KETO TURKEY STEW RECIPE - "CREAMY & HEARTY" - SLOW COOKER OR SAUCEPAN



Keto Turkey Stew Recipe -

This Keto Turkey Stew recipe is an " Easy, Creamy & Warming" dish that's ideal in winter but makes a perfect dinner meal any time of the year. The turkey is succulent and the mushrooms are tender and full of flavor.

2 pounds turkey thigh and leg meat (diced)
2 tablespoons olive oil
1 clove garlic (crushed)
1 leek (halved and sliced)
4 ounces bacon (diced)
2 tablespoons thyme leaves (fresh)
1/2 teaspoon salt
1/2 teaspoon white pepper (ground)
12 ounces button mushrooms
1 teaspoon xanthan gum
2 tablespoons whole grain mustard
1 cup heavy cream
1/2 cup parsley (roughly chopped)

Steps:

  • Place a large non-stick frying pan over high heat and brown the turkey meat in the olive oil, then place into your slow cooker.
  • Add the garlic, leek and bacon to the frying pan and saute or 3-5 minutes until the leek has softened.
  • Add the sauteed mixture into the slow cooker, along with the thyme, salt, pepper, and mushrooms.
  • In a mixing jug, whisk together the xanthan gum, mustard and cream. Add to the slow cooker and stir well.
  • Cook on high for 3 hours.
  • Stir through the parsley and serve alone or with a side of Creamy Broccoli Mash.

Two meals for a family of five out of one pound of ground turkey! You can substitute any vegetables that your family enjoys. My family really loves it.

1 tablespoon olive oil
1 leek, washed, trimmed and chopped
1 tablespoon garlic, minced (optional)
1 lb ground turkey
1 cup water
1 (10 3/4 ounce) can fat-free cream of chicken soup
1 (10 3/4 ounce) can fat-free cream of mushroom soup
6 stalks celery, chopped (including leafy tops)
8 carrots, sliced
1 lb mushroom, sliced
salt and pepper, to taste

Steps:

  • Place olive oil, garlic, and chopped leek in bottom of large crock pot.
  • Crumble raw ground turkey over leeks.
  • Layer carrots, then celery over turkey.
  • Spread undiluted cream of mushroom and cream of chicken over vegetables.
  • Spread sliced mushrooms over all.
  • Finally pour 1 cup water over all.
  • Set crock pot to cook for 4 hours.
  • For best results, go back and stir halfway through cooking time.
  • Season with salt and pepper before serving.

1 pound ground turkey
salt and ground black pepper to taste
4 medium potatoes, peeled and thickly sliced
6 medium carrots, peeled and thickly sliced
1 small onion, roughly chopped
2 (10.75 ounce) cans tomato soup
1 tablespoon Worcestershire sauce
1 tablespoon seasoned salt (such as Lawry's®)
1 teaspoon ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground turkey with salt and pepper to taste in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place turkey in the bottom of a slow cooker. Add onion, followed by potatoes and carrots.
  • Mix tomato soup with Worcestershire, seasoned salt, and 1 teaspoon pepper; stir into the slow cooker until everything is coated.
  • Cover and cook until vegetables are tender, on Low, 6 to 8 hours, or High, 3 to 4 hours.
