HAM AND ONION PIE
Delicious cheesy ham and onion pie. Great if you have leftovers.

Steps:
- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse meal. Gradually add water. Blend with fork until mixture forms a ball and leaves the sides of the bowl. Roll out half of the pastry on a lightly floured board to fit a deep dish 9 inch pie plate. Cover and refrigerate. Wrap remaining pastry in plastic wrap. Refrigerate.
- Saute the ham, onion, garlic, salt, and pepper in 2 tablespoons butter or margarine until tender. Cool to room temperature.
- Saute potatoes in remaining 2 tablespoons butter or margarine until crisp and tender. Season to taste with salt and pepper.
- Layer half of the cheese, ham mixture, and potatoes into the prepared crust. Repeat. Blend eggs and cream, and pour two-thirds over potatoes. Roll out remaining pastry on a lightly floured board to cover pie. Brush rim of crust with the egg and cream mixture. Top with second half of pastry. Trim and pinch edges to seal. Flute. Brush the top with remaining egg mixture, and trim with the pastry trimmings.
- Bake at 350 degrees F ( 175 degrees C) for 45 minutes, or until pie is golden.

- Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

HAM, LEEK & POTATO PIE
Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

- Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
- Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
- Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
- Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

HAM AND TOMATO PIE
From Southern Living April 2007. I'm saving this recipe until I have fresh tomatoes from the garden. Serve with a salad for a complete meal that comes together quickly. Notes from SL, do not use deli ham due to the moisture content. You can also use leftover ham in this recipe.

- Preheat the oven to 425 degrees.
- Saute the ham and onion over medium heat until the ham is brown and all the liquid evaporates.
- Brush the bottom of the pie shell with mustard.
- Sprinkle 1/2 c mozzarella over the mustard.
- Put the ham and onions evenly on top of the cheese.
- Place a single layer of tomatoes on top of the ham.
- Combine the egg and half-and-half; beat with a fork until blended.
- Pour over the tomatoes.
- Evenly sprinkle the basil, pepper and remaining cheese on top.
- Bake for 20-23 minutes or until lightly brown and set.
- Cool on a wire rack for 20 minutes before cutting into wedges to serve.
- Garnish slices with basil sprigs and sliced tomatoes if desired.

- Heat oven to 400°F. Grease bottom and side of 9-inch pie plate with shortening. Sprinkle ham, cheese, onions and apple in pie plate.

- On a lightly floured surface, roll each puff pastry sheet into a 12-in. square. Place one square in a 10-in. quiche dish; set dish and remaining pastry aside., In a large skillet, melt butter. Add potatoes, onion, salt and pepper; cover and cook for 10-12 minutes or until potatoes are tender and golden brown, stirring occasionally. Set aside., In a large bowl, beat the eggs, parsley, water, salt and pepper. In a 10-in. skillet, melt 1 tablespoon butter; add half of the egg mixture. Cook over medium heat. A thick,comfort food casserole with a savoury flavor. This is an adaptation of a ham and potato casserole recipe I liked but wanted to play around with.

- Pan fry ham and chopped onion in olive oil until onions are lightly browned.
- While onions and ham are cooking, peel potatoes and slice paper thin.
- Butter a medium casserole dish and place sauteed ham and onion inside.
- Salt and pepper the ham and onions.
- preheat oven at 325 degrees.
- Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.
- Arrange potatoes over ham and pour milk and flour mixture over them over them.
- Sprinkle potatoes with chives and basil flakes.
- Bake at 325 degrees until potatoes are tender, about 1 hour. Cover for first 1/2 hour then remove cover.
