Steps:
- Grill the venison loin: Season the meat with the salt and pepper. In a small bowl, mix the herbs with the oil and spread all over the meat. Cover and refrigerate for 2 hours or up to overnight. Make a hot fire in a charcoal grill or set a gas grill on high heat. Grill the meat, without moving it, until nicely browned, 4 to 5 minutes. Then rotate the venison 90° and leave it for just a minute to make grill marks. Flip the loin and cook for 4 to 5 minutes more, again rotating the venison if desired. You want to aim for a good, deeply charred outside but a nice and rare inside. This ought to happen after just 10 minutes total cooking. Transfer to a cutting board and allow to rest for at least 10 minutes while you make the sauce. Make the horseradish cream sauce: Mix the crème fraîche, horseradish, chives, lemon juice, and zest together in a small bowl, and season with salt. To serve the venison loin Thinly slice the loin against the grain, pile it onto plates or a platter, and serve with the horseradish cream sauce.
GRILLED VENISON
This is the best venison recipe ever! My husband found it in a hunting book from the library. People who do not prefer deer meat have eaten it all up. You must let it marinade for the full 48 hours, or the meat will not be as tasty or tender. (Believe me, I know from experience!)

- Venison Tenderloin with Blackberry Sauce. This delicious, yet simple recipe perfectly highlights venison's subtle game notes with a twist of blackberry, which is widely regarded as a wonderful pairing with red meats.
- Venison Medallions with Whiskey, Mushroom & Horseradish Cream Sauce. This recipe had us at venison and whiskey, but it's the hearty, flavorful cream sauce that really sets this dish off.
- Belgian Venison Medallions. This age-old recipe calls on the unique flavor of juniper, which is known to pair especially well with wild game. And, while this recipe doesn't make any mention of accompanying sides, we highly recommend roasted fingerling potatoes with a splash of olive oil and a healthy does of fresh herbs and chopped garlic.
- Grilled Bacon-Wrapped Venison Tenderloin. What would this list be without something bacon-wrapped? This grilling recipe has a lot of room for interpretation and adaptation, but we still believe in the tried-and-true method of wrapping it in bacon and throwing that bad boy on the fire.
- Char-Grilled Venison Tenderloin with Smoky Chipotle Rub and Three-Herb Chimichurri. Giving your game meat a subtle smokiness and pairing it with a bright, herbaceous sauce is a sure-fire way to impress your fellow deer hunters hunting for venison who have sliced, diced, and served up venison in every way imaginable.
- Maple Juniper Venison Loin with Chocolate Infused Red Wine Jus, Leek and Potato Mash. Chocolate and meat? We know, you think we're crazy, but listen up--this pairing could change your life.

- Blackberry sauce. This sauce goes great with venison because it offers a sweet and slightly tart compliment to the gaminess of the meat. We recommend using it on venison loin or steaks, but you can feel free to get creative!
- Red wine sauce. This sauce takes just four ingredients and about 20 minutes of simmering to make, but tastes like it took much longer. It’s delicious on its own, but elevated by the addition of venison.
- Salsa Verde. Salsa verde is a bright, tangy sauce made of parsley, mint, capers, and anchovies. While it can be made in a variety of different ways and with a variety of different ingredients, these are the most popular.
- Chimichurri. Chimichurri is the ultimate versatile sauce and perfect for any occasion. It’s perfect on venison and can be used as a marinade or a dressing, depending on how you make it (the quickest way to make it is just to blend all the ingredients together).
- Mustard sauce. Another sauce that goes well with venison is mustard sauce, and it’s usually made by combining Dijon mustard with heavy cream and sometimes white wine, garlic powder, or some other ingredients.
- Béarnaise sauce. An old-world classic with a twist. Béarnaise sauce is a savory condiment with a unique flavor that pairs well with venison. This sauce is traditionally made with clarified butter, shallots, but can be made at home with regular butter, white wine vinegar, and fresh herbs.
- Plum and Thyme sauce. You’ve heard of the classic orange sauce for venison and pheasant, but have you tried plum and thyme? It’s a sweet-tart sauce that brings out the rich flavor of venison without overpowering it.
- Mushroom sauce. Mushrooms have long been a complement to meat dishes. Their taste and aroma make any dish more complete and rich. Mushrooms contain many useful substances, so their use has a positive effect on health.
- Peppercorn sauce. One of our favorite things to do with venison is braise it in red wine sauce, but sometimes we like to cook it with a peppercorn sauce instead.
- Spiced berry sauce. This sauce is traditionally made with a large bowl of mixed berries and lemon juice, but you can also make it at home by combining a handful of your favorite berries with honey, lemon juice, cinnamon, and cloves.
