Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter flavored shortening, white sugar and brown sugar until smooth. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Adjust the amount of chocolate chips to your liking, then stir them in by hand using a wooden spoon. Drop dough by heaping spoonfuls onto the prepared cookie sheets. Clumps of dough should be about 3 inches apart.
- Bake for 7 minutes in the preheated oven, until brown around the edges. Let cool for 20 minutes. Eat and enjoy!

- In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
- Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
- Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
- Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
- Bake for 12-15 minutes, or until the edges have started to barely brown.
- Cool completely before serving.

- In a medium bowl, mix together the oats, flour, baking soda, coconut, cinnamon and chips.
- In a small bowl, whisk together yogurt, agave nectar, applesauce, and vanilla extract.
- Make a well in the center of the dry mixture and pour in the wet mixture. Fold in just until mixed, do not over mix.
- Take a small 1-inch ice cream scoop or a teaspoon and drop the balls on a cookie sheet about 1-inch apart. Flatten the balls with the back of a fork. Bake for 10 minutes or till the tops are lightly brown.
- Remove from oven and let cool for 1 minute and transfer to cooling rack. Makes 20 cookies.

I love this recipe! I've been making it forever and finally have taken time to post it. It's nice to have another option for using up those over-ripe bananas. If I don't have time to actually make the cookies, I'll mash the bananas up in a tupperware and throw them in the freezer for later. ** Updated to be a vegan recipe. - Preheat oven to 325º F. Line 2 baking sheets with parchment paper.
- Submerge dates in hot water (not quite boiling) for 10 minutes, so they can soften a bit. Stir together the ground flax seed and water, and set aside.
- Put the soaked dates and the walnuts in the bowl of a food processor, and pulse until the mixture resembles coarse sand. Add in the flax mixture, 1/3 cup of the oats, the canola oil, cane sugar, salt, and vanilla. Pulse again for about 15-20 seconds, to chop and mix everything well.
- Transfer the mixture to a mixing bowl, and stir in the coconut, flour, baking soda, and the remaining 1/3 cup of oats. When everything is well combined, stir in the chocolate chips.
- Drop by rounded teaspoonfuls onto parchment-lined baking sheet. Flatten the cookies just slightly with the back of a spoon (or your hands), because they won't spread much during baking. Bake for 8-10 minutes, or until they start to turn golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
