CHILLED BEET SOUP WITH YOGURT AND PEPITAS



Chilled Beet Soup with Yogurt and Pepitas image

1 pound roasted or boiled red beets, coarsely chopped
1 cup light coconut milk
2 teaspoons fresh lime juice
1 teaspoon finely grated peeled ginger
1 teaspoon kosher salt
Freshly ground black pepper
4 teaspoons nonfat plain Greek yogurt
4 teaspoons salted, roasted pepitas (hulled pumpkin seeds) or sunflower seeds

Steps:

  • Put the beets, coconut milk, lime juice, ginger, salt and pepper to taste in a blender and puree until very smooth. Transfer to a container and chill until ready to serve, at least 1 hour.
  • To serve, pour about 3/4 cup soup into each of 4 small glasses; top each with 1 teaspoon yogurt and 1 teaspoon pepitas and serve immediately.

2 cans (14.5 ounces each) sliced beets, drained (reserve liquid)
1 McIntosh apple, peeled, cored and chopped
1/4 cup chopped shallots
1 teaspoon brown sugar
Grated zest of 1 orange
1/4 teaspoon salt
1/2 cup orange juice
2 tablespoon balsamic vinegar
2 teaspoon fresh lemon juice
2 tablespoon chopped fresh chives
2 ounce goat cheese

Steps:

  • Pulse beets, apple, shallots, sugar, zest and salt in a food processor until pureed. Add reserved beet liquid; pulse until smooth. Transfer beet mixture to a bowl; stir in orange juice, vinegar and lemon juice. Cover and chill until cold, 1 hour. Divide among 4 bowls; garnish with chives and cheese before serving.

1 onion, finely chopped
1 1/2 tablespoons balsamic vinegar
2 15-ounce cans sliced beets with liquid
1 tablespoon sugar
2 cups buttermilk
Chopped fresh chives

Steps:

  • Heat oil in large nonstick skillet over low heat. Add carrots and onion. Cover; cook until vegetables are just tender, stirring occasionally, about 20 Minutes. Add vinegar, cover and cook until vegetables are very tender, about 10 minutes longer.
  • Working in batches, add beets with their liquid, sugar and carrot mixture to blender. Purée. Transfer to large bowl. Mix in buttermilk. Season with salt and pepper. Chill until cold, about 3 hours. (Can be made 2 days ahead. Cover; keep chilled.)
  • Ladle into bowls or mugs. Top with chives.

Beet Soup With Tarragon, Chives and Yogurt image

Freshly cooked beets, though they take a while to prepare (see Tip), are so delicious that they're worth the effort. Cook them the day before you need them and keep them in the fridge for up to a week, to use in salads or for a soup. For this borscht-inspired soup, a splash of vinegar tempers the beets' natural sweetness, which is perfectly complemented by a splash of tart herby yogurt. The good news is this soup may be served warm or chilled; each way is refreshing.

2 tablespoons olive oil
1 medium onion, diced
2 garlic cloves, minced
1 1/2 pounds cooked, peeled red beets, chopped (See Tip)
Salt and pepper
Pinch of ground cayenne
1/4 cup red-wine or apple cider vinegar, plus more to taste
8 cups water or broth
1 cup whole-milk yogurt
3 tablespoons chopped tarragon leaves
2 tablespoons thinly sliced chives

Steps:

  • Put olive oil in a heavy-bottomed soup pot or deep, wide skillet over medium heat. Add onion and garlic, cook slowly, stirring, until softened, about 10 minutes.
  • Add beets and season generously with salt and pepper. Add a pinch of cayenne and pour in vinegar. Cook for 5 minutes, stirring occasionally, then add water and raise heat to a brisk simmer. Taste broth and adjust. Cook for another 10 minutes, until beets are completely soft.
  • Purée in a blender, in batches if necessary, and strain through a fine-mesh sieve. (Consistency should be like heavy cream, no thicker - thin with water or broth as necessary). Return puréed soup to pot and reheat. In a small bowl, combine yogurt with tarragon and chives. Add a good pinch of salt and beat with a fork to loosen yogurt.
  • Taste soup, and adjust for salt and vinegar. Ladle into individual bowls. Swirl a large (2 to 3 tablespoons) spoonful of herbed yogurt across the surface of the soup.

3 lbs winter squash, peeled seeded and cubed
1 large cooking apple, peeled and cubed
1 strip orange zest
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 1/2 cups milk
2 tablespoons cornstarch
salt and pepper
6 thin slices oranges
snipped chives (to garnish)

Steps:

  • Combine all ingredients except milk, cornstarch, salt and pepper, orange slices and chives in slow cooker; cover and cook on high for 3-4 hours, adding 1 cup milk during last 30 minutes.
  • Stir in remaining milk and cornstarch, stirring for 2-3 minutes; discard orange zest.
  • Process soup in food processor or blender until smooth; season to taste with salt and pepper.
  • Serve garnished with orange slices and chives.

3/4 cup onion, chopped
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 1/2 cups water
3 lbs winter squash, peeled and cubed
1 large apple, peeled, cored and cubed
1 strip orange rind, 3 by 1/2 inches
1/3 cup orange juice
1 1/2 cups half-and-half
salt and pepper
6 orange slices
chives, chopped

Steps:

  • Spray a large saucepan with cooking spray; heat over medium heat until hot. Sauté onion until tender, about 5 minutes.
  • Stir in spices; cook 1-2 minutes longer.
  • Add water, squash, apple and orange rind to the saucepan; heat to boiling.
  • Reduce heat and simmer, covered until squash is tender, 10-15 minutes.
  • Process soup in a food processor or with a stick blender until smooth; add orange juice and half-and-half.
  • Season to taste with salt and pepper. Serve warm or chilled.
  • Pour into bowls and top each with an orange slice and sprinkle with chives.
