Impossibly Easy Ham and Cheddar Pie image

Ham, Cheddar and apple make a delicious Bisquick® main-dish pie to serve morning, noon or night.

1 cup shredded Cheddar cheese (4 oz)
4 medium green onions, sliced (1/4 cup)
1 small cooking apple, peeled, chopped (1/2 cup)
1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Grease bottom and side of 9-inch pie plate with shortening. Sprinkle ham, cheese, onions and apple in pie plate.
  • In medium bowl, stir remaining ingredients until blended. Pour over ham mixture.
  • Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

My brand new husband described this pie as his mother made it. I developed the recipe from his description and the entire family relished it throughout our 52 years of marriage.

6 hard-boiled eggs, diced (leftover from Easter?)
2 cups diced ham (leftover from Easter?)
2 cups very thick white sauce
2 tablespoons yellow mustard, added to the cooked white sauce
1 recipe pie crust, for a two-crust 9 inch pie (Use a packaged pie crust to save time.)

Steps:

  • Line pie plate with one crust.
  • Spread half of the ham across it.
  • Then spread the diced hard-boiled eggs on top of the ham.
  • Spread the other half of the ham on top of the eggs.
  • Pour the white sauce evenly over the ham and eggs.
  • Top with the second crust-- crimping the edges tightly and cutting vent holes.
  • Bake at 350 for about an hour, until the crust is golden brown.

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

2 eggs, beaten

  • Preheat oven to 325 degrees F (165 degrees C). Press one package crescent roll dough into a 9-inch baking dish; cut remaining package crescent roll dough into 1-inch strips.

Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

2 tbsp butter
1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tbsp plain flour, plus extra for dusting
300ml chicken or ham stock
100ml pot crème fraîche (or use leftover double cream)
2 tsp wholegrain mustard
200g cooked ham, shredded
4 bay leaves, optional
375g pack puff pastry
1 egg, beaten, to glaze (or use milk)

Steps:

  • Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
  • Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
  • Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
  • Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

2 tablespoons salted butter
7 large eggs
1 tablespoon chopped fresh chives
Kosher salt and freshly ground black pepper
1 cup diced ham
1/2 cup shredded mozzarella
1/2 cup shredded Cheddar
One 17.3-ounce box frozen puff pastry, thawed
2 tablespoons poppy seeds

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • Add the butter to a nonstick skillet over medium heat. Beat 6 of the eggs together in a bowl. When the butter has melted, add the beaten eggs and the chives to the skillet, then a pinch of salt and pepper. Scramble the eggs until cooked through, about 2 minutes. Remove from the heat and add to a bowl to cool slightly.
  • Add the ham, mozzarella and Cheddar to the eggs and mix to combine. Set aside.
  • Make an egg wash with the remaining egg and a splash of cold water in a small bowl.
  • Lay out the sheets of puff pastry and cut into twelve 3-by-5-inch rectangles. Divide the egg mix among six of the puff pastry rectangles, leaving borders empty around the edges. Brush the borders with the egg wash and top each with another puff pastry rectangle. Using a fork, crimp the edges to seal. Transfer to the lined baking sheet. Brush the tops with the egg wash and sprinkle with the poppy seeds. Bake until golden, about 20 minutes.
  • Serve hot and enjoy.

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
  • Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk
1 pinch ground nutmeg
1 pinch Salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed
1 egg, slightly beaten
2 cups grated white Cheddar cheese
12 slices thinly sliced country ham, halved
1 sheet Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 400 degrees F. In a small saucepan over medium-low heat, melt the butter. Once the butter has melted, whisk in the flour, creating a roux. Allow the roux to cook for 1-2 minutes. Whisk in the milk, nutmeg, salt and pepper. The roux will thicken as it cooks into a bechamel. Once it becomes thick enough to coat the back of a spoon, take off the heat. Set aside.
  • On a lightly floured surface, roll out the thawed puff pastry until 1/8 inch thick. Cut one sheet of puff pastry into 3 equal pieces longwise. Cut each piece in half crosswise, creating 6 equal pieces. Line a baking sheet with a piece of Reynolds Wrap® Aluminum Foil. Place the pastry on the lined baking sheet and brush the edges of the pastry with the egg wash.
  • On one half of the piece of puff pastry, sprinkle 1 tablespoon of cheese and top with a slice of country ham. Spread 1 tablespoon of the bechamel over the ham. Repeat with another layer of cheese and ham, and finish with one tablespoon of bechamel. Fold the remaining half of the pastry over the filling. Crimp with edges with the tines of a fork. Brush the tops with the egg wash. Cut slits on the top of the pastry to allow the steam to escape the hand pie as it bakes. Repeat with the rest of the pastry.
  • Bake the hand pies for 20-25 minutes, or until golden brown on top. Immediately place on a wire rack to cool.
