GRILLED BROCCOLI
Transform your chargrilled broccoli by adding in garlic, chilli and lemon.

Steps:
- Add half the oil oil, garlic and the chile to a pot over medium heat until garlic starts turning golden brown. Garlic and chile burn very quickly so as soon as they start changing colour, pour the mix into a cool container to stop the cooking.
- Blanch broccoli for 2 minutes in a pot of boiling water, then plunge into ice cold water to stop it from cooking.
- Leave broccoli to dry completely, and when dry put in a bowl and season the broccoli with remaining olive oil, salt and pepper.
- Heat a ridged griddle pan over high heat and grill the broccoli in batches making sure to turn the florets halfway through so all sided get char marks.
- Transfer the broccoli to a bowl, pour the garlic and chili mix and a dash of lemon juice (if using). Adjust seasoning, add in lemon wedges (if using) and serve.

- Place broccoli florets in a large bowl. Drizzle olive oil over the broccoli and toss to coat. Add salt, pepper, and crushed red pepper and toss to coat again.
- Place broccoli in a grill basket and grill, turning occasionally, until tender-crisp, about 10 minutes.

- Place broccoli in a large bowl. Combine lemon juice, oil, salt and pepper; drizzle over broccoli and toss to coat. Let stand for 30 minutes. , Toss broccoli; drain broccoli, discarding marinade. Place cheese in a small shallow bowl. Add broccoli, a few pieces at a time, toss to coat., Prepare grill for indirect heat using a drip pan. Place broccoli over drip pan on an oiled grill rack. Grill, covered, over indirect medium heat for 8-10 minutes on each side or until crisp-tender. If desired, garnish with grilled lemon slices and red pepper flakes.

GRILLED BROCCOLI FOR A PAN OR OUTDOOR GRILL
Steps:
- Place 3 tablespoons of the olive oil in a large mixing bowl. Add the lemon juice, garlic powder, and pepper. Whisk until combined.
- Add the broccoli to the marinade, tossing with your hands to coat well. Let stand at room temperature for 15 to 20 minutes. Just before cooking, drizzle the remaining tablespoon of olive oil over the broccoli, and toss to coat well.
- Preheat your indoor contact grill. Or, if using a grill pan, preheat over medium-high heat.
- Grill the broccoli until tender when pierced with a fork, about 10 minutes, if using a contact grill, or 15 to 20 minutes if using a cast-iron pan or grill. Turn it as it browns so that all of the sides get caramelized. Transfer the broccoli to a serving bowl. Sprinkle with most of the Parmesan cheese, and season with salt to taste. Toss, give another sprinkle of Parmesan on the top and serve immediately.

- Preheat the grill to medium-high heat.
- Toss the broccolini, olive oil, pinch of red pepper flakes, salt and pepper, to taste, together on a sheet tray. Place the broccolini on the hot grill and cook, while turning, until tender and slightly charred, 7 to 8 minutes. Place on a platter and add a squeeze of lemon and shaved Parmesan.
SPENSER'S GRILLED BROCCOLI

- Bring a large pot of salted water to a boil over medium-high heat. Add the broccoli and blanch until it turns bright green, then remove to a large bowl of ice water to shock and to stop the cooking. Drain the broccoli and dry well with paper towels. Put the broccoli into a large resealable plastic bag.
- Whisk the olive oil, red pepper flakes, Neely's Dry Rub, white wine vinegar, salt, pepper, and garlic together in a small bowl. Pour over the broccoli and seal the bag. Let marinate for 30 minutes.
- Preheat the grill to medium heat.
- Remove the broccoli from the bag, letting the excess marinade drip off. Put on the grill and cook until lightly browned and fork tender, about 4 minutes. Transfer the broccoli from the grill to a serving platter and serve.
GRILLED BROCCOLI
This grilled broccoli is dressed simply in tamari, olive oil and balsamic vinegar. It results in crisp-tender florets that are beautifully sweet and salty beneath the smoke.

- Build a fire in your grill, leaving about 1/3 of grill free of coals, or set a gas grill to high.
- In a large bowl, whisk together the tamari or soy sauce with the vinegar. Add the olive oil while whisking vigorously. Add the broccoli and toss to coat. Sprinkle lightly with kosher salt.
- Place a grill basket on the grill and add the broccoli to it. Grill, tossing frequently, until the florets are crisp at the edges and tender within, with just a little bit of bite to them, approximately 10 to 12 minutes. If you don't have a grill basket, lay the florets out on the grill in a single level and use tongs to turn them often. More work, same result.
- Transfer the cooked broccoli to a platter, drizzle with olive oil, sprinkle with parsley and, if using, a pinch or two of flaky sea salt.

- Cut each broccoli bunch into 6 pieces. In a 6-qt. stockpot, place a steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. GRILLED BROCCOLI RABE
Broccoli rabe, also called rapini, is known for its slightly bitter and peppery taste. Blanching it before grilling helps tone down the bitterness. Squeeze lemon wedged over top when serving, if desired. It is excellent served alongside grilled Italian sausages and thick crusty bread.

- Bring a large pot of salted water to a boil. Set up an ice bath nearby. Place half of the broccoli rabe into the boiling water and cook for 1 minute, then remove with tongs to the ice bath to stop cooking. Repeat with remaining broccoli rabe. Place broccoli rabe into a large colander to drain.
- Preheat an outdoor grill for medium-low heat, and lightly oil grate.
- Whisk together olive oil, lemon juice, crushed red pepper flakes, and salt in a small bowl. Toss drained broccoli rabe with oil mixture, then place onto hot grate.
- Grill, turning occasionally, until thick stems have softened, 8 to 10 minutes. Remove thinner leafy pieces as they become done to prevent burning. Remove to a serving platter.
