GRILLED SWEET POTATOES WITH CHIPOTLE-HONEY SAUCE



Grilled Sweet Potatoes with Chipotle-Honey Sauce image

Prepared on the grill and paired with a spicy sauce, these sweet potatoes make a wonderful side with most any meal. Plus, they take only 20 minutes to make!

Number Of Ingredients 6

1 cup honey
4 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
2 tablespoons adobo sauce (from can of chiles)
6 medium sweet potatoes
1/3 cup olive or vegetable oil
2 teaspoons kosher (coarse) salt

Steps:

  • Heat gas or charcoal grill. In small bowl, mix sauce ingredients; set aside.
  • Cut each sweet potato lengthwise into 4 or 5 slices; brush both sides with oil. Carefully brush additional oil on grill rack. Place potatoes on grill over medium heat; sprinkle with 1 teaspoon of the salt.
  • Cover grill; cook 8 to 10 minutes, turning once and sprinkling with remaining 1 teaspoon salt, until potatoes are tender. Serve with sauce.

Sweet and Spicy blended together on top of baked sweet potatoes (yams). Very easy to put together and cooks in microwave. This is one of my favorite recipes of all times.

Number Of Ingredients 5

2 small sweet potatoes
2 tablespoons butter
1 tablespoon honey
2 teaspoons adobo sauce
1 chipotle pepper, chopped

Steps:

  • Poke sweet potatoes twice with a fork.
  • Microwave on High for about 10 minutes or until soft.
  • Stir together sofened butter, honey, adobe sauce and chipotle pepper.
  • May add more or less chipotle pepper to taste.
  • Cut open sweet potatoes and fluff inside with a fork.
  • Add chipotle butter and stir lightly with a fork.
  • Recipe can be doubled.

  • Bring a large pot of water to boil. Place the sweet potatoes gently in the water. Boil for approximately 12-15 minutes, depending on the thickness of the potatoes.
  • While the sweet potatoes are boiling, in a blender jar or food processor, combine the mayonnaise, chipotle pepper, adobo sauce, and lime juice. Puree until smooth. Transfer to a small bowl, and refrigerate until ready to serve.
  • Carefully remove the sweet potatoes from the water and set them on a cutting board. Slice them into 1/2 inch thick slices.
