My brother-in-law, Stanley, gave me this recipe more than 30 years ago. He was an officer in the Army, and his fellow officers considered this flavorful steak a high-demand dish. -Dan Mayer, Olney, Illinois

Number Of Ingredients 10

1 beef flank steak (1-1/2 to 2 pounds)
1/2 cup plus 1/3 cup reduced-sodium soy sauce, divided
1/4 cup balsamic vinegar
1/4 cup honey
1 teaspoon ground ginger
2 garlic cloves, minced
2 tablespoons butter, divided
3 large eggs, beaten
2 cups cold cooked rice
1 package (9 ounces) frozen peas and pearl onions

Steps:

  • Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Set aside., In a large skillet, heat 1 tablespoon butter over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to plate. Chop eggs into small pieces; set aside., In the same skillet, stir-fry rice in remaining butter over medium-high heat. Stir in the peas, onions and remaining soy sauce., Add eggs; cook and stir until heated through. Thinly slice steak across the grain; serve over rice. Drizzle with sauce mixture.

My husband Ryan made me a steak on Mother's Day when I was pregnant, and now it's a tradition! This version is one of our go-tos - I love the sweetness of the teriyaki with the spiciness of the sriracha.

9 ripe plums, 3 roughly chopped
1 cup teriyaki sauce or marinade
1 tablespoon toasted sesame oil
2 teaspoons Dijon mustard
2 teaspoons sriracha
1 1/2 to 2 pounds skirt steak
Kosher salt and freshly ground pepper
Sliced scallions, for garnish

Steps:

  • Preheat a grill or grill pan to medium heat. Puree the 3 chopped plums in a food processor or blender. Stir the pureed plums with the teriyaki sauce, sesame oil, mustard and sriracha in a large bowl. Add the steak to the bowl, tossing to coat in the marinade. Marinate in the fridge for at least 1 hour.
  • Halve the remaining 6 plums and remove the pits. Thread 6 plum halves onto a skewer, skewering them from top to bottom. Repeat with another skewer.
  • Remove the steak from the marinade and pat dry. Add the marinade to a medium saucepan over medium-high heat and bring to a boil. Reduce the heat and simmer until the sauce has reduced slightly, about 5 minutes. Season the steak with salt and pepper on both sides. Grill 2 to 3 minutes per side, then remove from the heat and let rest for 10 minutes.
  • While the steak rests, put the plum skewers cut-side down on the grill and cook for 2 minutes. Flip and grill the other side for 2 minutes. Brush the plums with the marinade, then flip and cook for an additional 1 to 2 minutes.
  • Remove the plums from the skewers and place on a platter. Slice the steak against the grain and brush with some of the remaining marinade; add to the platter. Serve with scallions on top.

TERIYAKI GRILLED STEAK SKEWERS WITH CHILE-HERB DIPPING SAUCE



Teriyaki Grilled Steak Skewers with Chile-Herb Dipping Sauce image

3/4 cup soy sauce
1/3 cup brown sugar
1 tablespoon minced fresh ginger
1 tablespoon lime juice
1 teaspoon chile-garlic sauce
1 1/2 pounds skirt steak, trimmed, sliced into 1 1/2-inch strips
2 cups roughly chopped fresh cilantro
2 cups roughly chopped fresh parsley
1/2 cup roughly chopped fresh mint
4 cloves garlic
4 green onions
2 Thai chiles
1 teaspoon fish sauce
1/2 teaspoon sugar
Juice of 1 lime
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
4 tablespoons mayonnaise

Steps:

  • For the marinade: Combine the soy sauce, brown sugar, ginger, lime juice and chile-garlic sauce in a saucepan over medium-low heat. Bring to a simmer and cook, stirring occasionally, for 10 minutes. Let cool.
  • Loosely thread the skirt steak strips onto the soaked skewers and place them in a deep pan. Top with the marinade. Cover and refrigerate for at least 2 hours.
  • For the chile-herb sauce: Combine the cilantro, parsley, mint, garlic, green onions and Thai chiles in a food processor and pulse until coarsely chopped, scraping down the bowl as needed. Add the fish sauce, sugar, lime juice, 1 teaspoon salt and 1/2 teaspoon pepper and pulse until combined. With the machine running, drizzle in oil; pulse for another 15 seconds. Add the mayonnaise and pulse to combine. Transfer to a bowl, cover and chill until ready to serve.
  • For cooking the steak: Prepare a grill for medium-high heat. Grill the steak for 2 to 3 minutes per side. Transfer to a plate and let rest. Serve with the chile-herb sauce on the side.

Steps:

  • Preheat a grill or grill pan to medium heat. Puree the 3 chopped plums in a food processor or blender until smooth.   • Place steak in a gallon-sized resealable plastic storage bag. Combine Garlic Soy Marinade ingredients in a small bowl and pour over the steak. Seal the bag and refrigerate for a minimum of 1 hour or up to 6 hours.
