Grilled Salmon and Dill Rolls image

Rolling marinated salmon fillets and then grilling them seems like a good idea, right? But this becomes an amazing idea when you decide to pair the rolls with a dip made of yogurt, cucumber, and some light mayo. Try and you'll find out!

Number Of Ingredients 10

1 tablespoon olive oil
1 tablespoon lime juice
1 teaspoon dijon mustard
salt
pepper
3.5 ounces of salmon, 3 fillets
½ cup fresh dill
2 tablespoons of yogurt
1 tablespoon light mayonnaise
½ small cucumber, grated

Steps:

  • Add the olive oil, lime juice, mustard, salt, pepper to a zip bag.
  • Add the salmon fillets to the bag, lock the bag, rub the salmon with the mixture, then let the fish marinate for 30 minutes.
  • Lay the salmon fillets on your workspace, then add fresh dill on each one. Keep some dill for the dip. Roll the fillets and stick them with skewers. Grill the salmon rolls.
  • Make a dip by mixing the yogurt with mayonnaise, cucumber, dill, salt, and pepper.

¼ cup mayonnaise
1 tablespoon chopped fresh dill, or to taste
2 teaspoons Dijon mustard
3 pinches brown sugar, or to taste
1 teaspoon vegetable oil
½ pound salmon fillet, skin on

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix mayonnaise, dill, mustard, and brown sugar in a bowl. Spread vegetable oil over salmon skin.
  • Grill salmon skin-side down on preheated grill. Spread mayonnaise mixture over top of salmon and cook until salmon is easily flaked with a fork, 6 to 12 minutes.

1 tablespoon canola or olive oil
1 tablespoon chopped fresh dill weed
1 teaspoon grated lemon peel
3 tablespoons lemon juice
2 tablespoons honey
1/2 teaspoon garlic-pepper blend
1 lb salmon fillets, cut into 4 pieces (4 oz each)
1 container (6 oz) Greek Fat Free plain yogurt
1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill
1/2 teaspoon grated lemon peel
1 tablespoon lemon juice
1/8 teaspoon pepper

Steps:

  • Heat gas or charcoal grill. In small bowl, mix all marinade ingredients except salmon.
  • In 8-inch square (2-quart) glass baking dish, arrange salmon pieces skin side up in single layer. Pour marinade over salmon; turn to coat. Cover with plastic wrap; refrigerate 20 minutes.
  • Heat gas or charcoal grill. Brush grill rack with oil. Remove salmon from marinade; discard marinade. Place skin side down on grill over medium heat. Cover grill; cook 10 to 15 minutes or until salmon flakes easily with fork.
  • Meanwhile, in small bowl, mix sauce ingredients. Serve with salmon.

  • Placed rinsed salmon in a shallow baking dish with skin side down.
  • Combine all ingredients for sauce in a small bowl and whisk until well blended.
  • Brush fish lightly with sauce on both sides and let reach room temperature while preparing grill.
