GRILLED SESAME CHICKEN AND EGGPLANT SALAD

Grilled Sesame Chicken and Eggplant Salad image

This is a salad that is French by design and Chinese by flavor. The ginger and sesame notwithstanding, it is essentially very much like a salade composée, a "composed salad" where the ingredients are arranged and dressed but not tossed, with grilled chicken breast and a zesty vinaigrette. The jalapeño is optional, so you can turn down the heat.

Provided by David Tanis

Categories     salads and dressings, main course

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 25

4 boneless skin-on chicken breasts, about 8 ounces each
Salt and pepper
2 large eggplants, about 2 pounds
1 tablespoon grated ginger
1 tablespoon grated garlic
2 tablespoons soy sauce
3 tablespoons roasted peanut oil
1 teaspoon sesame oil
2 tablespoons rice wine
1/2 teaspoon Chinese chile paste or 1/4 teaspoon cayenne
2 teaspoons rice vinegar
1 teaspoon grated ginger
1 teaspoon brown sugar
2 teaspoons Dijon mustard
1 teaspoon sesame oil
3 tablespoons roasted peanut oil
1/2 teaspoon kosher salt
1 tablespoon lime juice
Bibb or Romaine lettuce leaves
1 pound small cucumbers, peeled and cut in 1/4-inch slices
1/2 cup thinly sliced scallions
3/4 cup cilantro, leaves and tender stems, roughly chopped
2 tablespoons toasted sesame seeds
1 jalapeño, green or red, thinly sliced, optional
Lime wedges

Steps:

  • Remove the tenderloins from the underside of the chicken breasts and reserve for another purpose. Trim breasts if necessary and flatten them slightly with a meat mallet. Season on both sides with salt and pepper and place in a shallow dish. Using a clean knife and cutting board, peel eggplant and cut into 1/2-inch slices, then season with salt and pepper. Place eggplant slices in a separate shallow dish.
  • Prepare the marinade: stir together ginger, garlic, soy sauce, peanut oil, sesame oil, rice wine and chile paste in a small bowl. Pour half the marinade over chicken and remaining marinade over eggplant, turning over to coat well. Leave at room temperature for 30 minutes. (You may do this step up to 2 hours ahead and refrigerate. Return to room temperature before cooking.)
  • Make the vinaigrette: whisk together rice vinegar, ginger, brown sugar, mustard, sesame oil, peanut oil, salt and lime juice. Set aside.
  • Heat a stovetop grill pan over medium-high heat, or use a charcoal or gas grill. Grill eggplant slices until nicely browned and softened, about 3 minutes per side. Remove and hold at room temperature. Lay chicken breasts on the grill skin side down and let cook until nicely browned, about 5 minutes. Turn and cook on the other side until firm to the touch, about 2 minutes more. Remove breasts to a platter and let rest 5 minutes.
  • Line a large platter with lettuce leaves. Cut chicken into 1/4-inch slices and arrange over lettuce. Arrange grilled eggplant around the platter. Lightly salt cucumbers and dress with 1 tablespoon vinaigrette, then scatter over salad. Spoon the rest of the vinaigrette evenly over salad. Top with scallions and cilantro, and sprinkle with sesame seeds. Garnish with optional jalapeño slices and lime wedges and serve.

Time 40m

Yield 4 servings

Number Of Ingredients 12

1/4 cup low-sodium soy sauce
1/4 cup rice vinegar
3 tablespoons toasted sesame oil
1 tablespoon grated peeled fresh ginger
1/2 teaspoon Chinese five-spice powder
1 1/2 pounds chicken cutlets (about 5)
2 small eggplants (about 12 ounces), sliced 1/2 inch thick
1 pint grape or cherry tomatoes, halved
3 scallions, thinly sliced
1/2 cup fresh cilantro and/or mint, roughly chopped
2 to 3 small heads Bibb or Little Gem lettuce, leaves separated
1/3 cup peanuts or cashews, roughly chopped

Steps:

  • Preheat a grill to medium high. Whisk the soy sauce, vinegar, 2 tablespoons each sesame oil and water and the ginger in a large bowl. Remove 1/4 cup of the dressing to a medium bowl; set aside. Whisk the five-spice powder into the large bowl and add the chicken; toss to coat and set aside to marinate, 10 minutes.
  • Meanwhile, brush the eggplant slices on both sides with the remaining 1 tablespoon sesame oil. Grill until well marked and tender, 3 to 4 minutes per side; transfer to a cutting board and let cool slightly. Roughly chop the eggplant and add it to the bowl with the reserved sesame dressing. Add the tomatoes, scallions and herbs; toss to coat.
  • Remove the chicken from the marinade, letting the excess drip off. Grill until well marked, 3 to 4 minutes, then flip and continue grilling until cooked through, about 2 more minutes. Transfer to a cutting board and let cool 5 minutes, then slice.
  • Serve the chicken and eggplant salad in the lettuce leaves with the eggplant salad; top with the nuts.

GRILLED SESAME CHICKEN

This is basically a marinade to provide flavor to the chicken. I use the chicken in three ways to mix it up alttle. One, serve the chicken as the main course; Two, cut the chicken into strips and use in any salad; Three, pound the chicken before marinding, grill and use for chicken sandwiches.

GRILLED CHICKEN AND VEGGIES IN SESAME DRESSING

Grilled Chicken and Veggies in Sesame Dressing image

This is a super easy recipe with fantastic results. It tastes so good, and the colours are wonderful - make everyone think you slaved over it! The dressing really gets into the chicken, and makes it really juicy and tender!

Provided by Patti-atti

Categories     Chicken Breast

Time 15m

Yield 2-4 serving(s)

Number Of Ingredients 7

3 boneless skinless chicken breasts
1 zucchini, sliced
1 green pepper
1 red pepper
1 yellow pepper
1 red onion
1/2 cup newman's own low-fat sesame ginger salad dressing (you can also use Sesame Salad Dressing which takes a little longer but is scrumptious!)

Steps:

  • Put chicken into bowl and cover with dressing - or coat it. to marinate.
  • Clean and chop veggies- I do them kabob-style, so they're squares - all approx the same size.
  • Place veggies together in bowl, coat with dressing.
  • Heat the grill - I usually cook these on medium.
  • If you have a grilling basket, but the veggies into that before placing on the grill, if not, you can kabob them, or even cook them on foil - although I prefer the grilling basket.
  • Put veggies and chicken on the grill.
  • Cook for 15-20 minutes or until veggies look done and juices of chicken are running clear. Flip the chicken halfway, and keep an eye on those veggies! Stirring and moving them around makes them nicely grilled.
  • Serve - I like them with rice, and soy sauce really brings out the flavour, but my BF likes hot sauce, so do what you want!
  • Enjoy!

SESAME CHICKEN SALAD

Sesame Chicken Salad image

Flavorful and so delicious, this sesame chicken salad will wow you!

Provided by MommyBennett

Categories     BBQ & Grilling     Chicken     Salads

Time 8h30m

Yield 4

Number Of Ingredients 14

4 (4 ounce) skinless, boneless chicken breast halves
¼ cup soy sauce
2 tablespoons brown sugar
1 teaspoon minced fresh garlic
½ teaspoon grated fresh ginger
1 cup mayonnaise
1 tablespoon sesame oil
1 tablespoon white sugar
½ teaspoon grated fresh ginger
1 tablespoon sesame seeds
1 medium head napa cabbage, thinly sliced
¼ medium head green cabbage, thinly sliced
1 medium carrot, shredded
½ cup crispy fried rice noodles

Steps:

  • Place chicken in a large glass or ceramic bowl. Whisk soy sauce, brown sugar, garlic, and ginger for marinade together in a small bowl; pour over chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine mayonnaise, sesame oil, sugar, and ginger for dressing in a small bowl. Cover and refrigerate while you cook the chicken.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the grill and chop when cool enough to handle.
  • While the chicken is cooking, place sesame seeds in a dry pan over medium-high heat. Shake the pan like you are making popcorn and toast until seeds give off a lovely toasted smell, 3 to 5 minutes. Quickly remove from the heat and transfer to a bowl to cool; if you leave them in the pan they will continue to cook and burn.
  • Place napa cabbage, green cabbage, and carrot in a large bowl with chicken and toasted sesame seeds. Toss together, then mix in the dressing. Divide salad onto plates and top with crispy fried noodles.

GRILLED EGGPLANT SALAD

Grilled Eggplant Salad image

Here is a deeply flavored salad that can be prepared entirely outdoors, keeping the heat out of the kitchen. Grill a whole fat purple globe eggplant until the skin blisters. Then scrape the soft insides into a bowl and season them with red wine vinegar, garlic, good olive oil and fresh herbs. A few capers on top add a pleasing brininess. Serve it with pita bread, a good rosé and a hunk of feta, and want for nothing more.

Provided by Melissa Clark

Categories     quick, weekday, salads and dressings

Time 25m

Yield about 1 1/2 cups

Number Of Ingredients 11

1 large eggplant
1 plum tomato, diced
1 1/2 teaspoons red wine vinegar
1/2 teaspoon kosher salt, more to taste
1/2 teaspoon chopped fresh oregano
2 garlic cloves, finely chopped
3 tablespoons extra virgin olive oil
3 tablespoons chopped parsley
Black pepper, to taste
Capers, for garnish, optional
Grilled pita bread, for serving

Steps:

  • Heat grill to medium high. Prick the eggplant all over with a fork, put in on the grill and close the cover; cook, turning occasionally, until eggplant is very soft and skin is blistered, about 15 minutes.
  • When cool enough, scoop out the insides of the eggplant and coarsely chop. Transfer to a bowl and toss with tomatoes, vinegar, salt, oregano and garlic. Stir in oil and parsley; season with pepper and more salt if needed. Garnish with capers if you like them. Serve with warm pita bread.
