SAUSAGE AND PEPPER SKEWERS WITH GRILLED POLENTA



Sausage and Pepper Skewers with Grilled Polenta image

Nonstick cooking spray
6 cups water
1 (10-ounce) package quick cooking polenta
5 tablespoons canola oil
2 pounds hot Italian sausage
1 red bell pepper
2 green bell peppers
1 large yellow onion
1 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
1 teaspoon spicy brown mustard
Kosher salt and freshly ground black pepper
10 (10-inch) skewers

Steps:

  • Spray a 9 by 13-inch baking pan with nonstick cooking spray. Bring 6 cups of salted water to a boil over medium heat. Once boiling slowly whisk in the polenta, making sure to keep whisking until smooth and thick about 1 to 2 minutes. Pour the cooked polenta into the baking pan and smooth the top. Let cool until firm, about 20 minutes.
  • Preheat a grill or grill pan over medium-high heat. When the polenta is cool, invert it onto a cutting board and slice it into 12 squares. Brush the squares with a little canola oil and grill until they are heated through and have nice grill marks, about 2 minutes per side.
  • Meanwhile, if you are using wooden skewers, soak them in water for at least 30 minutes or while you prepare the sausage and peppers.
  • Preheat a grill or grill pan over medium heat. Arrange the sausages on the grill and cook for 8 to 10 minutes giving them a 1/4 turn every couple of minutes. Remove them to a cutting board and let rest for 5 minutes, then cut them into 1/2-inch thick pieces. The sausage will not be completely cooked through. It will finish cooking on the skewers with the peppers and onions.
  • While sausage is cooking, core and slice the peppers. Cut them and the onion into 1 by 1-inch pieces.
  • In a small bowl, whisk together 3 tablespoons canola oil, balsamic vinegar, Italian seasoning and mustard.
  • When you are ready, heat the grill or grill pan over medium heat. Thread each skewer with 3 pieces of the sausage, 4 pieces of onion and green pepper and 2 pieces of the red pepper making sure to alternate the ingredients. Brush them with the oil and vinegar mixture and season with salt and pepper, to taste. Grill the skewers on both sides until they are hot and sizzling, about 6 to 8 minutes. 2 small zucchini
5 uncooked sausage links
1 small red onion (peeled)
Olive oil
white wine vinegar
1 tbsp za'atar spice
salt and pepper

Steps:

  • If using wooden skewers, soak eight in water for 15-30 minutes.
  • Preheat your grill to medium high.
  • Cut ends off zucchini. Using a vegetable peeler or mandolin, carefully slice lengthwise until you have several zucchini ribbons. Lay onto paper towel lined baking sheet and salt each piece well. Set aside letting them sit for at least 30 minutes turning occasionally. Wipe off excess water and salt.
  • Brush grill with olive oil, and then grill the sausages until partially cooked, about 7 minutes, rotating while cooking. Remove from heat, tent and set aside to cool.
  • Slice onion in half lengthwise and into four wedges. Cut the wedges in half crosswise if the onion is large and into smaller chunks roughly the same size as the other pieces going onto your skewer.
  • Slice the cooled sausage into chunks about the same size as some of our skewered vegetables for even cooking.
  • Whisk together olive oil, white wine vinegar, za'atar spice and a good pinch of salt and pepper.
  • Alternate sausage with zucchini and onion on your skewers. Brush skewers with olive oil mixture and grill, turning every couple of minutes. Do this for another 7-10 minutes, brushing with olive oil until all used, to ensure your sausages are cooked through.
  • Remove from grill and serve.

6 links sweet Italian sausage, each cut in 3 pieces
1 juice orange, unpeeled, cut in 12 chunks
2 tablespoons fruity extra virgin olive oil

Steps:

  • Soak 12 8-to 10-inch wooden skewers and the bay leaves in tepid water for 30 minutes. Drain.
  • Preheat a charcoal or gas grill.
  • Hold two skewers parallel to each other about a half-inch apart. Place a piece of onion, a bay leaf, a piece of sausage and a piece of orange on the two skewers, repeating the ingredients in this order and ending with a piece of sausage. There should be three pieces of sausage per double skewer.
  • Brush each skewer with olive oil, and place on the hot grill. Cook, turning occasionally, until the sausage is browned and the oranges and onions slightly charred, about 20 minutes.

1 tablespoon water
2 pounds smoked turkey sausage
3 medium onions
1 medium green bell pepper
1 medium red bell pepper
1 medium yellow bell pepper
10 metal skewers
2 tablespoons olive oil, or as needed
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place potatoes into a microwave-safe bowl with water, cover, and cook on high power until tender, about 8 minutes.
  • Cut each smoked sausage rope into 5 pieces. Chop each onion and bell pepper into 10 chunks. Separate the onion chunks in half.
  • Thread onion, potato, sausage, 3 bell peppers, sausage, potato, and onion onto a metal skewer, in that order. Repeat with remaining skewers. Add remaining potatoes to each skewer.

600 g baby potatoes
1 garlic clove
½ bunch chives
¾ tsp mild paprika
a little pepper
½ tsp salt
3 tbsp olive oil
250 g low-fat quark
8 wooden skewers

Steps:

  • Place the wooden skewers in cold water for approx. 30 mins.
  • Cook the potatoes in boiling salted water for approx. 15 mins. until soft, drain, leave to cool. Cut into approx. 1 cm slices.
  • Mince the garlic in a small bowl. Add the oil, paprika, salt, and pepper, mix.
  • Cut the sausages into approx. 1 cm slices.Thread the slices of potato and sausages alternately onto the skewers.
  • Brush the skewers with oil.
  • With the lid down, grill the skewers over/on a medium heat (approx. 200°C) for approx. 8 mins., turning occasionally.
  • Place the quark, salt and pepper in a small bowl, chop the chives using scissors and mix in. Serve the dip with the skewers.

1 tablespoon dried basil
1 tablespoon canola oil
1 1/2 lbs Italian sausage, 1 1/2-inch pieces
2 medium zucchini, 1-inch pieces
1 medium red bell pepper, 1 1/2-inch pieces
1 medium green bell pepper, 1 1/2-inch pieces
6 large pimento stuffed olives

Steps:

  • Mix pizza sauce, basil, and oil; reserve.
  • Cook sausage pieces in 10-inch skillet over medium heat about 10 minutes, turning occasionally, until partially cooked; drain.
  • Thread sausage, zucchini and bell pepper pieces alternately on each of six 15-inch metal skewers, leaving space between each.
  • Place olive on tip of each skewer.

1-2 pkg kielbasa
1 large onion
1 green bell peppers
1 corn on the cob
1 zucchini
1 tomato
1 bottle Italian salad dressing, 24 oz.
6-12 skewers

Steps:

  • 1. Cut kielbasa into 1" slices. Cut onion, bell peppers, corn on the cob, zucchini, tomato and ANY other of your favorite veggies you like int 1/2" to 1" chunks depending on how fast that veggie might cook. For example, the tomato will cook fast so cut into 1" chunk; corn can be cut into 2-3" pieces.
  • 2. Place all the cut up vegetables and kielbasa into a large glass bowl. Pour the entire bottle of Italian salad dressing over it all. Mix so everything is coated and let marinate for at least a half-hour.
  • 3. Start your BBQ. If you are using wooden skewers, soak them in water for at least 10 minutes before using.
  • 4. Skewer the kielbasa and the vegetable, alternating meat and vegetables however you desire.
  • 5. Place on oiled or sprayed grill. Grill for about 10 minutes.
  • 6. Basically until your vegetables are done to your liking. Remove and serve. These go nicely with rice or pasta salad

2 bell peppers (red and yellow), cut into chunks
1 (12-ounce) package chicken sausage (preferably garlic-flavored), cut into 1-inch pieces
1 large red onion, cut into chunks
1 cup cherry tomatoes
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 cup fresh parsley
1/4 cup fresh cilantro
4 scallions, roughly chopped
1 tablespoon white wine vinegar

Steps:

  • Soak eight 8-inch skewers in water, at least 15 minutes. Preheat a grill or grill pan to medium high. Prepare the couscous as the label directs.
  • Meanwhile, toss the bell peppers, sausage, onion and tomatoes in a bowl with 1 tablespoon olive oil; season with salt and pepper. Thread onto the skewers, alternating the sausage and vegetables. Grill, turning, until the vegetables are slightly softened and the sausage begins to brown, 6 to 7 minutes.
  • Meanwhile, puree the parsley, cilantro and scallions in a blender with the remaining 2 tablespoons olive oil, the vinegar and 2 tablespoons water. Season with salt and pepper. Brush the skewers with some of the pesto and continue to cook, turning, until the tomatoes are tender and the sausage is charred, 6 to 7 more minutes.
  • Toss the couscous with half of the remaining pesto and season with salt and pepper. Serve with the skewers and the remaining pesto, for dipping.
