for boiling potatoes water
1½ lb preferably russets, peeled and cut into large chunks potatoes
3 tbsp heavy cream
3 tbsp at room temperature unsalted butter
1½ cup chopped ham
1½ cup spinach
2 tbsp vegetable oil
to taste salt and ground black pepper
10½ oz (1 can) cream of mushroom soup
1 cup shredded cheddar cheese
chopped parsley

Steps:

  • Preheat your oven to 350 degrees F and grease a baking dish.
  • Place potatoes into a pot and add enough water to cover the potatoes.
  • Boil the potatoes for about 25 minutes until tender.
  • While boiling the potatoes, heat up oil in a saute pan over medium heat.
  • Saute your ham and spinach briefly.
  • Season to taste with salt and pepper. Adjust accordingly and set aside.
  • When potatoes are tender, turn off the heat and drain the water from the pot.
  • Roughly mash the potatoes with a fork.
  • Then add in heavy cream, mushroom soup, and butter. Mix them well together.
  • Add in the ham and spinach. Season to taste with salt and pepper. Mix them well.
  • Transfer the potato mixture into your greased baking dish and add the shredded cheddar cheese on top.
  • Bake at 350 degrees F for about 20 to 30 minutes or until the cheese has melted evenly.
  • Serve while fresh and hot, garnished with parsley.

12 ounces ham, cubed (or sliced)
1 (32 ounce) bag frozen hash brown potatoes
1 (24 ounce) bag cheddar cheese
1 (10 ounce) package frozen creamed spinach
1 tablespoon spicy mustard
1 small onion
2 cups milk
3 tablespoons butter
3 tablespoons all-purpose flour
2 eggs, beaten
salt
pepper

Steps:

  • Using a skillet, melt your butter. Add the flour and the milk.
  • Cook until sauce thickens; remove from heat.
  • Add eggs, cheese, mustard, salt and pepper.
  • In another skillet, sauté the onion in some butter (I use about 1 tsp).
  • When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
  • In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
  • Repeat until all is used.
  • Cover and bake at 350°F for about 46 minutes.
  • Sprinkle some parmesan cheese on top before serving.

We didn't cook the celery with the onion and green pepper to add some additional crunch, but they could be cooked together. We used reduced-fat ingredients throughout and had great success. We found that there were no spices needed as the vegetables were a great flavor combination! This recipe ended up being a winner with everyone in the family!

1 onion, diced
1 green bell pepper, diced
5 potatoes, diced
1 (16 ounce) bag frozen chopped broccoli, thawed
1 pound diced cooked ham
1 (8 ounce) package sliced fresh mushrooms
2 stalks celery, diced
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) container sour cream
1 (4 ounce) package cream cheese
6 ounces shredded Monterey Jack cheese
½ cup buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a skillet with cooking spray. Cook and stir onion and green pepper over medium heat until onions are translucent, 5 to 7 minutes.
  • Spray a 9x13-inch baking dish with cooking spray.
  • Combine cooked onion, green pepper, potatoes, broccoli, ham, mushrooms, and celery in the prepared baking dish, stirring to distribute the vegetables and ham.

The first 5 ingredients and instructions are there if you're going to make instant potatoes, but you can skip that and use leftover mashed potatoes instead.

1 package (10 ounces) frozen broccoli, thawed and squeezed dry with paper towels

A fantastic one-dish meal, our egg casserole with spinach and potatoes is naturally gluten-free and vegetarian, making it perfect for a gathering with mixed dietary needs. And while it is special enough to serve at a holiday brunch, the fact that you can prep it all the night before means that it is easy enough for everyday mornings, too.

3 tablespoons unsalted butter, plus more, softened, for brushing
1 onion, chopped (2 cups)
Kosher salt and freshly ground pepper
1 pound curly-leaf spinach, thick stems removed, sliced (8 packed cups)
2 teaspoons fresh thyme leaves
1 pound Yukon Gold potatoes, peeled and cut into a 1/2-inch dice (3 cups)
1 1/2 cups whole milk
12 large eggs
Scant 1/4 teaspoon freshly grated nutmeg
6 ounces fontina, coarsely grated (2 cups)

Steps:

  • Preheat oven to 375°F. Brush a 2-quart baking dish with butter. Melt butter in a large skillet over medium-high heat. Add onion and 1/2 teaspoon salt; cook, stirring occasionally, until golden in places, 5 to 7 minutes. Add spinach and thyme; cook until spinach wilts and darkens slightly, about 5 minutes. Add potatoes and milk; season with pepper.
  • Simmer until milk thickens and reduces slightly and potatoes are easily pierced with the tip of a knife but still retain their shape, about 5 minutes. Remove from heat; let cool completely. Meanwhile, in a large bowl, whisk eggs with 1 1/2 teaspoons salt and nutmeg. Stir cooled potato mixture and half of cheese into eggs.
  • Transfer to prepared baking dish and cover with parchment-lined foil. (If assembling the day before, wrap the dish with plastic wrap and refrigerate until ready to bake). Bake casserole, covered, 30 minutes. Uncover, sprinkle evenly with remaining half of cheese, and continue baking until set and golden brown in places, 15 to 25 minutes more (if the top is browning too quickly, tent with foil). Let cool slightly before serving.
