LEFTOVER MEATLOAF CHILI

Leftover Meatloaf Chili image

Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. This recipe will serve two very hungry people or 3 not so hungry people. Submitted to "ZAAR" on October 12,2007

MEAT LOAF WITH CHILI SAUCE

Meat Loaf with Chili Sauce image

I used to serve this meat loaf in my cafe, where so many of my customers asked for it. I adapted the recipe for my slow cooker at home, where it's quite popular, too. -Robert Cox, Las Cruces, New Mexico

Categories     Dinner

Time 3h20m

Yield 8 servings.

Number Of Ingredients 12

1 large onion, finely chopped
1/2 cup seasoned bread crumbs
1 small green pepper, chopped
2 large eggs, lightly beaten
1/2 cup chili sauce
2 tablespoons spicy brown mustard
3 to 4 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 pounds lean ground beef (90% lean)
Additional chili sauce, optional

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Reheat meat slices, covered, until a thermometer inserted in center reads 165°. ,

Provided by Courtney Rowland

Categories     30 Minute Meal

Time 30m

Number Of Ingredients 14

1 lb. Italian Sausage
1 lb. ground beef
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 yellow onion, chopped
1 jalapeno, seeded and chopped
2 15 ounce cans tomato sauce
1 15 ounce can diced tomatoes with juice
3 Tablespoons Franks hot sauce
2 cloves minced garlic
2 teaspoons chili powder
1 teaspoon cumin
5 slices day-old bread
1 cup shredded cheddar cheese.

Steps:

  • Heat a large soup pot or dutch oven over medium heat. Add the Italian sausage and ground beef and break it up with a wooden spoon or metal spatula. Cook for about 5 minutes, or until browned on the outside. Stir in the bell pepper, onion, and jalapeno and cook for another 5 minutes or until no pink remains in the beef. Sprinkle with salt.
  • Stir in the tomato sauce, diced tomatoes, Franks, garlic, chili, and cumin. Increase the heat to medium high and bring the mixture to a gentle boil. Reduce heat to low then allow everything to simmer together for 5-10 (or more if desired) minutes, stirring often. Taste. Add salt, pepper, or additional Franks red hot sauce for heat if desired.
  • To serve, preheat the broiler. Place individual servings of the chili in oven safe bowls. Top each bowl with a slice of bread and hefty sprinkling of cheese. Place under the broiler for 3-5 minutes or until cheese is melted and bubbly. Serve immediately.
  • Note: This chili tastes best the day after it's made, so feel free to make it in advance and store in the fridge until ready to serve.

Number Of Ingredients 11

1/2 cup milk
4 slices white sandwich bread, torn into pieces
1 1/2 pounds ground sirloin

1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
Coarse salt and ground pepper

MEATLOAF HARRELL

Meatloaf Harrell image

Savory, easy-to-make meatloaf. Great main course for cold nights or served as sandwiches! For a cheesy meatloaf, grate pepper jack or colby jack cheese over the top as soon as meatloaf is pulled from the oven. Mozzarella is also very tasty! Or mix all three!

Categories     Main Dish Recipes     Meatloaf Recipes     Beef Meatloaf Recipes

Time 1h

Yield 10

Number Of Ingredients 17

½ (16 ounce) package saltine crackers
2 pounds ground beef
6 tablespoons Worcestershire sauce
3 tablespoons steak sauce
1 ¼ tablespoons prepared mustard
1 teaspoon ground black pepper
¼ cup Dr Pepper® soda
1 teaspoon dried rosemary
½ teaspoon cayenne pepper
½ teaspoon ground cinnamon
1 ½ teaspoons garlic powder
1 tablespoon dill pickle relish
2 tablespoons sweet pickle relish
1 egg, beaten
1 cup self-rising flour
1 (8 ounce) can tomato sauce
1 onion, chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place saltine crackers into a large, heavy plastic zipper bag, and gently crush into crumbs by rolling the bag with a rolling pin; alternately, place crackers into the work bowl of a food processor and pulse briefly just to break into crumbs. Two sleeves of crackers should make about 3 cups of crumbs. Reserve 3/4 cup of crumbs; place 2 1/4 cup of crumbs into a large mixing bowl.
  • Mix the 2 1/4 cups of cracker crumbs in the mixing bowl with ground beef, Worcestershire sauce, steak sauce, mustard, black pepper, soda, rosemary, cayenne pepper, cinnamon, garlic powder, dill relish, sweet relish, egg, self-rising flour, tomato sauce, and onion until thoroughly combined. Form into a loaf, and place into a 9x12-inch baking dish. Top the loaf with the reserved cracker crumbs.
  • Bake in the preheated oven until the loaf is browned, no longer pink inside, and the juices run clear, about 45 minutes to 1 hour, checking after 45 minutes. An instant-read meat thermometer, inserted into the thickest part of the loaf, should read at least 160 degrees F (70 degrees C).
