Haitian Marinade is a mouth-watering recipe that's a staple at any Haitian's first communion, but can be served on any day of the year as a crunchy snack or appetizer.

1 Cup All-Purpose Flour
1 Tbsp. Parsley Flakes (Or 2 Tsp. Chopped Fresh Parsley)
1 Tsp. Kosher Salt
½ Tsp. Ground Black Pepper
1 Tbsp. Baking Powder
1 Tbsp. Olive Oil
1 Cup Water
1 Quart Vegetable Oil For Frying

Steps:

  • Heat the vegetable oil to 350°In a large bowl, mix together the flour, parsley flakes, salt, pepper, olive oil, baking powder. Then slowly add the water in small quantities. Mix the dough in between each addition.
  • Using a cookie scoop (or a small ice cream scoop), add 3-5 scoops of dough into the hot oil. Cook for 5-7 minutes (or longer if needed and depending on the size) until golden brown. Work in batches. Once the fritters are complete. Transfer the fritters into a paper toweled plate. Repeat the next batch until completed. Serve warm as a side or appetizer and enjoy.

Haitian Epis- a flavorful combination of herbs & aromatics used as a marinade/ seasoning base with all Haitian savory food from soup to meat.

7 cloves
12 cloves garlic
2 bouillon cubes
a few sprigs of thyme
2 stalks celery
1 bell pepper
1/2 bunch parsley
1 onion
3 shallots
7 scallions
1/3 cup vinegar
1/4 cup oil
juice of 1 lime

Steps:

  • Cut the vegetables into smaller pieces.
  • Using a food processor, first grind the cloves, bouillon cubes, garlic, thymey and celery. If you overcrowd the machine with everything at one time, the smaller things will not grind properly.
  • Now add the parsley, onions, scallions, shallots and bell pepper.
  • Process until very fine.
  • Add vinegar, oil and lime juice, if using.
  • Process until smooth.
  • Store in a glass jar in the refrigerator.

  • In the first step,you’ll need to prepare the seasoning or “Haitian epis.” Grab a large bowl andadd the sour orange juice, salt, pepper, and other preferred seasonings. Stirthem all together.It should take you approximately two hours to prepare theentire recipe. The actual cooking time is only 20 minutes, but the resting timerecommended is two hours for the food. So, keep that in mind.
  • Put the chicken meat in a cooking pot and apply the juices of theseasonings to the meat. Let the meat marinate for 2 to 3 hours.
  • Now cook the chicken meat on the stove with the remaining juices inplace. Wait for the meat to change color and you will know it is cooked.
  • When the chicken meat is fully cooked, the next step is to add thebatter. You need to mix together water, flour and baking soda to make thebatter. Use a separate bowl for making the batter. Add the cooking juices fromthe chicken to the batter.

  • Wash and prep the ingredients, then place the Assorted Color Bell Peppers (4), Scallion (3), Fresh Thyme (10 sprig), Scotch Bonnet Pepper (1), Olive Oil (3/4 cup), Fresh Parsley (3/4 cup), Shallot (5) and Celery (2 stalk) in your blender or food processor.
  • If you like a bit of texture, pulse it until you get the desired consistency. Feel free to puree to your liking.
  • Place the now complete Epis seasoning in a container with a lid and store in the fridge for months. Optionally you can freeze it in an ice cube tray, then pop out when frozen and store in the freezer in a zipper bag. This will allow you to use one cube every time you’re doing a recipe which calls for this amazing seasoning. Enjoy!
