BEETROOT & HALLOUMI SALAD WITH POMEGRANATE AND DILL



Beetroot & halloumi salad with pomegranate and dill image

Make an easy salad with three of your 5-a-day. Halloumi with juicy pomegranate seeds and the crunch of pumpkin seeds is a moreish combination

1 medium red onion, halved and thinly sliced
2 tbsp apple cider vinegar
2 oranges
4 handfuls rocket leaves
2 cooked beetroots, chopped
drop rapeseed oil, for frying
80g thinly sliced halloumi, slices halved
80g pomegranate seeds
2 tbsp pumpkin seeds
handful mint leaves
few sprigs dill, chopped

Steps:

  • Put the sliced onion in a bowl, add the vinegar and toss well. Cut the peel and pith from the orange then segment over the onion bowl to make sure that you catch any juice.
  • Pile the rocket onto plates and dot over the beetroot and orange. Rub a drop of oil around a non-stick frying pan then fry the halloumi in the pan for about 30 seconds each side until golden.
  • Stir the pomegranate into the onions and spoon this and all the dressing, over the rocket, then top with the halloumi and scatter with the pumpkin seeds, mint and dill.

This fried halloumi salad with beetroot is tender, crisp and nutritious! The light dijon mustard, vinegar, and olive oil dressing adds the perfect cherry on the top and brings all the flavors together perfectly.

Number Of Ingredients 10

1 packet (8 oz halloumi cheese (block of halloumi cheese))
4 cups baby spinach (washed and dried)
2 medium beetroot (cooked (boiled, grilled or roasted))
1 small red onion (sliced into half moon or circles)
3 tablespoon Olive oil
1 tablespoon Dijon Mustard
1 teaspoon lemon juice
Salt to taste
Black pepper to taste
2 tablespoon apple cider vinegar or red wine vinegar

Steps:

  • Place all the dressing ingredients in a small bowl or a jar and shake/stir like crazy. Set aside (for best flavor, let chill in the fridge for 30 minutes-1 hour).
  • Heat up a little cooking oil in a non stick or similar frying pan over medium heat. Add the halloumi slices (about ¼-½ inch thick) and cook them until golden brown on both sides (about 2-3 minutes). Transfer to a plate lined with paper towel to drain the excess oil. You can keep the halloumi warm in a preheated oven before ready to serve. If you have a grill, grill the cheese there which will add an appetizing smoky layer to it.
  • Assemble the salad. In a large bowl, mix the spinach leaves, half of the dressing, and red onions in a bowl. Gently mix to combine. Arrange others ingredients on a serving platter and add beetroots (I like to add a pinch of salt to the beetroot before serving), halloumi and top with more dressing right before ready to serve. You can add a squeeze of citrus juice or a little lemon zest for a pleasing aroma and delicious flavors

GRIDDLED HALLOUMI WITH BEETROOT & ORANGE

250g pack cooked beetroot , cut into wedges
3 medium oranges , segments and juice
4 tsp white wine vinegar
2 x 250g packs halloumi cheese , drained
100g watercress

Steps:

  • Heat a large griddle pan or frying pan over a high heat. In a large bowl, combine the beetroot, orange segments and juice and white wine vinegar. Season, then gently mix together.
  • Carefully slice each block of halloumi into 4 pieces, then season on both sides with black pepper. Griddle or fry the halloumi for 1-2 mins on each side until golden and crisp, and the cheese is beginning to melt. Add the watercress to the beetroot and orange salad, then toss together. Divide the salad between plates, then top each with slices of hot cheese.

HALLOUMI WITH LEMONY LENTILS, CHICKPEAS & BEETS



Halloumi with lemony lentils, chickpeas & beets image

A great storecupboard salad, topped with golden brown halloumi and quick, homemade pickled red onion

200g puy lentils
2 lemons
1 red onion , finely sliced
3 tbsp extra virgin olive oil
3 tbsp capers , very roughly chopped
400g can chickpeas , drained and rinsed
250g cooked beetroot , cut into matchsticks
½ small pack parsley , roughly chopped
250g pack halloumi , cut into 8 slices

Steps:

  • Cook the lentils in a pan of boiling water for 20-25 mins or until just done. Meanwhile, squeeze the juice from one lemon into a bowl. Add the onion and scrunch together with a pinch of salt to pickle slightly. Set aside.
  • Finely zest the remaining lemon and set aside for the halloumi. Squeeze the juice into a jam jar or jug. Add the oil with a pinch of seasoning and the capers - shake well and set aside. When the lentils are ready, drain and tip into a large serving bowl with the chickpeas. Toss with the dressing straight away, then toss through the beets, parsley, pickled onions and their juice.
  • Heat a frying pan over a medium heat and fry the halloumi for 1-2 mins each side or until golden brown. Toss with the lemon zest, then place on top of your salad to serve.

A cheese and grain salad with vibrant roast beetroot, squash and red onion. It tastes as good as it looks, plus it's 3 of your 5-a-day

1 bunch raw beetroot (4 large), peeled and sliced into wedges
1 medium butternut squash , peeled, deseeded and cut into the same sized chunks as the beetroot
4 red onions , sliced into wedges
2 tbsp olive oil
200g quinoa , rinsed
1l vegetable stock
2 x 250g packs halloumi , each block cut into 6 slices
1 garlic bulb
1 tbsp lemon juice or white wine vinegar
3 tbsp extra virgin olive oil
1 tsp clear honey

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the beetroot, squash and red onion in a large roasting tin. Cut the top off the garlic bulb (the garlic is for the dressing) and drizzle with a little of the olive oil before wrapping in foil and adding to the tin. Season the vegetables and pour the remaining oil over them. Roast for 40-45 mins, turning the vegetables halfway through.
  • Meanwhile, put the quinoa and stock in a medium saucepan over a high heat. Bring to the boil, then cover with a lid and simmer for 15 mins. Drain and return to the pan, off the heat. When the vegetables are roasted, set the garlic bulb aside and stir the remaining vegetables through the quinoa. To make the dressing, carefully squeeze the roasted garlic from the bulb into a small bowl. Add the lemon juice, oil, honey and seasoning and mix.
  • Put a griddle pan over a high heat. When it's really hot, add the halloumi and griddle for 45-60 secs either side (you may need to do this in batches). Spoon the quinoa and vegetables onto plates and top with the halloumi and dressing.

  • Cook beets (see my preferred/lazy method below), peel, and chop into small 1/2 inch cubes. Place in a shallow serving bowl.
  • While the beets are cooking, prep the other ingredients: chop chives, parsley, apples, and combine dressing ingredients in a mason jar.
  • Roughly chop walnuts, add to a small dry pan on medium heat to toast. Toss them around frequently, for five or so minutes...just until they are fragrant and starting to brown. Set them aside to cool.
  • Slice your country bread into small crouton-sized bites and place on a parchment-lined baking sheet. Drizzle olive oil over top, along with chives and kosher salt. Toss around with your hands until they are all evenly coated. Bake at 375 for 15-20 minutes (stirring mid-way) until they are lightly browning and crisp.
