Grilled New Potatoes with Smoked Paprika Vinaigrette and Parmesan image

1 1/2 pounds small yellow new potatoes
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
1 teaspoon smoked paprika
1/4 cup chopped fresh parsley, plus whole leaves for garnish
1/4 cup aged sherry vinegar
1 heaping teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
Clover honey, optional
1/4 cup grated Parmesan

Steps:

  • Put the potatoes in a pot and cover by 2 inches with cold water. Add 2 tablespoons of salt, bring to a boil and cook until a skewer inserted in the center of a potato meets no resistance, about 20 minutes. Drain well and cool slightly.
  • Preheat a grill to high heat. Halve the potatoes and toss with the canola oil, smoked paprika and some salt and pepper. Grill the potatoes cut-side down until golden brown and crusty, 4 to 5 minutes.
  • While the potatoes are grilling, whisk the vinegar, mustard, parsley and salt and pepper until combined. Slowly whisk in the olive oil. Taste; add a drop or two of honey if desired.
  • Mound the cooked and still warm potatoes in a large shallow bowl. Drizzle with the vinaigrette and top with the Parmesan and parsley leaves.

1/4 cup plus 1 tablespoon olive oil
3 russet potatoes, cut into 1-inch pieces
Coarse salt
2 onions, sliced into rings
1/2 teaspoon pimenton
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Cook potatoes, covered, for 5 minutes. Season with salt. Add remaining 2 tablespoons oil and the onions; stir. Reduce heat to medium, and cook, covered, for 5 minutes more. Uncover, and cook, tossing often, until potatoes and onions begin to brown, about 8 minutes.
  • Sprinkle with pimenton, and cook until potatoes and onions are golden brown and tender, about 8 minutes more. Toss with parsley, and season with salt.

2 large baking potatoes, thinly sliced
1 onion, thinly sliced
1 green bell pepper, diced
1 red bell pepper, diced
6 button mushrooms, sliced
salt and black pepper to taste
1 pinch mixed vegetable flakes, or to taste
1 pinch paprika, or to taste
2 tablespoons reduced fat spread (such as Brummel & Brown®), or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  • Cut two 12x18-inch pieces of aluminum foil and fold them in half to create two 12x9-inch rectangles. Spray one side of each piece with cooking spray. Arrange the potatoes over one sheet of prepared foil in an overlapping pattern, leaving 2 inches free on all sides. Sprinkle with the onion, green bell pepper, red bell pepper, and sliced mushrooms. Season with salt, pepper, vegetable flakes, and paprika to taste. Dot with the reduced fat spread. Place the second piece of foil over the potatoes with the greased side down. Seal the edges by creating several folds; poke 4 to 6 holes in the top to allow steam to escape.
  • Cook on the preheated grill until the potatoes are tender, 20 to 30 minutes.

Steps:

5 large gold potatoes
2 tablespoons smoked paprika, plus more for garnish
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon granulated garlic
1 tablespoon granulated onion
2 tablespoons olive oil, divided
nonstick cooking spray, for greasing
2 tablespoons fresh flat-leaf parsley, minced

Steps:

  • Cut the potatoes into wedges. Add the wedges to a pot of cold salted water, then bring to a boil. Cook until the potatoes are almost tender, about 10 minutes, then drain. Spread the potatoes on a baking sheet.
  • In a small bowl, mix together the paprika, salt, and pepper.
  • Drizzle the potatoes with 1 tablespoon of olive oil and season with the spice mixture.
  • Heat a grill pan over medium-high heat. Grease the grill with grapeseed oil. Add the potatoes to the hot grill and cook until grill marks form on both sides, about 2 minutes per side.
