If you like hot milk, you'll like this! From my favorite cookbook, Esther Shank's Mennonite Country-Style Recipes. I've tweaked it just a bit.

Number Of Ingredients 5

1 cup milk
1 tablespoon brown sugar
1 pinch kosher salt (optional)
1 teaspoon butter
1 dash cinnamon

Steps:

  • In a 2 cup pyrex measuring cup, whisk together milk, brown sugar and kosher salt.
  • Add butter and heat in microwave for 90 seconds.
  • Meanwhile, run hot tap water in mug to warm it up.
  • Pour heated drink into hot mug and sprinkle with cinnamon.

Butterscotch chip cookies with crispy rice cereal!

½ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
¼ teaspoon salt
½ teaspoon baking soda
2 cups crisp rice cereal
1 cup butterscotch chips

Steps:

  • In large bowl, cream butter or margarine and sugar until light and fluffy. Add egg and vanilla; beat until well blended. Add flour, salt, and baking soda, mixing well. Stir in cereal and butterscotch chips.
  • Drop by heaping tablespoon onto greased cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 12-15 minutes, until lightly browned. Remove cookies to cool on racks.

Try adding a pinch of salt (or more to taste) right after the sauce has been removed from the heat. The salt offsets the sweetness of the caramelized sugar, creating a nice depth of flavor.

1/2 cup heavy cream
1/4 cup milk
1 teaspoon cornstarch
1 cup light-brown sugar
2/3 cup light corn syrup
4 tablespoons unsalted butter

Steps:

  • In a small bowl, combine cream, milk, and cornstarch; set aside. In a medium saucepan, combine sugar, corn syrup, and butter. Cook over medium-high heat, stirring, until butter has melted and sugar has dissolved, 4 to 5 minutes.
  • Reduce heat to medium-low. Add milk mixture; bring to a boil. Boil 30 seconds; remove from heat. Cool slightly before serving, or store, covered, in the refrigerator up to 2 weeks. Before serving, reheat in a saucepan; thin, if necessary, by adding up to 2 tablespoons cream.
