SAUSAGE, CHEESE AND HASH BROWN STRATA



Sausage, Cheese and Hash Brown Strata image

Easy enough for a casual weekend breakfast and elegant enough for an Easter brunch, this Sausage, Cheese and Hash Brown Strata will be your new go-to dish - and it's gluten free!

1 tablespoon basil (or regular) extra virgin olive oil
1 pound bulk pork sausage with sage (see Note)
1 large red or green bell pepper, cored, seeded and chopped
1/2 cup finely chopped shallots
1 to 2 garlic cloves, pressed or minced
Kosher salt, to taste
3 tablespoons chopped fresh flat leaf (Italian) parsley
10 large eggs
1 cup whole milk
1 cup sour cream
2 tablespoons Dijon mustard
2 cups Italian Blend shredded cheese (provolone, Parmesan, Asiago and Fontina)
Fresh ground black pepper, to taste
1 (16-ounce) bag frozen seasoned hashed brown potatoes (l like the Alexia Organic brand) - no need to thaw

Steps:

  • Preheat oven to 375 degrees. Butter or oil a 3-quart baking dish (9 by 13 by 2-inch rectangular or 9 1/2 by 3-inch round).
  • In a large skillet or sauté pan, heat the oil over medium heat. Add the sausage and cook until no longer pink, stirring and breaking up into small pieces.
  • Stir in the bell pepper, shallots and garlic and season with kosher salt. Continue cooking, stirring occasionally, until the peppers are soft, around another 5 minutes. Stir in parsley and remove from heat. Set aside.
  • In a large mixing bowl, whisk eggs until yolks and whites are combined. Whisk in milk, sour cream and mustard (sour cream will be a bit lumpy but that's okay). Stir in shredded cheese; season with ground pepper.
  • Place frozen potatoes in a large mixing bowl. Stir in sausage mixture. Spread evenly in prepared baking dish. Spoon egg-cheese mixture over the top. Let sit for 5 to 10 minutes to allow the egg mixture to soak in.
  • Bake for around 45 minutes (5 to 10 minutes longer if in round pan) or until the top is golden brown and set (casserole doesn't jiggle when moved). Let sit for 5 to 10 minutes before serving.

This strata is incredibly easy and inexpensive to make, and is great for serving a large crowd for breakfast.

half 32-ounce bag frozen hash browns
2 cloves garlic, minced
salt and pepper, to taste
4 eggs
1/8 cup milk
1/2 cup ground beef
1 cup shredded mozzarella cheese
1 tomato, diced

Steps:

  • Preheat the oven to 375 degrees.
  • Brown the hash browns in a skillet and add the garlic, pepper and salt to taste. Remove from skillet and set aside. In the same skillet, brown the ground beef. Drain the beef and set aside as well. Put the eggs in a bowl and whisk it together with the milk. Put the hash browns on the bottom of a glass pie dish. Add the egg mixture and press down to make sure that all of the hash browns are covered. Add the cooked ground beef on top of the hash brown and egg mixture. Finally, sprinkle the cheese on top. Bake for 20 minutes, or until the top is golden brown and bubbling. Cut into slices and serve.

2 pounds starchy potatoes, (such as Idaho, grated and squeezed dry)
Salt and ground black pepper
1/4 cup olive oil, (plus a little extra, divided)
3 cloves garlic, minced
Pinch hot red pepper flakes
1 pound frozen kale,
1 cup regular canned coconut milk
1/4 cup nutritional yeast
2 each: medium red bell pepper and onion, (each cut into medium dice)
5 ounces grated sharp cheddar, (vegan or dairy)

Steps:

  • Adjust oven rack to lowest position and heat oven to 450 degrees. Coat a 13- by 9-inch baking pan with 2 tablespoons of oil and set in preheating oven. Meanwhile, season grated potatoes with 1 teaspoon of salt and several grinds of pepper; toss to coat. Remove pan from oven and spread potatoes over pan bottom, pressing to compact. Return to oven and bake until cooked through and golden, about 20 minutes.
  • Meanwhile, heat a light drizzling of oil, along with garlic and pepper flakes, in a small Dutch oven. When garlic starts to sizzle, add kale; stir to heat through. Add coconut milk; continue to stir to heat through again, lightly seasoning with salt and pepper; stir in nutritional yeast. Remove from heat.
  • While kale cooks, heat remaining 2 tablespoons of oil in a large skillet over medium-high heat. Add peppers and onions; sauté, seasoning lightly with salt and pepper, until softened, about 5 minutes.
  • To assemble, remove potatoes from oven. Spread kale evenly over the potatoes and then onions and peppers over the kale. Sprinkle with cheese. Continue to bake until cheese melts and starts to turn golden brown, about 20 minutes. Remove from oven, cool for a few minutes, cut, and serve.

2 cups frozen hash browns with onions and peppers
1 cup broccoli
3 ounces turkey ham
1/3 cup fat-free evaporated milk
2 tablespoons all-purpose flour
32 ounces egg substitute
1/2 cup reduced-fat cheddar cheese
1 tablespoon fresh basil, fresh
1/4 teaspoon ground black pepper
1/8 teaspoon salt

Steps:

  • Preheat oven to 350°F Coat a 2-quart square baking dish with nonstick cooking spray. Spread hash brown potatoes and broccoli evenly in bottom of prepared baking dish; top with turkey bacon or ham. Set aside.
  • In a medium bowl, gradually stir milk into flour. Stir in egg product, half of the cheese, the basil, black pepper, and salt. Pour egg mixture over vegetables.
  • Bake for 40 to 45 minutes or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before serving.

4 slices buttered bread (Sourdough works well)
2 cups Simply Potatoes® Shredded Hash Browns
4 eggs
1/4 cup milk
8 ounces cheddar cheese or 8 ounces monterey jack pepper cheese, gives a nice kick

Steps:

  • Butter an 11 x 7 inch baking dish.
  • Evenly lay buttered bread in bottom of dish.
  • Put 1/2 cup Simply Potatoes "Shredded Hash Browns" on each bread slice.
  • Whip eggs and milk together and pour over bread and potatoes.
  • Place shredded cheese on top of all.
  • Bake at 350 degrees for 30 minutes uncovered or until cheese is melted and lightly toasted.

8 English muffins, cut into eighths and toasted
3 cups cubed fully cooked ham
1 can (20 ounces) pineapple tidbits, drained
4 green onions, chopped
1 jar (4 ounces) diced pimientos, drained
1-1/2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 jar (15 ounces) Alfredo sauce
1-1/2 cups evaporated milk
4 large eggs, lightly beaten
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Combine first 5 ingredients. Transfer to a 13x9-in. baking dish; top with cheeses., Whisk together remaining ingredients. Pour sauce over layers, pushing down, if necessary, with the back of a spoon to ensure muffins absorb liquid. Refrigerate, covered, 1 hour or overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, until strata is golden and bubbly, 30-40 minutes. Let stand 10 minutes before serving.

8 medium green onions with tops
12 slices bread
2 cups cut-up cooked smoked ham (about 10 oz)
2 cups shredded Cheddar cheese (8 oz)
6 large eggs
2 cups milk
1 teaspoon ground mustard
1/4 teaspoon red pepper sauce
Paprika, if desired

Steps:

  • Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
  • Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
  • In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
  • Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.
