MASHED POTATOES WITH HAM

Mashed Potatoes with Ham image

"Mashed Potatoes with Ham evolved from scalloped potatoes, which are tasty but time-consuming to bake. "I warmed up leftover mashed potatoes, then decided to throw in some ham to save a dish," Kathy explains. "The next time I made it, I added a cheese and crumb topping to give this casserole an appealing golden look."

Number Of Ingredients 12

8 ounces of ham chopped into small cubes
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
1/2 cup of frozen peas
1/2 cup of frozen sweetcorn
1 carrot diced into small cubes
1 pack of ready-made puff pastry
1 cup of chicken stock
1 cup of milk
1 heaping teaspoon dijon mustard
1 egg (beaten)
1 pinch of white pepper

Steps:

  • Preheat the over to 350 degrees Fahrenheit.
  • Heat a skillet and add the butter and let it melt.
  • Once the butter has melted, add the ham and cook for a 1 to 2 minutes.
  • Add the carrots, and continue to stir for another minute.
  • Add the flour, thoroughly combining with the ham and carrots.
  • Slowly add the chicken stock while stirring as the sauce thickens.
  • Continue to stir, then add the milk a little at a time. You may not need all the milk if you're happy with the consistency of the sauce.
  • Next, stir in the dijon mustard and a pinch of pepper.
  • Add the frozen peas and sweet corn, and combine well.
  • Pour the finished pie filling into an ungreased pie dish.
  • Take the puff pastry out, roll with a dusted rolling pin if a larger sheet is needed.
  • Using a brush, apply the beaten egg on the edges of your pie dish to help the pie crust stick.
  • Carefully put the puff pastry over the top of your pie dish, and remove excess pastry hanging over the edges with a knife.
  • Press the puff pastry firmly to the edges of your dish, and then use a knife to make a small incision in the center of your ham pot pie.
  • Brush beaten egg over the entire pie crust.
  • Put in the oven and bake for 20 to 25 minutes until the pastry is deep golden brown.

HAM, LEEK & POTATO PIE

Ham, leek & potato pie image

Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

Provided by Jane Hornby

Time 1h5m

Number Of Ingredients 12

2 tbsp butter
1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tbsp plain flour, plus extra for dusting
300ml chicken or ham stock
100ml pot crème fraîche (or use leftover double cream)
2 tsp wholegrain mustard
200g cooked ham, shredded
4 bay leaves, optional
375g pack puff pastry
1 egg, beaten, to glaze (or use milk)

Steps:

  • Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
  • Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
  • Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
  • Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

Craving comfort food? Try this easy ham, cheese and potato pie, which you can make with just five ingredients. Make a family meal of it by serving with a green salad

Provided by Cassie Best

Categories     Dinner, Supper

Time 1h5m

Yield Serves 2 adults, 2 children

Number Of Ingredients 6

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
