BARBECUE GRILLED TURKEY TENDERLOIN
Barbecue Turkey Tenderloin - Grilled turkey tenderloin seasoned with a smokey rub and grilled to perfection. Coated in your favorite barbecue sauce for the perfect summer meal.

Steps:
- In a bowl mix together all of the ingredients for the rub.
- Generously sprinkle the rub all over the turkey and rub until it is well coated.
- Preheat grill to high heat
- Add turkey to the grill and cook for about 10 minutes per side until it reaches an internal temperature of 165 degrees.
- During the last couple minutes of cooking time brush both sides of turkey with barbecue sauce.
- Remove from the grill and slice to serve. Serve with additional barbecue sauce.

- In a bowl, combine the soy sauce, oil, sugar, garlic, ginger and mustard.
- Pour 1/4 cup marinade into a large resealable plastic bag and add the turkey. Seal bag and turn to coat.
- Refrigerate for up to 4 hours. Refrigerate remaining marinade for basting.
- Place turkey on foil on grill and cover. Cook over medium heat for 8-10 minutes or until a meat thermometer reads 170 degrees F. Turn turkey occasionally and baste with reserved marinade.

- Mix lemon juice, oil, Worcestershire sauce and pepper in shallow glass or plastic dish. Add turkey, turning to coat. Cover and refrigerate at least 1 hour but no longer than 24 hours.
- Brush grill rack with vegetable oil. Heat coals or gas grill. Grease 9-inch square aluminum pan.
- Remove turkey from marinade; reserve marinade. Cover and grill turkey 4 to 5 inches from medium heat 15 minutes. While turkey is grilling, stir stuffing mix with amount of water called for on package. Spoon stuffing into aluminum pan; cover with aluminum foil.
- Add stuffing to grill rack. Brush turkey with marinade and turn. Cover and grill 10 to 15 minutes longer or until juice is no longer pink when center of thickest piece of turkey is cut. Discard any remaining marinade. Remove stuffing and turkey from grill; let stand 10 minutes.
- Cut 1 1/2 turkey tenderloins into 1/2-inch slices; serve with stuffing. Refrigerate remaining turkey to use for Easy Turkey Fajitas.

- Cut a lengthwise slit down the center of each tenderloin to within 1/2 in. of bottom. In a large resealable plastic bag, combine the wine or broth, brown sugar, ketchup, soy sauce, garlic, curry, ginger and pepper; add pork. Seal bag and turn to coat; refrigerate for 2-3 hours. , In a small saucepan, bring water and butter to a boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 minutes. Cool., Drain and discard marinade. Open tenderloins so they lie flat; spread stuffing down the center of each. Close tenderloins; tie at 1-1/2-in. intervals with kitchen string., Prepare grill for indirect heat. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. - Make a pocket in each tenderloin by cutting lengthwise from one side almost to, but no through, the other side; set aside.
- In a bowl, combine spinach, cheese, and black pepper. Spoon the mixture into the pockets and tie kitchen string around each tenderloin in 3 or 4 places.
- In a small bowl, combine oil, paprika, salt, and ground red pepper; brush evenly over tenderloins.
