1 Cup All-Purpose Flour
1 Tbsp. Parsley Flakes (Or 2 Tsp. Chopped Fresh Parsley)
1 Tsp. Kosher Salt
½ Tsp. Ground Black Pepper
1 Tbsp. Baking Powder
1 Tbsp. Olive Oil
1 Cup Water
1 Quart Vegetable Oil For Frying

Steps:

  • Heat the vegetable oil to 350°In a large bowl, mix together the flour, parsley flakes, salt, pepper, olive oil, baking powder. Then slowly add the water in small quantities. Mix the dough in between each addition.
  • Using a cookie scoop (or a small ice cream scoop), add 3-5 scoops of dough into the hot oil. Cook for 5-7 minutes (or longer if needed and depending on the size) until golden brown. Work in batches. Once the fritters are complete. Transfer the fritters into a paper toweled plate. Repeat the next batch until completed. Serve warm as a side or appetizer and enjoy.

½ white onion, chopped
1 head garlic, cloves separated and minced
3 tablespoons seasoned salt
3 tablespoons paprika
3 tablespoons ground thyme

2 tablespoons whole cloves
vegetable oil for frying

Steps:

  • Combine chicken legs, lemon juice, onion, garlic, seasoned salt, paprika, thyme, pepper, and cloves in a large bowl. Cover and marinate in the refrigerator for at least 12 hours.
  • Heat oil in a deep-fryer or large saucepan over medium-high heat. Fry chicken in batches until golden brown, about 8 minutes per side. Drain on paper towels.

10 ounces boneless, skinless chicken thighs, trimmed of fat and diced into 1/4-inch cubes
½ cup Italian-seasoned bread crumbs
¼ cup chopped onion
¼ cup shredded mozzarella cheese
1 egg
¼ cup mayonnaise
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
2 tablespoons vegetable oil

Steps:

  • Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.

1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
2 eggs, lightly beaten
1 (4 ounce) can Hatch green chiles, drained
½ cup chopped onion
½ cup almond flour
2 tablespoons mayonnaise
3 cloves garlic, peeled and smashed
2 teaspoons chili powder
1 teaspoon chipotle chile powder
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground cumin
2 tablespoons Buffalo wing sauce, or to taste
¼ cup avocado oil, or as needed

Steps:

  • Place 1/3 of the chicken pieces into the bowl of a food processor and pulse several times, cutting the chicken into smaller pieces. Transfer to a large mixing bowl. Repeat twice more with remaining chicken pieces. Do not overprocess; some texture should remain.
  • Add eggs, Hatch chiles, onion, almond flour, mayonnaise, garlic, chili powder, chipotle powder, salt, pepper, and cumin to the chicken. Stir until combined. Stir in wing sauce.
  • Place a 12-inch nonstick skillet over medium heat. Fill hot skillet with 1/4 inch avocado oil; heat until shimmering.
  • Use a 1/4 cup measure to drop 6 mounds of chicken mixture into the hot oil. Gently press each one into a 3-inch fritter. Cook until chicken is no longer pink and tops are browned, 2 to 3 minutes per side. Transfer fritters to a paper towel-lined plate. Repeat with the remaining chicken mixture. Serve warm.

I got this recipe from the Asian guy that works at a Chinese food restaurant, Yasuko Yao, he said it was supposed to be like Mushu chicken, but they wanted to make a breakfast out of it and this is what he got. Great snack or even appetizer for any occasion.

2 white boneless chicken breast halves
3 tablespoons honey
1/4 cup maple syrup
1 -1 1/2 cup pancake batter
1 tablespoon butter
2 cups vegetable oil (for frying)

Steps:

  • Put your tablespoon of butter in a skillet until skillet is coated.
  • Toss in your 2 chicken breasts until they're cooked to your liking.
  • Slice up the chicken breasts into strips, then cut each strip in half.
  • Prepare your pancake batter in a bowl as directed on it's box.
  • Dip each piece of chicken in the batter then fry in a pan of vegetable oil until golden brown.
  • Mix together the 3 tablespoons of honey and 1/4 cup of maple syrup in a small bowl.
  • Using a pair of tongs, dip each piece of chicken in the honey-syrup mixture until lightly coated.
  • Eat up.

This recipe was found on islandflave.com & this way I was able to obtain the correct amounts of the ingredients & proper cooking times. I have enjoyed making this chicken for a long time now, as it was given to me in Creole and without amounts. It is great the following day, that is if you have any left.Update: 07/18/2009 so as to make some more of the sauce w/out lessening all the good flavors, this time we made it with 6 cloves of garlic, 3/4 cup crushed tomatoes,1/4 cuo brandy or cognac & added broth as needed - low-sodium, low-fat chicken broth! As far as the peppers go I love Scotch Bonnet Peppers and their flavor is wonderful! As I was going to serve this to our friends - one of the kitchen aides asked me if I wouldn't put sliced olives in the dish and we did and it tasted awesome - on white rice or brown rice, if you choose and with string beans almondine.;)

1 (3 1/2-4 lb) fryer, cut into 1/8 's
1 large onion, sliced thin
1 scotch bonnet pepper, chopped fine
3 garlic cloves, smashed or 3 minced garlic
3/4 cup tomato sauce
3 tablespoons sugar or 3 tablespoons Splenda sugar substitute
salt, to taste
2 -3 limes or 2 -3 lemons
vegetable oil

Steps:

  • Wash chicken well & pat dry.
  • Rub each piece with limes/lemons and sprinkle with salt.
  • Heat oil in heavy ovenproof pan.
  • Preheat oven to 375°F.
  • Fry chicken pieces in hot oil.
  • Meanwhile, in a bowl, combine garlic, sugar, tomato sauce and salt; mix well.
  • After 5 minutes of frying the chicken, add sliced onions and chopped pepper, for 5-7 minutes.
  • Remove pan from heat and drain excess oil and add the tomato mixture, stirring well.
  • Place the pan in oven & bake uncovered for 20 minutes or until chicken is cooked completely.
  • Transfer chicken to serving platter lined with lettuce and onion rounds and with a pile of "Picklese" #148276 vegetables.
  • Served with diri blanc (plain white rice) - pour sauce over rice.
