1 (16 ounce) package fat-free cottage cheese
2 tablespoons grated Parmesan cheese
cooking spray
1 (8 ounce) package precooked lasagna noodles
1 cup (4 ounces) preshredded reduced-fat mild Cheddar cheese
Chopped fresh parsley (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook meat in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain well, and return meat to pan. Add sauce; bring to a boil. Reduce heat, and simmer 5 minutes.
  • Combine cottage and Parmesan cheeses in a bowl; set aside. Spread 1/2 cup meat mixture in bottom of a 13 x 9-inch baking dish coated with cooking spray. Arrange 4 noodles over meat mixture; top with half of cottage cheese mixture, 1 cup meat mixture, and 1/3 cup cheddar cheese. Repeat layers, ending with noodles. Spread remaining meat mixture over noodles.
  • Cover and bake at 350 degrees for 30 minutes. Uncover; sprinkle with 1/3 cup cheddar cheese, and bake 5 more minutes or until cheese melts. Let stand 10 minutes before serving. Garnish with parsley, if desired.

1/2 cup cholesterol-free egg product
2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 cups frozen BOCA Veggie Ground Crumbles
2 cups rotini pasta, uncooked

Steps:

  • Heat oven to 350°F.
  • Mix cottage cheese, egg product and 1 cup mozzarella. Combine sauce and crumbles; spread half onto bottom of 13x9-inch pan sprayed with cooking spray.
  • Cover with layers of pasta and half the cottage cheese mixture; top with remaining sauce and cottage cheese mixture. Sprinkle with remaining mozzarella; cover.
  • Bake 1 hour or until heated through (160ºF), uncovering after 30 min. Let stand 10 min. before cutting to serve.

I have never made this.It is a requested recipe for a lasagna made without ricotta cheese. It came from an old cookbook of mine from the 70s.

6 lasagna noodles
1 lb ground beef
1 (1 1/4 ounce) package Manwich sloppy joe mix
1 (1 lb) can diced tomato
1 (8 ounce) package cream cheese

Steps:

  • Brown beef and stir in sloppy joe seasoning mix and tomatoes.
  • Cook and drain lasagne noodles per package directions.
  • Beat cream cheese until smooth.
  • Layer noodles in a 1 1/2 quart baking dish with meat and cream cheese.
  • Bake for 20 minutes at 350°F.
  • (I think you could double this recipe quite easily for a bigger family).

12 ounces cottage cheese, 12 oz
2 cups shredded mozzarella cheese, 2 c
2 eggs, 2
1/3 cup chopped parsley, 1/3 c
1 teaspoon onion powder, 1 tsp
1/2 teaspoon dried basil leaves, 1/2 tsp
1/8 teaspoon pepper, 1/8 tsp
32 ounces spaghetti sauce, 32 oz
3/4 cup cooked ground beef, 3/4 c
9 lasagna noodles, uncooked 9
3/4 cup water, 3/4 c (for firmer pasta, decrease the water to 1/2 C per recipe)
parmesan cheese, if desired

Steps:

  • Assembly Directions:.
  • In a large bowl, mix cottage cheese, mozzarella cheese , eggs, parsley, onion powder, basil and pepper until well blended; set aside.
  • In a medium bowl, mix together spaghetti sauce and cooked ground beef. In a 9x13-inch glass baking dish or (2- 8x8-inch pans) spread 3/4 cup meat sauce on the bottom. Layer 3 uncooked noodles on top of the meat sauce. Next spread 1/2 of the cheese mixture and 1-1/2 cups meat sauce. Layer 3 more uncooked noodles on top of the meat sauce. Spread with remaining cheese mixture. Top with remaining 3 noodles and remaining meat sauce. Pour water around the outside edges.
  • Freezing Directions:.
  • Place dish in a 2-gallon freezer bag. Or, if you want to wrap it in foil, cover the top of the lasagna with wax paper or plastic wrap and then the foil, because the acid in the tomato sauce will leave small holes in the foil. Label, seal and freeze.
  • Serving Directions: Remove pan from freezer and thaw at least overnight in the refrigerator. Bake covered at 375°F for 45 minutes. Uncover and bake an additional 15 minutes. Let stand 10 minutes. Serve with grated Parmesan cheese, if desired. To bake from the frozen stage, add 30 minutes to the total baking time.

This recipe came off the back of a package of Mueller's Egg Noodles sometime in the 60s or 70s. It was a real time-saver, as well as a tasty dish to throw together for a potluck or church supper. Some of the ingredient sizes have been adjusted to present-day packaging, but the ingredients are the same as the original recipe.

12 ounces broad egg noodles
1 1/2 lbs ground beef
16 ounces ricotta cheese or 16 ounces cottage cheese
1 cup mozzarella cheese, shredded
1/3 cup parmesan cheese, grated
1 (26 ounce) jar spaghetti sauce

Steps:

  • Preheat oven to 375°.
  • Cook noodles according to package directions and drain.
  • While noodles are cooking, brown ground beef and drain. Stir in spaghetti sauce and set aside.
  • Mix cooked noodles with ricotta/cottage, mozzarella and Parmesan cheeses.
  • In a 2 quart casserole, spread 1 cup of sauce on bottom of pan to cover.
  • Spread half the noodle mixture in the dish, covered with half the sauce.
  • Layer the remaining half of the noodle mixture, covered with the remaining half of the sauce.
  • Bake 25 to 30 minutes until bubbling.

5 -6 cups spaghetti sauce
2 cups cream-style cottage cheese or 2 cups ricotta cheese
12 ounces mozzarella cheese (sliced or grated)
1/2 cup parmesan cheese, grated

Steps:

  • In two greased 10x6x2-inch baking dishes, make layers in the following order: half each noodles, cottage cheese, Mozzarella slices, spaghetti sauce, and sprinkled Parmesan cheese.
  • Repeat.
  • Make certain the dry noodles are completely covered by sauce.
  • Wrap pans completely with foil; label and freeze.
  • (To make this meal incredibly rich, add one 8-ounce package cream cheese.
  • Pinch off nickel-sized portions of cream cheese and plop evenly over lasagna just before adding the second layer of uncooked pasta.)
  • To Serve: To thaw, take meal from freezer at least 24 hours before serving.
  • Place in refrigerator.
  • Bake tightly covered at 350 degrees for about 45 minutes, or until edges are bubbly and center is hot.
  • Take cover off during final 10 minutes of cooking time.
  • Let stand 10 minutes before serving.

3-1/2 cups spaghetti sauce
9 uncooked lasagna noodles
1/4 cup water
Grated Parmesan cheese

Steps:

  • In a large bowl, combine the first seven ingredients; set aside. In another bowl, combine the spaghetti sauce and beef; mix well. , Spoon a fourth of the meat sauce into a greased 13x9-in. baking dish. Top with three noodles and half of the cheese mixture; repeat layers once. Top with a fourth of the meat sauce, remaining noodles and remaining meat sauce. Pour water around edges.
