This easy Harry Potter Hagrid Cake is the newest in my collection of Harry Potter posts! And possibly my all-time favorite. No-fail and the best chocolate cake recipe

Number Of Ingredients 15

1-3/4 cup all-purpose flour
3/4 cup cocoa powder
2 teaspoons baking soda
3/4 teaspoon baking powder
1 teaspoon salt
Scant 2 cups granulated sugar
3 large eggs
1 cup buttermilk
1/2 cup oil
1 teaspoon pure vanilla extract
1 cup warm coffee
2 cups butter (soft)
6 cups powdered sugar
6 tablespoons heavy cream
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Prep 3-8″ round pans pans with flour or parchment paper and set aside.
  • Combine the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. Set aside.
  • Add the sugar with the eggs in a mixing bowl. Beat on medium speed until combined and fluffy. Stir in the buttermilk, oil, and vanilla until combined.
  • Alternate mixing in the dry ingredients with the coffee. Scrape the sides of the bowl and stir 1 minute more.
  • Divide evenly between the three pans, approximately 16 oz per pan.
  • Bake 18 to 20 minutes or until a toothpick comes out clean when poked in the middle.
  • Let the cakes cool 20 minutes. Turn out onto a cooling rack and continue cooling.
  • Add the butter into the bowl of an electric mixer. Using the paddle attachment, beat for 2 to 3 minutes or until the butter is smooth. Scrape the sides of the bowl with a spatula.
  • Add the powdered sugar, one cup at a time, and continue to mix until incorporated.
  • Stir in the cream and vanilla.
  • Scrape the sides of the bowl. Increase the speed to medium and beat for 5 minutes or until light and fluffy.
  • Scoop out 1/2 cup of the frosting and place in a small bowl.
  • Use a pink food coloring for the larger amount of frosting and green for the 1/2 cup.
  • Place one cooled cake onto a cake plate.
  • Top with 1 cup frosting or chocolate ganache. Spread evenly.
  • Add the second cake. Now, you can stop here or add a third layer.
  • Frost the outside of the cake with a spatula, making sure to leave it roughly finished.
  • Using the spatula, run it across the top creating the swirl line.
  • Place the green frosting into a piping bag. Snip a small hole in the end.
  • Carefully write your Happy Birthday greeting with the frosting across the top of the cake.

HARRY'S 11TH BIRTHDAY CAKE FROM HAGRID

2 cups white sugar
1 3/4 cups plain flour
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1/2 cup thickened cream (alternatively, sour cream)
250g white chocolate melts
red food coloring
green icing gel (or tinted buttercream frosting or royal icing)

Steps:

  • Preheat oven to 150C
  • Grease and line one tall round pan.
  • In a large bowl, stir together the dry ingredients-sugar, flour, cocoa, baking powder, baking soda and salt.
  • Add in the eggs, milk, oil and vanilla, and mix well, before adding in the boiling water.
  • Batter will be thin.
  • Pour into the cake pan
  • Bake 45-55 minutes in the oven. A wooden skewer test will come out sticky but not liquidy.
  • Set aside until completely cool.
  • Remove from the pan, slice off the lumpy top so it's flat, then turn over.
  • In a glass measuring cup, add in the cream.
  • Drop in the food gel and mix until you have close to the right colour (a bit darker is best as you'll be adding extra white from the chocolate).
  • Stir in the white chocolate melts and zap on medium (50%) in the microwave for 2 minutes, stirring every 30 seconds.
  • Remove and stir to remove any lumps.
  • Place in the fridge to cool for 1-2 hours.
  • Spoon onto the top of the cake, then use a palette knife or spatula to smooth and swirl the icing evenly across the top.
  • Finish off by writing out 'HAPPEE BIRTHDAE HARRY' in green icing
  • Draw in lines and 'cracks' with a knife.

Harry Potter Cake from Hagrid is a fun homage to the cake given to Harry Potter in the first book of the Harry Potter series by Hagrid.

1 cup of sugar
3/4 cup + 2 tbsp all purpose flour
3/4 tsp baking powder
1 large egg
1/4 cup + 2 tbsp cocoa powder
1 tbsp pure vanilla extract
1/2 tsp sea salt
1/2 cup sour cream (or greek yogurt)
1/2 cup hot water
3/4 tsp baking soda
1/4 cup sunflower oil
8 tbsp butter (1/2 cup)
16 oz cream cheese (2 packages)
1/2 cup caramelized white chocolate (instructions will follow)
3 cups powdered sugar (if you want it a bit stiffer- add 1/2 - 1 cup more)
White chocolate - 4 oz

Steps:

  • Set oven to 350°F
  • Take all of your dry ingredients and mix them together in a bowl. I like to use a whisk.
  • Add the rest of your ingredients.
  • Whisk together until there are no lumps.
  • Spray a 8 or 9 inch pan so that it is non-stick and pour your batter into the pan.
  • Try to smooth is out so that it will bake evenly.
  • Bake for 25-30 minutes.
  • Check for doneness by inserting a toothpick into the middle. If the toothpick comes out clean, then you know it is ready.
  • Once your cake it baked and cooling on a raised sheet, lower the temperature of your oven to 300°F.
  • Lay white chocolate on the pan for 10 minutes. Remove from the oven and swirl around with a spatula.
  • Put back in the oven for another 10 minutes. Repeat this process until the chocolate begins to have that caramelized color.
  • If you find it is starting to look lumpy, then transfer to your mixmaster bowl, and mix it. It will become smooth but the bowl will be very hot, so, be careful not to touch the bowl right after.
  • Place in a bowl or jar until ready to use.
  • Beat the butter in your mix master
  • Add the cream cheese
  • Add in your powdered sugar
  • Place the 1/2 cup of the caramelized white chocolate into the bowl
  • If you desire (to make it more realistic) now is the time to remove some of the icing to mix green food coloring with in a bowl. In the bowl of your mixmaster add the pink.

  • Prepare the pudding well in advance as it will need several hours to reach room temperature. You can make it the day before, place some cling film directly over the surface and let it on the counter overnight.
  • When making the pudding (either with bought powder or your own cornstarch mixture, measure the 500 ml/ 2 cups milk needed directly in a pot.   • If using cornstarch instead of pudding powder, mix together 37 g/ 1.3 oz cornstarch with a small pinch of salt. Proceed exactly as described above, adding 1 teaspoon pure vanilla extract or a few drops vanilla aroma to the hot pudding.
