Gujarati Rice Khichu Recipe: Simple easy to digest evening snack recipe of Rice khichu. Traditionally served with oil and red chili powder.

Steps:
- In a sauce pan heat the water. Once the water starts simmering add cumin seeds.
- Add green chili ginger paste, salt, baking soda or papad khar into cumin seeds water and let it simmer.
- Once the water starts boiling, gradually start adding rice flour.
- Mix the rice flour with water with the help of spatula.
- Stir continuously while the rice flour combines with water and form a nice dough. Let it cook for about a minute.
- Khichu dough is ready. Let us steam the dough on a steamer.
- Add water into steamer and heat it. Place the khichu dough on top for steaming.
- Make few holes in the kichu dough so that it cooks evenly.
- Let the rice khichu dough steam for 7-8 minutes.
- Rice khichu is ready to serve now. Serve this tasty khichu hot along with some oil, red chili powder.

Alternatively, we suggest you shape rice flour khichu with an interesting mould, and top it with just a little bit oil before serving. When make the recipe, soda bi carb and salt is added. So be cautious while adding salt as soda will make the khichu a bit salty.At home, we make this chawal ka atta khichu for dinner or at times for quick evening snack . - For rice khichuTo make rice khichu, combine 4 cups of water, cumin seeds, green chillies, soda bi-carb and salt in a deep non-stick pan, mix well and boil on a high flame for 3 to 4 minutes.Add the oil and rice flour and mix well, while stirring continuously with a wooden spoon or a whisk so that no lumps remain.Cook on a slow flame for another 3 to 4 minutes or till the mixture leaves the sides of the pan, stirring once in between. Keep aside.Divide the rice khichu into 4 equal portions. Pour 2 tsp of oil over each portion along with a sprinkle of chilli powder.Serve the rice khichu immediately.

- For making the rice khichu, in a deep non-stick pan, take cumin seeds. Also, you can toss some sesame seeds for an added flavour. Add green chillies. You can add more or less chillies as per the spice level you can handle. Alternatively, you can add green chilli paste or even put some ginger to make the khichu recipe more delightful. While you are stirring, within a minute, the rice flour will absorb most of the water and becomes a thick, sticky dough. Khichu can be prepared with other flour like bajra flour, jowar flour, nachni flour or whole wheat flour. For variation, you can even use a combination of flour. Cook on a low flame for another 3 to 4 minutes or till the mixture leaves the sides of the pan, while stirring it continuously to ensure that it is not sticking to the bottom of the pan. Switch off the flame and it is ready to serve! Divide the gujarati rice khichu into 4 equal portions.
