EASY HALIBUT FILLETS
I made these quick and easy halibut fillets for my husband's birthday as halibut is his favorite fish. It's really important that the halibut is seared over really high heat. Serve with rice and green beans.

Steps:
- Combine melted butter, honey, lemon juice, liquid aminos, pepper, and garlic in a small bowl; mix to combine.
- Brush both sides of the halibut fillets with the butter sauce.
- Heat a cast iron skillet over very high heat. Add halibut filets and sear on each side for 90 seconds. Reduce heat to medium-high and cook on each side until fish can be easily flaked with a fork, 2 to 3 minutes per side.

HAWAIIAN HALIBUT
My mother shared this recipe with me several years ago. I've found that even my friends who aren't fond of fish enjoy this particular dish and find themselves taking seconds.

- In a small bowl, combine sugar and cornstarch. Stir in the vinegar, water, soy sauce and hot pepper sauce until smooth; set aside., In a small resealable plastic bag, combine the flour, salt and pepper. Add fish and shake to coat. In a small skillet, saute fish in oil for 4-6 minutes or until fish flakes easily with a fork; remove and keep warm. , In same skillet, saute green pepper and onion for 3 minutes or until crisp-tender. Add pineapple. Stir sauce and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Return fish to skillet; heat through. Serve with rice.

HALIBUT AND TURNIPS (HAMERSLEY'S BISTRO)

Steps:
- Combine 6 tablespoons olive oil, pepper, cardamom, turmeric, salt, coriander and juice of half a lemon and marinate fish in this mixture for 10 minutes.
- Heat pan for fish and add remaining 1 tablespoon of olive oil.
- Saute leeks, turnips, shallots, garlic, thyme, raisins. Toss and cook over high heat for about 5 minutes to soften.
- Drain marinade from fish and reserve. Add fish, wine and stock to turnip mixture; cover and bring to boil. Reduce heat and simmer fish 8 to 10 minutes, depending on thickness of fish.
- Remove fish and vegetables and keep warm.
- Reduce liquid in pan to 1/2 cup. Whisk in mustard. Remove from heat and vigorously whisk in 4 tablespoons of reserved marinade mixture until thickened. Adjust seasoning and serve over fish and vegetables.

- Preheat the oven to 300°F (150°C).
- On a cutting board, pat the halibut dry with paper towels. Drizzle the olive oil over the halibut, using your hands to rub it all over. Season the halibut with the salt and pepper.
- Transfer the halibut to a 9 x 13-inch baking dish and arrange the lemon slices on top of the fish.
- Bake until the halibut is just cooked through and easily flakes when nudged with a fork, 25-30 minutes.
