Baked Haddock image

Haddock (or other white fish) is lightly breaded and baked. Parmesan adds a nice flavor. Quick and easy to prepare, it's a nice alternative to deep frying.

¾ cup milk
2 teaspoons salt
¾ cup bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon ground dried thyme
4 haddock fillets
¼ cup butter, melted

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
  • Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

A low fat version of my fathers famous recipe. This was a great hit with our family. A great belly warmer especially if you're like me living in Manhattan during winter!

Number Of Ingredients 4

500 ml skim milk (enough to half fill a saucepan)
4 haddock fillets (1 per person)
1 red onion
pepper (for taste)

Steps:

  • Pour you milk into a saucepan and leave to bubble- NOT BOIL.
  • Add your haddock, onion and pepper.
  • Leave to cook for 15-20 minutes, stirring and blowing milk when over bubbling.
  • Serve with boiled or mashed potato.

This recipe is from the Hiltop Steak House in Saugus, Ma. A very popular restaraunt that has been around for years.

3/4 cup milk

3/4 cup breadcrumbs
1/4 cup parmesan cheese, grated
1/4 teaspoon ground thyme

Steps:

  • Preheat oven to 500 degrees F .

This is my favorite way to cook haddock. The recipe was originally for baked stuffed shrimp, so you could use it for that also.

Number Of Ingredients 11

1 1/2 lbs haddock
3/4 cup milk (for soaking the fish in) (optional)
6 tablespoons butter
2 tablespoons onions, chopped fine
1 garlic clove, minced
1/4 cup dry sherry
1 tablespoon dried parsley
1 dash paprika
salt, to taste
1/2 cup breadcrumbs
1/2 cup crushed butter flavored cracker (such as Ritz or Townhouse)

Steps:

  • Preheat oven to 350°F.
  • Rinse fish and then soak in milk (This will take away any "fishiness").
  • Melt butter in a small frying pan. Add onion and saute until softened, then add garlic.
  • Remove from heat, add sherry, parsley, paprika and salt to taste.
  • Mix bread crumbs with crushed cracker crumbs.
  • Remove fish from milk, rinse again, then place in a baking dish.
  • Pour crumb mixture over fish.
  • Then pour butter/sherry mixture over crumbs.
  • Bake at 350°F for about 25 minutes. Place under broiler on high until golden brown and slightly crispy. (Watch it closely, this does not take long.).
  • Enjoy!
