
4 cloves garlic, minced
One 1 1/2-inch piece ginger, peeled and finely grated (about 1 tablespoon)
1 shallot, minced
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 head Bibb, butter or iceberg lettuce, separated into leaves
Fresh cilantro leaves, for serving
Fresh mint leaves, for serving
1/2 cup roasted salted peanuts, chopped
Sriracha, for serving

Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes. Transfer the pork to a serving bowl.
  • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.

ASIAN GRILLED PORK TENDERLOIN LETTUCE WRAPS

Asian Grilled Pork Tenderloin Lettuce Wraps image

I make this on one night, and "Tacos Al Pastor" on the second night because the two recipes share a lot of ingredients, but taste nothing alike. Tacos Al Pastor also requires overnight marinating, so this dish can be made the day the ingredients are purchase, while Tacos Al Pastor marinates for the second night. This recipe is also super healthy.

VIETNAMESE GRILLED PORK WRAPPED IN LETTUCE

Vietnamese grilled pork wrapped in Lettuce image

This interesting Vietnamese grilled dish combines pork with the sweet spice of anise and cinnamon. The longer the pork is marinated, the more flavorful the dish. To serve according to Vietnamese tradition, wrap in lettuce leaves, with noodles and fresh mint and cilantro leaves inside. I found this recipe at the EthnicGrocer sight. How good and easy does it sound! I think I'll make it with chicken!
