2 tablespoons olive oil
salt, to taste
pepper, to taste
4 tablespoons butter
1 tablespoon garlic, minced
½ cup grated parmesan cheese

Steps:

  • Preheat a grill or grill plate to medium heat.
  • Drizzle the corn with olive oil and sprinkle with salt and pepper. Mix to ensure all the ears are evenly coated.
  • Place the corn on the grill. Close the lid to keep the temperature high, and let the corn cook for about 15 minutes per side, or until slightly charred on all sides.
  • Remove the corn from the heat and set aside.
  • Place the garlic and butter in a microwave-safe bowl and microwave for 1 minute, or until melted.
  • Brush the garlic butter on the corn. Sprinkle with grated parmesan cheese.

4 tablespoons Challenge butter, (melted)
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1 tablespoon chopped fresh basil
1/4 cup finely grated Parmesan cheese

Steps:

  • Combine butter, garlic powder, red pepper flakes, and chopped basil in a small bowl.
  • Preheat a grill to medium-high heat. You can either grill corn directly on grates or wrap in aluminum foil and place on the gill.
  • Brush butter mixture all over corn. If grilling directly on grates, just coat lightly. If wrapping in aluminum foil, give corn a heavy slather and seal the foil around the corn so the butter can't leak out.
  • Grill corn for 10 to 12 minutes, rotating about every 2 to 3 minutes.
  • Remove corn from grill and brush with more butter mixture and sprinkle with Parmesan cheese.

Steps:

  • Prepare grill for direct cooking over medium-high heat. Finely process peppers, shallot, parsley, salt and pepper using Manual Food Processor.Combine pepper mixture and butter in small mixing bowl; mix well. 2 teaspoons yellow mustard
Kosher salt and freshly cracked black pepper
1 cup grated Parmesan
1/2 cup extra-virgin olive oil
4 ears corn, shucked
1/4 cup fresh Italian parsley, minced

Steps:

  • Preheat an outdoor grill or indoor grill pan to medium-high heat.
  • Pulse the garlic in a food processor until very finely minced. Add the mustard, 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 cup Parmesan and pulse until everything is well combined. Pour the olive oil slowly into the mixture while pulsing. Take 1/4 cup of the mixture and brush it over the ears of corn so that they are completely coated, then set aside the remaining mixture. Mix the remaining 1/2 cup Parmesan with the parsley in a small bowl and set aside.
  • Add the corn to the grill and cook, turning halfway through, until the corn is charred and browned in spots, about 15 minutes. Remove the corn to a platter and brush it with the remaining garlic mixture, then sprinkle the corn with the parsley and cheese mixture. Serve immediately.

4 ears corn, unhusked
Red Bell Pepper Butter, recipe follows
2 red bell peppers
1 pound butter, at room temperature
1/4 cup basil leaves
2 tablespoons lime juice
Salt and freshly ground pepper

Steps:

  • It is a popular misconception that corn must be soaked in water or wrapped in tin foil before being cooked on the grill. Bollocks. All you need to do is peel off the excess huskage (leaving the cob with 2 or 3 layers of husk still intact) and yank off the silk. Then simply place the corn on the hottest part of the grill and turn 1/4 rotation every 2 to 3 minutes, as the husk starts to blacken. When the entire husk begins to resemble blackened carbon, remove from grill. Peel away blackened husk and serve with Red Bell Pepper Butter.
  • F.Y.I., the heat of the grill causes the natural sugars in the corn to caramelize and some of the kernels to turn brown. The more browning, the sweeter the corn.
  • Roast the red peppers whole over a charcoal flame or under a broiler, turning until entirely blackened. Remove from the grill and immediately place in a paper bag. Seal bag and let sit for 10 minutes. Peel off the charred skin and discard. Slice the peeled peppers open and discard the membranes and seeds.
  • In a food processor, puree the butter, peppers, basil, lemon juice, salt and pepper.
  • Divide butter into 4 equal amounts, place each portion on tin foil, waxed paper or plastic wrap, then roll into a butter log, approximately 1 1/4-inches in diameter. Return to refrigerator until butter hardens. To serve, remove from foil, and slice into 1/4-inch slices. Flavored butter may be kept refrigerated for up to 1 week or frozen for 1 month. It is excellent on burgers, veal chops, steaks, baked potatoes, or on toasted crusty bread.

1 cup cornmeal
1 cup fresh corn kernels
1/2 cup parmesan cheese, grated
3 sweet red peppers
1 tablespoon extra-virgin olive oil
1 teaspoon white wine vinegar
1 pinch salt
8 leaves fresh basil, thinly sliced

Steps:

  • ROASTED RED PEPPERS: Broil red peppers, turning often, until charred, 15 minutes. Let cool. Peel off blackened skins. Core, seed and thinly slice; place in a small bowl.
  • Sprinkle with oil, vinegar and salt; toss. Stir in basil. Set side.
  • In large saucepan, bring 4 cups water and salt to boil; reduce heat to low. Gradually whisk in cornmeal; cook, stirring often, for 10 minutes.
  • Add corn; cook until tender-crisp and polenta is thick enough to mound on a spoon, 5-10 minutes. Stir in cheese. Spread in greased 13x9-inch glass baking dish. Let cool until set, about 30 minutes.
  • Cut polenta into 12 squares. Place on greased grill over medium heat; close lid and grill, turning once, until marked, about 8 minutes. Served topped with red peppers.

½ teaspoon cumin seeds
2 teaspoons vegetable oil, divided
2 cloves garlic, minced
salt and ground black pepper to taste

½ cup finely chopped cilantro
2 tablespoons lime juice

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place corn on the preheated grill and cook, turning often, until roasted and charred all over, about 10 minutes.
  • While corn is grilling, heat a small, dry skillet over high heat. Add cumin seeds and shake constantly until dark and aromatic, about 1 minute. Remove from the heat and crush in a mortar and pestle; set aside.
