This is a quick and easy way to prepare dinner for the family. It's a hamburger casserole with a Mexican flair. Try it with some shredded cheese sprinkled on top.

1 pound ground beef
1 onion, chopped
1 stalk celery, chopped
8 ounces egg noodles
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and diced tomatoes
1 (15 ounce) can whole kernel corn, drained
¼ cup taco sauce
1 (1 ounce) package taco seasoning mix

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.
  • In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce, and taco seasoning mix. Mix well and place entire mixture into a 10x15-inch baking dish.
  • Bake in the preheated oven until thoroughly heated and bubbling, about 20 minutes.

¾ cup dry bread crumbs
3 tablespoons evaporated milk
2 tablespoons Worcestershire sauce
⅛ teaspoon cayenne pepper
2 cloves garlic, minced

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix the ground beef, egg, bread crumbs, evaporated milk, Worcestershire sauce, cayenne pepper, and garlic using your hands. Form the mixture into 8 hamburger patties.
  • Lightly oil the grill grate. Grill patties 5 minutes per side, or until well done.

I needed an easy meal one night, with very little in the pantry. I just threw together what I had available, and kept my fingers crossed. I've cooked it any number of times since, always with family approval. Even my picky teenage granddaughters like it! I use an electric fry pan, but any large saucepan will do.

1 lb hamburger meat
1/2 cup onion, chopped
1 (14 ounce) can Italian tomatoes
1 (14 ounce) can tomato soup
1 (14 ounce) can mushroom soup
1 pinch salt
1 pinch pepper
1 pinch Mrs. Dash seasoning mix
1 (12 ounce) package wide egg noodles

Steps:

  • brown hamburger meat and onions. Drain.
  • Add canned items, salt, pepper and Mrs. Dash Original Flavor spice.
  • Simmer 45 - 60 minutes.
  • Cook noodles, serve meat sauce over noodles.
