GROUND TURKEY INCOGNITO
If you're like me, you can always use another way to disguise ground turkey! This casserole can be made ahead if you like, and is easily adaptable to whatever ingredients you have on hand.

Steps:
- PREP:.
- Preheat oven to 350 degrees and grease a deep casserole dish.
- Recipe as is fits into a 9x9 3" deep casserole dish. Doubled would fit into an 11x11 4" deep casserole dish.
- TURKEY:.
- Saute turkey and onion over medium heat until done.
- Add olive oil and butter, then flour and stir well, letting flour brown slightly.
- Add milk slowly, stirring as you go, then cream, spices and bullion.
- Bring to a low boil to thicken, then pour into greased casserole dish.
- VEGGIES:.
- Cook veggies, drain well, season if needed and layer over turkey.
- PASTA:.
- Bring water to a boil, add salt and pasta, cook per package directions. Then drain and set aside.
- Re-using same pan, pour in milk, cream and cream cheese. Add spices and heat over medium heat until cream cheese is melted. Add chopped green onions.
- Pour over turkey in casserole dish.
- CHEESE:.
- Sprinkle grated cheese over pasta and bake for 25-30 minutes or until done.
- If made ahead, get it out of fridge about 1/2 hour before cooking.

This is a recipe that I adapted from a few other tortilla casseroles and it is a quick & easy tummy satisfier!

Steps:
- Brown turkey and small onion until meat is completely done.
- Add taco seasoning packet and follow directions for cooking on back.
- Spray non-stick casserole dish (9x9) with non-stick cooking spray.
- Cut flour tortillas into bite size pieces and layer 1/2 of tortillas on bottom of casserole dish.
- Add 1/2 of the cheese, sour cream, salsa and black beans.
- Start with the remaining tortillas and repeat layering.
- You may top with extra cheese or salsa if preferred. Other options include: corn, red pepper, green pepper, jalapenos, or any other ingredient.
- ***play with ingredients, if you like more sour cream, simply add more, if you like less, add less. Don't be afraid to test different options.
- Bake at 350 until all cheese is melted and everything is heated thoroughly (usually about 30-40 minutes). You may wish to cover the dish with foil to prevent overbaking the top -- then removing it for the last 5-10 minutes.
