This is a fresh cookie that I go for when I don't want the old standby chip cookies. A little lighter than most, and almost cake-like in the middle. They go really well with a pina colada or any other fruity drink for that matter!

¼ cup orange juice
½ cup chopped dried mango
½ cup butter, softened
½ cup shortening
¾ cup packed light brown sugar
½ cup white sugar
2 eggs
¾ teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup coarsely chopped macadamia nuts
¾ cup flaked coconut
½ cup chopped dried cranberries

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Simmer orange juice and mango in a small pan over medium-low heat for 8 minutes. Set aside. Beat the butter, shortening, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time. Combine the flour, baking soda, and salt in a separate bowl. Mix the flour mixture into the butter mixture until just incorporated. Fold in the macadamia nuts, coconut, cranberries, and mango; mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto greased baking sheets.
  • Bake in the preheated oven until the edges are golden brown, about 10 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 cups white sugar
1 cup water
1 cup white wine vinegar
2 tablespoons honey
1 mango - peeled, pitted, and cut into 1/2-inch cubes
1 tablespoon olive oil
1 shallot, minced
½ teaspoon minced fresh ginger root
1 cup Arborio rice
1 ½ cups chicken broth
½ cup coconut milk
¼ cup white wine, or as needed
1 ½ cups finely shredded fresh spinach
¾ cup grated Parmesan cheese
2 slices watermelon, cut to 1/4-inch thickness

Steps:

  • Mix sugar, water, vinegar, and honey together in a bowl. Add mango cubes; stir to coat. Cover bowl with plastic wrap and refrigerate for 8 hours to overnight.
  • Drain liquid from mango, reserving 1/4 cup of the liquid.
  • Heat olive oil into a pot over medium heat; cook and stir shallot and ginger until slightly tender, about 5 minutes. Add rice; cook and stir until slightly toasted, 1 to 2 minutes. Pour chicken broth and coconut milk over rice; bring to a boil. Cover pot, reduce heat to medium-low, and simmer until rice is tender and liquid is absorbed, about 20 minutes.
  • Stir mango, 1/4 cup reserved vinegar mixture, and wine together in a skillet over medium heat; cook and stir until warmed, about 2 minutes. Add spinach and cook until wilted, about 1 minute. Stir rice mixture and Parmesan cheese into mango mixture; remove from heat and let sit until liquid absorbs and cheese melted, about 7 minutes.
  • Place 1 watermelon slice on a serving platter; top with risotto. Place the 2nd watermelon slice atop risotto to garnish.

4 cups low-sodium chicken broth
1 stalk lemongrass, smashed with the back of a knife
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter, room temperature
1 pound mixed mushrooms (shiitake, hon shemeji or maitake), torn or cut into similar sizes
2 cups thinly sliced Tokyo negi (approximately 1 bunch) or leeks or scallions
2 cloves garlic, chopped
1 tablespoon finely grated ginger
2 fresh green Thai chiles, chopped fine
1/2 teaspoon kosher salt
1 cup Arborio rice
1 cup dry white wine, such as pinot grigio
1/4 teaspoon toasted sesame oil
1 cup freshly grated Parmigiano Reggiano, plus more for garnish
1/4 cup fresh basil leaves, roughly chopped
1/4 cup pickled ginger

Steps:

  • Bring the chicken broth and lemongrass to a simmer in a medium saucepan over medium-high heat. Reduce the heat to low and keep warm.
  • In a straight-sided medium skillet, warm the olive oil and butter over medium-high heat. When the butter has melted and stopped bubbling, add the mushrooms and cook, stirring often with a wooden spoon, until the mushroom are beginning to brown, about 6 minutes. Reduce the heat to medium and add the Tokyo negi, garlic, ginger, Thai chiles and salt. Cook an additional 3 minutes, or until the negi has softened and the mixture is fragrant.
  • Add the rice to the pan; mix well to coat the grains in the flavorful oil. Deglaze the pan with the white wine, scraping up any brown bits that have formed in the pan. Simmer until the wine has almost completely evaporated, about 3 minutes. Add 1 cup of the simmering broth and cook, stirring, until almost completely absorbed, about 4 minutes. Add 3/4 cup broth and once again cook until evaporated, stirring constantly. Continue in this manner, adding 3/4 cup broth at a time, until the rice is tender, but still with some bite, and the mixture is creamy, about 20 minutes total.
  • Remove from the heat and stir in the sesame oil and Parmesan. Serve garnished with Parmesan, basil and pickled ginger.

1 mango
1 teaspoon rice wine vinegar
1 tablespoon fresh cilantro leaves, soaked or well-rinsed to remove all traces of sand
1 clove garlic, quartered
1 teaspoon chopped fresh ginger
1-ounce bottled water
1/4 cup canola oil
1 1/2 teaspoons stone-ground mustard
1 lime microwaved and juiced (allow to cool before squeezing)
Salt
Pepper
1 tablespoon olive oil
1 tablespoon chopped shallots
1 cup Arborio rice
1/2 cup white wine
3 cups chicken stock
1 pinch saffron threads
2 tablespoons unsalted butter
6 (6-ounce) mahi-mahi fillets
1/4 cup olive oil
Freshly ground black pepper
2 or 3 scallions, chopped, for garnish

Steps:

  • Peel the mango, cut into slices, and drop into the feed tube of a running blender to puree. Add the rice wine vinegar, cilantro, garlic, ginger, water, oil, mustard, and lime juice. Season with salt and pepper, to taste, and set aside.
  • Bring chicken stock to a simmer. In a separate large saucepan on an adjacent burner, heat the olive oil and add the shallots and the rice. Lightly saute: you actually are toasting the rice. Cook until the rice becomes translucent and the shallots become soft, stirring constantly. Add the white wine to deglaze the pan. Begin slowly adding the warm stock, 1 ladle-full at a time, to the rice pan, stirring as you go. This will bring out the starch in the rice and make the mixture creamy. As the mixture absorbs the broth, ladle more into the pot. When the first ladle of stock has been absorbed into the rice, add the pinch of saffron. When all of the stock has been ladled into the rice pot, slowly simmer until the rice is soft and creamy. Stir the butter into the risotto for more flavor and creaminess. Set aside, keeping warm until needed.
  • Heat a saute pan for the fish. Rub fish fillets with oil, salt and pepper. Place in pan, skin side facing up. Turn the fish over after 3 to 4 minutes. Cook for another 3 to 4 minutes or until done. Do not overcook the fish. It is done when the flesh springs back. Remove the fish to a utility platter. Place a mound of risotto on each plate. Top with mahi-mahi. Drizzle some mango sauce around the plate and top with chopped scallions.
