Time 20m

Yield 12

Number Of Ingredients 8

5 cups popped popcorn
1 cup candy corn
1 cup chopped salted peanuts
½ cup butter or margarine
3 cups miniature marshmallows
4 drops red food coloring
3 drops yellow food coloring
4 sticks red or black licorice, cut into thirds

Steps:

  • Grease a muffin pan and set aside. Place popcorn, candy corn and peanuts into a large bowl and set aside.
  • Melt the butter in a large saucepan over medium heat. Stir in marshmallows, red food coloring and yellow food coloring, adjusting color if needed to get a nice shade of orange. When the marshmallows are completely melted, pour over the popcorn and stir to evenly distribute the candy, nuts and marshmallow.
  • Use a greased spoon to fill the muffin cups. Insert a piece of licorice to act as the stem, and mold the popcorn around it. Let stand until firm, 10 to 15 minutes, and then pull the pumpkins out by their stems and admire your pumpkin patch!

Categories     Lunch/Snacks

Time 13m

Yield 8 serving(s)

Number Of Ingredients 6

1 tablespoon peanut oil
1/4 cup popcorn
1/2 cup honey
1/4 cup smooth peanut butter
1/4 teaspoon salt
8 black licorice strings, chopped (optional)

Steps:

  • Mix oil and popping corn together in a large pot. Cover the pot and cook over moderate to high heat for 5 to 7 minutes, or until corn begins to pop. Using pot holders, lift pot approximately 2 inches from the stove's surface, rotating or shaking the pot using a circular motion to prevent burning. Continue cooking until all the corn is popped, about 1 to 2 minutes. Transfer to large mixing bowl. Set aside.
  • In a small saucepan set over moderate to high heat, bring honey and peanut butter to a rolling boil. Stir mixture constantly for 30 seconds. Remove saucepan from heat and stir in salt. Pour peanut butter mixture over cooked popcorn and mix until well combined. Add licorice bits, if using.
  • With your hands, shape the popcorn mixture into 4-inch balls. (Oiling your hands with a small amount of vegetable oil will help prevent sticking). To cool popcorn balls, set them onto a lightly oiled wire rack. Once they have completely cooled, they are ready to serve.

Time 35m

Yield 14 serving(s)

Number Of Ingredients 7

7 -9 cups popped corn (preferably not microwave)
1 cup sugar
1/3 cup water
1/3 cup light corn syrup
1 teaspoon salt
1/4 cup butter
1 teaspoon vanilla

Steps:

  • Mix sauce ingredients [EXCEPT THE VANILLA!] in a saucepan.
  • Cook to 250 degrees on a candy thermometer for popcorn balls [or until a few drops form a hard ball when dropped into cold water].
  • This can be cooked to a lower temp if you are just going to drizzle this over popcorn in a pan for smaller bite-sized pieces - and don't want to break a tooth on the hard-ball caramel.
  • Remove from heat.
  • NOW stir in 1 tsp vanilla.
  • Pour in a thin stream over the popped corn, stirring constantly to mix well.
  • Shape into balls, if desired.
