A simple, flavorful, 15-minute, one-skillet meal. Glaze is delicious served with any pork, ham or poultry. ----------------- Adapted from Cook's Illustrated, The New Best Recipe cookbook, pg. 482

For the Glaze: *See Notes
1 cup apple cider
2 cups dark brown sugar (packed)
7 whole cloves
½ teaspoon ground ginger or 1 tablespoon grated fresh ginger

For the Ham:
1 bone-in ham steak (fully cooked)
1- tablespoon butter
1- tablespoon oil (canola or olive)

Steps:

  • For the Glaze:
  • (1½ cups glaze. 12-15 minutes.)
  • Bring all ingredients to a boil in a small saucepan over medium-high heat. Reduce the heat and simmer over medium-low heat until mixture is syrupy (220F) and has reduced to 1½ cups. (12-15 minutes). If the sauce thickens too much before ready to use, reheat over low heat until desired consistency.
  • Prepare steak while glaze is cooking.
  • Remove cloves before serving.

  • For the Ham:
  • (8 minutes, Serves 2)
  • Heat butter and oil on medium-high heat until butter foam hot, but not burned (right after butter foam has subsided).
  • Place ham steak in skillet and cook, without moving, 3-4 minutes until browned.
  • Flip steak over to brown steak on other side, 3-4 minutes.
  • Transfer steak to serving dish.
  • Serve with Apple Cider, Brown Sugar & Ginger Glaze.
  • This dish works well for any meal of the day.

1 cup brown sugar
1 cup maple syrup
2 tablespoons Dijon mustard
1 ½ teaspoons distilled white vinegar
15 whole cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange ham steaks in a baking dish.
  • Whisk brown sugar, maple syrup, Dijon mustard, and vinegar in a bowl; pour over ham steaks. Sprinkle cloves over ham steaks.
  • Bake in the preheated oven until browned on both sides, about 45 minutes, turning every 15 minutes. Discard cloves before serving.

1 fully cooked bone-in ham (6 to 7 pounds)
2 cups apple cider
1 cup honey
1/2 cup cider vinegar
1/4 cup Dijon mustard
1 tablespoon butter
2 teaspoons chili powder
1/2 teaspoon apple pie spice

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. One 12 to 14 pound fresh ham, bone in and skin on
1 cup chopped flat-leaf parsley leaves
12 fresh sage leaves, chopped
6 large cloves garlic, peeled and chopped
1/4 cup whole-grain mustard
1/2 teaspoon red pepper flakes
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 large Spanish onions, trimmed and cut into 1 inch wedges
1 gallon apple cider

Steps:

  • Rinse the ham and pat dry. To score the ham, use a serrated knife to make parallel cuts about an inch apart, across and through the skin into the fat. Cut diagonally across these first cuts to make a diamond pattern.
  • In a food processor combine the parsley, sage, garlic, mustard, red pepper, salt, and pepper. Add 1/4 cup of the oil and pulse to a make a coarse paste. Rub the paste all over the ham, pressing it into the cuts. Cover the ham with plastic wrap, put on a pan, and refrigerate overnight.
  • Remove ham from the refrigerator about 1 1/2 hours before cooking so the meat can come to room temperature. Preheat the oven to 450 degrees F.
  • In a large roasting pan toss the onion wedges with the remaining oil. Place the ham on top of the onions and add 1 cup of the cider. Roast the meat for 30 minutes, reduce the oven temperature 300 degrees F. Cook the ham until an instant read thermometer inserted into the thickest part registers 150 degrees F. A 13-pound ham will take about 4 to 4 1/2 hours, about 20 minutes per pound.
  • Meanwhile in a large sauce pan bring the cider to a boil. Reduce the heat to a brisk simmer and cook the cider until syrupy and about 1 1/2 cups. Skim off any foam that comes to the surface as the cider reduces. During the last 1 1/2 hours of cooking the ham, brush the reduced cider over the roast every 30 minutes to glaze the skin.
  • Let the cooked ham rest, loosely covered with foil, at room temperature for 30 minutes before carving. Reserve the onions and pan juices, skimming off any excess fat. Carve the ham and serve with the onion and pan juices.

Wow, this is a super easy recipe for ham steak with a wonderful combination of flavors. Just a little different and something you could serve up for a holiday meal too. I enjoy working with apple cider and look forward to trying more recipes that include it. This is another wonderful recipe from Classic Christmas recipes by Gooseberry Patch.

  • Place ham steak in an ungreased 13 by 9 inch baking pan; set aside. Mix remaining ingredients together and whisk together. Then pour over ham steak. Bake, uncovered, at 350 degrees for 30 minutes, basting often. I cooked mine in an electric skillet. I think I might increase the amount of liquid smoke next time to 3/4 teaspoon.

  • Place ham in a 5-qt. slow cooker. In a small bowl, combine the cider, brown sugar, mustard and honey; pour over ham. Cover and cook on low for 4-5 hours or until heated through. Remove ham and keep warm. , Pour cooking juices into a small saucepan. Combine cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with ham.

1 teaspoon grated peeled fresh gingerroot
2 tablespoons unsalted butter
1/4 cup raisins
1 tablespoon minced fresh flat-leafed parsley leaves

Steps:

  • Finely chop onion and in a measuring cup stir together cider, vinegar, mustard seeds, and mustard.
  • In a large heavy skillet heat oil over moderately high heat until hot but not smoking and sauté ham until golden and heated through, about 4 minutes on each side. Transfer ham to a platter and keep warm, covered.
  • In fat remaining in skillet cook onion over moderate heat, stirring occasionally, until golden, about 5 minutes. Add gingerroot and cook, stirring, 1 minute. Stir cider mixture and add to skillet. Boil sauce, stirring occasionally, until reduced to about 2/3 cup, about 5 minutes. Cut butter into 1/2-inch pieces. Add raisins to sauce and whisk in butter and parsley until butter is incorporated.
  • Pour sauce over ham.
