SHRIMP WITH LEMON-CHIVE TARTAR SAUCE, DITALINI SALAD WITH MIXED PEPPERS



Shrimp with Lemon-Chive Tartar Sauce, Ditalini Salad with Mixed Peppers image

2 tablespoons olive oil, divided
2 pounds large or extra-large shrimp, peeled and deveined
Salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 cup mayonnaise
2 tablespoons minced fresh chives
2 tablespoons minced sweet gherkins
1 teaspoon finely grated lemon zest
Cooked ditalini (1 pound)
2 cups diced roasted red peppers (from water-packed jar)
1 bell pepper, seeded and diced
1/3 cup diced pickled jalapeno peppers
1/4 cup chopped fresh parsley leaves
2 tablespoons red wine vinegar

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium heat. Season shrimp with salt, pepper and oregano. Place shrimp in hot pan (or stove-top grill pan) and cook 2 minutes per side, until opaque and cooked through.
  • Meanwhile, in a medium bowl, combine mayonnaise, chives, gherkins, and lemon zest. Mix well and season to taste with salt and pepper.
  • In a large bowl, combine ditalini, remaining olive oil, peppers, parsley, and vinegar. Toss to combine and season, to taste, with salt and pepper. Serve the ditalini salad with 1 1/4 pounds of the shrimp and all of the tartar sauce. Reserve extra shrimp (about 1/2 pound cooked) for another meal.

1 ½ cups lime juice
3 tablespoons olive oil
2 tablespoons chili powder
1 teaspoon mayonnaise
3 pounds uncooked medium shrimp, peeled and deveined
½ cup enchilada sauce
½ (4 ounce) jar diced jalapeno peppers
5 teaspoons honey
3 teaspoons lime juice
salt to taste
½ head red cabbage, shredded, or more to taste
2 bunches scallions, chopped
3 tablespoons olive oil
3 tablespoons white vinegar
1 small bunch cilantro, chopped
20 (8 inch) corn tortillas

Steps:

  • Mix lime juice, olive oil, chili powder, and mayonnaise together in a bowl. Add shrimp and marinade for at least 1 hour.
  • Mix enchilada sauce, jalapenos, honey, lime juice, and salt together in a separate bowl for the sauce.
  • Toss cabbage with scallions, olive oil, vinegar, and cilantro in a large bowl for the slaw.
  • Heat tortillas in a frying pan over medium-high heat, about 30 seconds per side. Keep warm.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove shrimp from marinade. Grill until opaque, about 5 minutes. Add shrimp to each tortilla; top with the sauce and slaw.

GRILLED SHRIMP ON TARO CHIP

3 to 4 finely minced garlic cloves
1/2 cup extra-virgin olive oil
Salt
Fresh cracked black pepper
2/3 cup minced green onions
1/2 to 3/4 cup white wine
1 tablespoon lime juice
2 pounds (21/25 count per pound) tiger shrimp, peled and divined
Skewers, soaked in water for 30 minutes
1 to 2 peeled taro root (2 inches in diameter)
3 cups vegetable oil
2 1/4 cups small dice tomatoes
2 cups small dice avocado
1/4 cup chopped cilantro leaves
1 tablespoon lemon juice

Steps:

  • For Shrimp: Preheat a grill to high.
  • In a large bowl, combine garlic, olive oil, salt, pepper, green onions, white wine, and lime juice to make a marinade. Place shrimp in the marinade and marinate for 10 to 15 minutes.
  • Remove shrimp from marinade and thread onto skewers. See Cook's Note*
  • Place shrimp on a hot grill for 1 1/2 to 2 minutes on each side, or until they turn pink. Do not overcook. Remove from the grill and remove the shrimp from the skewers.
  • For Taro chip: Place a 10-inch straight-sided saute pan over medium high heat. Add the oil and heat until it reaches a temperature of 350 degrees F. Slice taro root thinly, a little thicker than a potato chip. It is easiest to do this on a mandoline. Once oil is up to temperature, fry the sliced taro root until lightly golden brown, about 2 minutes. Drain on a paper towel, salt, and set them side.
  • For Salsa: Combine tomatoes, avocado, cilantro, and lemon juice in a bowl. Gently fold together. Season, to taste, with salt and pepper.
  • To assemble, place 1 shrimp on top of a taro chip and garnish with 1/4 teaspoon of salsa. Arrange on a platter.
