1/2 cup sugar
1 Half Stick (1/4 cup) Land O Lakes® Butter softened
2 tablespoons firmly packed brown sugar
1 large Land O Lakes® Egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 cup uncooked quick-cooking oats
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped gumdrops

Steps:

  • Combine sugar, butter and brown sugar in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Add flour, oats, baking soda and salt; beat at low speed until well mixed.
  • Stir in gumdrops. Shape dough into 9x1 1/2-inch roll. Wrap in waxed paper; refrigerate at least 2 hours or until firm.
  • Heat oven to 350°F.
  • Cut roll, using serrated knife, into 3/8-inch slices. Place 1 inch apart onto lightly greased cookie sheets. Bake 10-12 minutes or until lightly browned and set. Immediately remove from cookie sheets. Cool completely.

Number Of Ingredients 11

1 cup packed light-brown sugar
1 cup granulated sugar
1/2 pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
3 cups rolled oats
1 cup plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup wheat germ
12 ounces good-quality chocolate, chopped into chunks, or 1 1/2 cups golden raisins, or 10 ounces toffee pieces

Steps:

  • Heat oven to 350 degrees. Combine the brown sugar, granulated sugar, and butter in an electric mixer fitted with the paddle attachment. Starting with the mixer on low speed and increasing until it is on medium, beat until the mixture is creamy and fluffy, about 5 minutes. Add the eggs and the vanilla extract, then scrape the sides of the bowl with a rubber spatula, and mix to combine.
  • Combine the rolled oats, flour, baking soda, baking powder, and wheat germ in a large bowl, and stir to combine. Add the dry mixture to the butter mixture, then mix on low speed just to combine, 10 to 15 seconds. Remove the bowl from mixer stand, and stir in your choice of chocolate chunks, golden raisins, or toffee pieces.
  • Line the baking pans with parchment paper. Use a large (2 1/2 ounce) or small (1 1/4 ounce) ice-cream scoop to form balls of dough. Place the balls of dough about 4 inches apart on baking pans. Bake until golden and just set, about 18 minutes for large cookies and 14 minutes for small cookies. Remove from oven; let cool on pan 4 to 5 minutes before transferring to a cooling rack.

1 teaspoon vanilla extract

1 cup flaked coconut
2 cups rolled oats
1 cup chopped pecans
1 cup gumdrops, chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Stir in the coconut, rolled oats, pecans and gumdrops. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheets. Gently flatten cookies using a fork dipped in flour.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  • Preheat oven to 350°. Cream shortening and 3/4 cup sugar until light and fluffy. Beat in almond extract. 8 tablespoons unsalted butter, melted and cooled

Steps:

  • Preheat oven to 350 degrees.
  • Line two large baking sheets with parchment paper. Combine flour, baking soda, and salt in a small bowl. In a large bowl, using an electric mixer on medium speed, beat together butter and brown sugar until well combined. Beat in egg and vanilla. Stir in flour mixture until just combined. Fold in oats and gumdrops. Drop dough by heaping tablespoonful onto prepared baking sheets, leaving 2 inches between each cookie. Bake until edges are golden but still soft on top, about 15 minutes. Mom used to make these all year round. She didn't use the black ones, instead gave them to us kids to munch on while we watched her whip the cookies up. No coconut in mom's recipe. I supose you could add a cup or so if you'd like. As she chopped the gum drops she tossed them in sugar to keep them from getting all stuck together.

Steps:

  • Cream sugars, shortening and eggs.

¾ cup chopped walnuts
½ cup golden raisins

Steps:

  • In a medium bowl, cream together the brown sugar and shortening. Stir in the egg and buttermilk. Stir together the flour, baking soda and salt, add to the creamed mixture, mix until well blended. Stir in the chopped gumdrops, walnuts and raisins. Cover bowl, and chill for at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Drop cookies by rounded teaspoonfuls 2 inches apart onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Cool for 2 minutes on baking sheets before removing to cool on wire racks.
