Steps:

  • Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. For cheeseburgers, top with 2 slices cheese during the last minute of cooking; cover the grill to melt.

BASIC GRILLED BURGERS

Basic Grilled Burgers image

Use a gentle hand when mixing together the meats: If they are overworked, the burgers will be tough.

Provided by Food Network Kitchen

Time 15m

Yield 4

Number Of Ingredients 5

12 ounces beef chuck, coarsely ground
12 ounces beef sirloin, coarsely ground
Kosher salt and freshly ground black pepper
2 teaspoons vegetable oil, for the grill grates
Hamburger buns, cheese, onion, tomato, lettuce, pickles and french fries, optional, for serving

Steps:

  • Preheat a grill over medium-high heat.
  • Gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle evenly with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
  • Lightly grease the grill grates. Put the patties on the grill; do not press down on them with a spatula. Cook until the patties are seared and browned on one side, about 3 1/2 minutes. Flip and cook on the second side until browned, about 3 minutes for medium-rare.
  • Assemble the burgers using your favorite buns and toppings and serve with french fries, if desired.

GRILLED HAMBURGERS

Grilled Hamburgers image

We cook a lot of burgers indoors on a fat-slicked iron skillet, and you can do that on a grill as well. (Here's our burger guide for more information and inspiration.) But sometimes you want a smoky grilled burger. For that, a charcoal grill is best, but a gas grill can do the trick, too. Resist the temptation to press down on the burgers with a spatula, which only spews juice and fat on the fire, causing the flames to flare up and the burger to lose flavor. If you feel your burger is cooking too quickly, use the cooler sides of the grill to rest them. And remember: lowering the top on the grill helps cheese melt.

Categories     dinner, easy, lunch, quick, weekday, barbecues, burgers, meat, main course

Time 15m

Yield 4 servings

Number Of Ingredients 4

1 1/2 pounds ground beef, about 20 percent fat
Kosher salt and black pepper
Cheese slices (optional)
4 hamburger buns, split

Steps:

  • Start a charcoal fire or heat a gas grill. (Check out our grilling guide for how.) Form the patties into 3/4-inch burgers, being careful not to make them too loose or too large, then make a deep depression in the center of each burger with your thumb. Season both sides of the each burger aggressively with kosher salt and black pepper.
  • Place burgers on a hot grill and cook, without moving, for about 3 minutes. Use a spatula to turn the hamburger over. If using cheese, lay slices on the meat. Continue to cook until the burgers are cooked through, about another 3 to 4 minutes for medium-rare. Remove the burgers from the grill and allow to rest for a few minutes while you toast the buns. Top the burgers as you desire.

GRILLED SAM-BURGERS

Grilled Sam-Burgers image

From: Family Fun Magazine. And I quote: "When it comes to grill recipes, we'll put our money on any guy whose two-year-old daughter tells him, "Dad, I want some brisket!" So when Sam Mead, the senior producer for Family Fun.com, showed us his recipe for Sam Burgers, we couldn't get to our grill fast enough. We could tell from the ingredients that this was the sort of spiffed-up burger a guy could actually prepare without gourmet credentials. As for testimonials, Sam reports that his daughter, Ruby, "goes right for the burger and forgets about the bun." The biggest reward of backyard grilling? According to Sam, it's the satisfaction of cooking for friends and family. And, he says, "Cooking outdoors always seems to make the food taste especially good". As toppings aren't mentioned use your favorites.

Categories     Meat

Time 23m

Yield 4 serving(s)

Number Of Ingredients 8

1 -1 1/4 lb ground beef
3 tablespoons steak sauce (such as A.1.)
1 tablespoon Dijon mustard
1/2 teaspoon salt

2 garlic cloves, minced
2 teaspoons minced fresh oregano (or 3/4 teaspoon dried)
1 -2 tablespoon finely minced onion

Steps:

  • Combine all of the ingredients in a large mixing bowl, mixing thoroughly with your hands or a wooden spoon.
  • Shape into 4 patties by hand, making the center of each just a little thinner than the edges.
  • Refrigerate until ready to grill.
  • Start your grill, and when it's good and hot, grill the burgers to the desired doneness, flipping once.
  • They'll take about 4 minutes on each side, more or less, depending on how you like them cooked.
  • To make cheeseburgers, top with slices of American cheese or sharp Cheddar cheese after you flip them.
  • Makes 4 burgers.

GRILLED HAM BURGERS

Grilled Ham Burgers image

My family loves my ham loaf, so I decided to make the ham loaf mixture into patties and grill them-it was an instant hit. Adding the arugula gives these burgers a peppery bite and honey mustard dressing adds just the right sweet and sour flavor. -Susan Bickta, Kutztown, Pennsylvania

Provided by Taste of Home

Add a slice of cheese to each burger; grill, covered, until cheese melts, 1-2 minutes more. Remove from heat when a thermometer reads 160°., Place a burger on bottom half of each roll; add two tomato slices. Drizzle with 1 tablespoon honey mustard dressing. SMASH BURGERS

Smash Burgers image

This is the traditional, griddled hamburger of diners and takeaway spots, smashed thin and cooked crisp on its edges. It is best to cook in a heavy, cast-iron skillet slicked with oil or fat, and not on a grill. For meat, ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and try not to handle it with your fingers - use an ice-cream scoop or spoon instead. Plop down a few ounces in the pan, smash it with a spatula, salt it, let it go crisp and flip. Add cheese and get your bun toasted. The process moves quickly.

Provided by Sam Sifton

Categories     weeknight, burgers, main course

Time 20m

Yield 4 to 8 servings

Number Of Ingredients 6

1/2 teaspoon neutral oil, like canola, or a pat of unsalted butter
2 pounds ground chuck, at least 20 percent fat
Kosher salt and black pepper to taste
8 slices cheese (optional)
8 soft hamburger buns, lightly toasted
Lettuce leaves, sliced tomatoes and condiments, as desired

Steps:

  • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 8 small piles of around 4 ounces each, and even more gently gather them together into orbs that are about 2 inches in height. Do not form patties.
  • Increase heat under skillet to high. Put half the orbs into the skillet with plenty of distance between them and, using a stiff metal spatula, press down on each one to form a burger that is around 4 inches in diameter and about 1/2 inch thick. Season with salt and pepper.
  • Cook without moving until patties have achieved a deep, burnished crust, a little less than 2 minutes. Use the spatula to scrape free and carefully turn burgers over. If using cheese, lay slices on meat.
  • Continue to cook until meat is cooked through, approximately a minute or so longer. Remove burgers from skillet, place on buns and top as desired. Repeat process with remaining burgers. Serving two hamburgers on a single bun is not an outrageous option.

  • Gently combine ingredients, handling as little as possible. Shape meat into the desired number of patties (4-6, depending on how large you make them.) Use your thumb to make an indentation in the top of each burger–this will keep the burgers from seizing up and becoming round while cooking.
  • Grill for about 7 minutes on each side over medium heat (or until they’re as non-pink as you want them.)
  • While the burgers are cooking, get your toppings ready. Need some ideas? There are the classic toppings like cheese (cheddar, American, and pepperjack are all good choices), mayo, ketchup, mustard, Romaine or iceberg lettuce, sliced red onions, tomatoes, pickles. You can also (and I definitely think your should) toast your buns. I like to slice the buns open and spread them with a little butter and then you can either place them under the broiler in your oven or buttered-side-down on a hot skillet or on the grill’s lowest setting.
  • If you want cheese on your burger, place it on top of the burger while it’s still cooking (and has about 1-2 minutes left). When the burgers are done and the cheese is melty, place them on your toasted buns and then add your desired toppings!
