HAM SALAD
Don't know what to do with all that leftover ham from Easter? Try this fast and easy ham salad with tangy mustard and crunchy celery. Enjoy it in a sandwich or just on its own.

Steps:
- Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

- Chop the ham as finely as desired.
- Place boiled egg in a medium sized bowl and mash with a fork.
- Add the chopped ham.
- Add chopped celery.
- Add mayonnaise.
- Add pickle relish.
- Add yellow mustard.
- Add sugar.
- Add black pepper.
- Use a wooden spoon and mix together well.
- Add more mayo or pickle juice for a creamier ham salad.
- Taste and season with salt if needed.
- Refrigerate for an hour or two before serving.
- Enjoy!

- Spray a cookie sheet with cooking spray. Place ham and Swiss cheese slices on the bottom of the rolls and cover with roll tops.
- Mix butter, brown sugar, Worcestershire, mustard, and poppy seeds together in a small bowl and spoon over sandwich tops. Let sit, 4 hours to overnight.
- Preheat the oven to 400 degrees F (200 degrees C).
- Bake in the preheated oven until golden and cheese is melted, about 25 minutes.

FUNERAL HAM LOAF
This recipe was given to my mother by the sweet Methodist church ladies in Garden City, Kansas. They served these to us at my grandfather's funeral luncheon and now they are a family favorite. The original recipe serves 50, we find scaling down to 8 is just about perfect for our family.

- Preheat the oven to 375 degrees F (190 degrees C).
- Chop ham in the bowl of a food processor.
- Combine chopped ham, pork, eggs, oatmeal, and milk in a large bowl. Let sit, 3 hours to overnight.
- Shape into loaves and place in a large baking dish or loaf pans.
- Combine brown sugar, water, vinegar, and mustard for sauce in a bowl. Pour over loaves.
