Steps:
- Preheat oven to 350. Grease 2 baking sheets or line with parchment paper.
- Combine nuts, fruit and seeds in large bowl.
- Combine flour, baking powder, cinnamon and ginger in small bowl. Add to nut mixture and mix well.
- In mixer, beat butter, peanut butter and brown sugar until creamy--about 5 minutes.
- Add eggs and milk and beat until well combined.
- Stir milk mixture into nut mixture to form a dough.
- Drop by 1/4 cupfulls onto baking sheet. Bake for 13-15 minutes, until bottoms are brown and tops are just set.

- Preheat oven to 350 degrees F. Combine sugar, applesauce, peanut butter and egg in large bowl. Mix until smooth. Stir in remaining ingredients.

ERNEST'S "HEALTH" COOKIES
These are a versatile little cookie full of healthy ingredients. The original recipe calls for mashed bananas, but I have found that pumpkin puree tastes even better, but both are good. If you don't have all the dry ingredients, you can easily change the quantities of what you do have (more oatmeal if you don't have the oat bran or flax seed). You can also experiment with the add-ins: berries, chopped apples, nuts, chocolate or white chocolate chips etc. Overall, it's just a great little cookie that's super good for you, low in sugar, but big on taste! Enjoy!

Steps:
- Combine the pumpkin, sugar, oil, applesauce and eggs.
- Combine the dry ingredients.
- Mix all together and stir in your choice of add-ins.
- Using a cookie scoop, place on baking sheet. These can be placed pretty close together because they do not spread, but will stay like little cookie muffins!
- Bake 13 minutes in a 375 degree oven.
- Cool on wire rack.
- These freeze well, so you can either serve or freeze as desired.

SUGARLESS HEALTH COOKIES
I have not tried this recipe. I got this recipe from Ossg Recipes. This recipe is from Golden Anniversary Cookbook (50 years of recipes from our state's (OK) Home Ec Extension office).

- Boil raisins,dates and water for 3 minutes. Cool to lukewarm. Add oil, egg.
- and vanilla. Mix. Add dry ingredients (which have been mixed together).
- Mix thoroughly. Chill in refrigerator. Drop by teaspoon on greased cookie.

- Artificial sweetener may be added to make cookies sweeter, but they are good and more healthful with only the fruit as sweetener.

HEALTH NUT'S DEMISE COOKIES
With all these healthy ingredients (tahini, sunflower butter, oatmeal) it is easy to feel good about baking these, and with their addictive yumminess it is even easier to eat the whole batch at once! Health nuts beware :). I have made these using peanut butter or almond butter and both are fine, but this version really topped us off!

- Preheat oven to 375^.
- In a medium bowl beat Smart Balance, tahini, and sunflower butter and sugar.
- Add the egg and vanilla and beat again.
- Add flours, oatmeal, baking soda, and salt and stir to combine.
- Add the chocolate chips and stir again.
- Drop by even tablespoons onto an ungreased cookie sheet.
- Bake 9 minutes or until golden and puffy. Betcha can't eat just one!
