Ham Pasta Salad with Pineapple is a quick and easy dish. Homemade pineapple dressing is tossed with pasta, ham and bell peppers for a uniquely delicious salad!

8 ounces rotini (or bow tie pasta)
1 can pineapple tidbits ((14 ounces) with juice reserved for dressing)
1 red pepper (diced)
2 cups diced ham
1 green onion (thinly sliced)
½ cup mayonnaise or dressing
¼ cup sour cream
1 tablespoon dijon mustard
⅓ cup pineapple juice
1 teaspoon cider vinegar
1 teaspoon honey
¼ teaspoon garlic powder
black pepper to taste

Steps:

  • Cook pasta according to package directions. Drain and run under cold water.
  • Meanwhile, whisk together all dressing ingredients until smooth.
  • Combine all ingredients in a large bowl and gently toss with dressing. Refrigerate 2 hours before serving.
  • Store refrigerated up to 5 days.

1 fresh pineapple, leave outer skin on
2 cups cooked ham, cut into chunks
6 cherry tomatoes, halved
1 cup celery, sliced
1/4 cup green onion, sliced
1/2 cup sour cream
1/2 teaspoon dill weed
1/2 teaspoon hot mustard
1/4 teaspoon salt
1/4 teaspoon lemon juice
1/8 teaspoon garlic salt
1/8 teaspoon pepper

Steps:

  • Cut pineapple in half lengthwise through crown. Remove fruit. leaving shells intact. Core and dice fruit.
  • In large bowl, combine pineapple, ham chunks, cherry tomatoes, celery and green onions.
  • In small bowl, combine all remaining ingredients for dressing, blending well.
  • Spoon dressing over pineapple combination, tossing gently to mix.
  • Pile salad into pineapple shells to serve. Makes 4 to 6 servings.

2 tablespoons butter
2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
  • In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.

4 slices bread (thick slices)
1/4 lb swiss cheese, shredded (divided into four portions)
2 slices cooked ham
1/2 cup crushed pineapple, well drained (divided into 2 portions)
butter, room temperature

Steps:

  • Prepare a large skillet or cast-iron skillet.
  • Place two slices of bread on a work surface.
  • Cover/sprinkle each of the two slices with one portion of cheese, then one slice of ham, then one portion of pineapple.
  • Finish with the second portion of cheese.
  • Top each sandwich with a slice of bread.
  • Melt butter in a hot skillet.
  • Add the two sandwiches to the skillet; cook until cheese is beginning to melt and the undersides are golden.
  • Butter the tops of the sandwiches, using a spatula carefully turn them over.
  • Cook until the cheese is fully melted and the undersides are golden.
  • Let stand for about 2 minutes before slicing.

4 unpeeled small new potatoes, cubed (2 cups)
2 cups uncooked radiatore (nugget) pasta (6 ounces)
2 cups broccoli flowerets
1 cup diced fully cooked ham
1/4 cup chopped drained roasted red bell peppers (from 7-ounce jar)
2 medium green onions, chopped (2 tablespoons)
1/3 cup mayonnaise or salad dressing
1/3 cup ranch dressing
1/8 teaspoon freshly ground pepper

Steps:

  • Place potatoes in 4-quart Dutch oven; add enough water just to cover potatoes. Cover and heat to boiling; boil 4 minutes. Remove potatoes from water with slotted spoon.
  • Add pasta to boiling water in Dutch oven; cook and drain as directed on package, adding broccoli for last 2 minutes of cooking. Cool potatoes, pasta and broccoli slightly. Refrigerate about 1 hour or until completely chilled.
  • Mix potatoes, pasta, broccoli, ham, bell peppers and onions in large glass or plastic bowl. Mix mayonnaise, ranch dressing and pepper; gently stir into potato mixture. Serve immediately, or cover and refrigerate up to 2 hours before serving.

I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

1 (15 ounce) can crushed pineapple, drained
1 cup white sugar
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
24 slices whole-grain bread
60 thin slices deli ham

Steps:

  • In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
  • In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
  • Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.
