My favorite chili recipe! Of course it's mine and that makes it better than anyone else's...well, at least in my mind :). Easy to make and fills the house with the comforting aroma of a hearty meal on a snowy day.

CHICKEN HATCH CHILE VERDE SKILLET MACARONI AND CHEESE

Chicken Hatch Chile Verde Skillet Macaroni and Cheese image

I wish I could take credit for this one, but it's a winning recipe from the HEB Central Market recipe contest for hatch green chilies. Now it may be a little difficult to describe this dish and by looking at it, it may be a little difficult to imagine how it all comes together, but trust me: This is incredibly delicious.

Provided by james

Categories     Soups, Stews and Chili Recipes     Chili Recipes     Pork Chili Recipes

Time 4h50m

Yield 8

Number Of Ingredients 11

1 pound Hatch chile peppers, halved and seeded
1 (3 pound) boneless pork roast, cubed
2 cups all-purpose flour
3 tablespoons salt, divided
3 tablespoons coarsely ground black pepper, divided
¼ cup vegetable oil
2 cups chicken stock
1 (15 ounce) can diced tomatoes with green chile peppers
1 large sweet onion, chopped
2 tablespoons ground cumin
3 cloves garlic

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins; chop peppers into smaller pieces.
  • Place cubed pork in a resealable plastic bag; coat with flour, 2 tablespoons salt, and 2 tablespoons pepper. Heat oil in a skillet over medium heat. Cook pork in the hot oil until browned, 5 to 7 minutes. Transfer to a slow cooker set to High.
  • Add the Hatch chiles, remaining salt and pepper, chicken stock, diced tomatoes with peppers, onion, cumin, and garlic to the slow cooker. Mix and cover. Cook on High until pork is tender and flavors blend, about 4 hours.

  • Preheat oven to 400 degrees F. Butter a 9x13-inch casserole dish. Heat a large pot of water over high heat for the pasta; cover.
  • Add the pasta to the boiling water and cook the pasta according to the box directions for al dente pasta (if your box doesn't specify al dente, cook it for 1 to 2 minutes shorter than the time called for - it shouldn't be cooked the whole way through). When the pasta is finished cooking, drain it in a colander.
  • While the pasta is cooking, make the sauce. In a large saucepan, melt the 4 tablespoons of the butter over medium heat. Once the butter has melted, whisk in the flour and cook for about 1 minute, until the flour starts to brown a bit and smells nutty, whisking constantly. In a slow, steady stream, whisk in the milk. Allow the sauce to come to a simmer.
  • Once the sauce comes to a simmer, stir in 6 ounces each of the cheddar and gouda cheeses, adding a handful at a time and stirring with a wooden spoon until completely melted before adding the next handful. Season with salt and pepper and turn off the heat.

  • Bring a pot of salted water to a boil. Pour in the macaroni and cook until very al dente, about 7 minutes, or as directed per the instructions on the package of pasta.
  • In a bowl, toss together the melted butter, bread crumbs and salt. Place the hatch chiles on the grates of a gas range and turn the heat to high. Rotate the chiles until they're evenly charred. Immediately transfer them to a cutting board and using the blade of a knife, scrap the charred skin off of the peppers. Dice the softened peppers and set them aside. Beware that these are spicy so cut them into a small dice and don't rub your eyes!
  • To a medium saucepan set over medium-low heat, add the butter and flour. Cook the roux, until the butter melts and a paste forms. Whisk in the milk and bring the sauce to a very slight boil, whisking the entire time, and cook for about 1 minute. Turn the heat off and allow the milk mixture to cool slightly, about a minute or two. Stir in the cheeses and pepper. Add the salt and adjust according to your liking. This will largely depend on how salty the cheese you just added is.

  • Remove from the heat and slowly whisk in the milk. Add the dry mustard, white and Chamayo pepper, and salt. Return to heat and stir until mixture begins to boil, then reduce the heat to low and simmer for 30 minutes, stirring occasionally. Stir in the chopped Hatch chiles and tomatoes.
  • Stir in 5 cups of the cheese until melted. Pour the sauce over the cooked macaroni in a large bowl, stirring until all of the macaroni is coated. Drizzle heavy cream around the edges of the casserole. Sprinkle on it the remaining cheese, then the toasted bread crumbs.
