Steps:
- In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. Sprinkle with cheese and cut into wedges to serve.

- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
HAM AND CHEESE MINI FRITTATAS
Note: you must use 2 mini-muffin tins with 2-inch cups to make these easy party bites. These tins can be found on the baking aisle in larger markets or at many discount stores. Most hold 12 mini-muffins per tin, some hold 24. This recipe will make 24 pieces.

- Preheat oven to 375 degrees F.
- Mix together the chopped cheese, Canadian bacon, and chives and season with a few grinds of pepper. In a bowl, beat the eggs. Brush the muffin tins with melted butter. Using a teaspoon, fill the 24 mini-muffin cups halfway with the cheese mixture. Using a ladle, fill the cups to just below the edge with the beaten eggs. Bake until golden, about 12 minutes. Remove and let cool to handle, then arrange the egg bites on a plate and serve.

- In a 9-inch non-stick skillet cook the onion and the bell pepper with salt and pepper to taste in 1 tablespoon of the oil over moderately low heat, stirring, until the bell pepper is tender. In a bowl whisk together the eggs, the ham, 1/3 cup of the Swiss cheese, and salt and pepper to taste, add the bell pepper mixture, and stir the mixture until it is combined well. In the skillet heat the remaining 1/2 tablespoon oil over moderate heat until it is hot but not smoking, pour in the mixture, distributing the ham and bell pepper evenly, and cook the frittata, without stirring, for 8 to 10 minutes, or until the edge is set but the center is still soft. Sprinkle the remaining 1/3 cup Swiss cheese over the top. (If the skillet handle is plastic, wrap it in a double thickness of foil.) Broil the frittata under a preheated broiler and about 4 inches from the heat for 2 to 3 minutes, or until the cheese is golden, and let cool in the skillet for 5 minutes. Slide the frittata onto a serving plate, cut it into wedges, and serve it warm or at room temperature.

First simmered on the stove, then broiled and wrapped in tortillas, this ham and cheese frittata is a quick and easy to add to any bento box! This can be made with broccoli and Cheddar instead of ham.

BRUNCH HAM & CHEESE FRITTATA

- Preheat oven to 450°F.
- Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
- In skillet, saute minced garlic, diced potatoes and onions in olive oil.
- Once brown, add a few teaspoons water and cook another 1-2 minutes. Then add in the diced ham.
- In bowl, whisk eggs, milk, salt and pepper.
- Pour egg mixture over the ham, potatoes and onions.
- Cook over medium heat for 5 minutes, until the eggs have set around the edges of the skillet.
- Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.
- Add shredded cheese to the top and bake another 1-2 minutes until cheese melts.
- Serve Ham and Cheese Frittata with Fresh Fruit.
- Cost $4.48.
- For the stovetop only, you could probably cook it for a lot longer over LOW heat until the eggs in the middle cook through.
- Another way would be to saute the garlic, onions, potatoes and ham in the skillet. Then place those into an 8x8-inch baking dish, then pour the eggs over and bake it. It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.

HAM & CHEESE SANDWICH FRITTATA
This quick and easy frittata is great for brunch but is hearty enough for a tasty dinner. Packed with the garlic, onion, and mustard you taste those flavors in every bite. What we really loved was the butter toasted bread addition - so yummy. While the recipe calls for deli ham, this would be great with leftover baked ham too.

- Preheat oven to 350 degrees. On the stove, preheat a cast iron skillet to medium heat.
- Cut bread into cubes, leaving the crust on. Also, chop deli ham into small pieces. Set both aside.
- In a large bowl, whisk together eggs, milk, and spices. Set aside.
- Melt 3 Tbsp of butter in the skillet and add the cubed bread. Gently toss with spoon until bread begins to brown and becomes crispy; about 5 minutes.
- Add last Tbsp of butter and chopped ham to skillet and cook for another 2-3 minutes until ham starts to sizzle.
- Pour egg mixture over bread and ham in skillet. Remove skillet from stove and place in oven.
- Bake in 350 degree oven for 12-13 minutes until eggs are firm in the center.
- Remove skillet from oven and sprinkle shredded cheese over the top. Return to oven and bake for another 3-4 minutes until cheese begins to bubble.
- Let cool for about 5 minutes. Cut into 8 slices and serve with a dollop of sour cream on top, if desired.
