HAMBURGER SOUP
Hamburger Soup from scratch is packed with flavor! This humble, satisfying soup recipe will bring you back for bowl after bowl.

Steps:
- Heat butter in a large soup pot or Dutch oven. Add carrots, celery, and shallot or onion, season with homemade seasoned salt and pepper, then saute for 3 minutes. Place a lid on top then cook until vegetables are crisp-tender, 8-10 minutes, stirring occasionally. Add garlic then saute until very fragrant, 1-2 minutes.
- Turn heat up to medium-high, add ground beef, season with more seasoned salt and pepper, then break it up as it cooks. If there is a lot of extra fat in the pot you can either scoop it out now with a spoon, or skim it off the top of the soup later.
- Add remaining ingredients EXCEPT potatoes then turn heat to high to bring soup to a bubble. Add potatoes then turn heat down to medium-low and simmer until potatoes are tender, 15-20 minutes, stirring occasionally. (You may put a lid on the pot near the end to help the potatoes soften if they're taking too long.) Remove bay leaf then scoop soup into bowls and serve.

- In a large stock pot add carrots, potatoes, old bay seasoning and enough water to boil, and boil for 10 minute.
- Meanwhile brown ground beef and drain off any fat.
- Once potatoes and carrots have boiled for 10 mins add.

- In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in salt and pepper. , Transfer to a 5-qt. slow cooker. Add the remaining ingredients. Cover and cook on low for 9-11 hours or until vegetables are tender. Discard bay leaf before serving.

Steps:
- Put all vegetables in crock pot.
- Lightly brown ground beef and spoon over the vegetables.
- Combine the tomato soup, V-8 juice and water. Add the seasonings, and pour over the vegetables and meat.
- Cover crock pot and cook on low 6-8 hours, or on high 2-4 hours.
- Serve with grated parmesan cheese on top.
- Enjoy!
