These are just what they say: big, soft, gingerbread cookies that stay soft. This healthier version of the original recipe uses butter instead of margarine, less sugar, and some white whole wheat flour.

1 ¼ cups all-purpose flour
1 cup white whole wheat flour
2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup unsalted butter
¾ cup white sugar
1 egg
1 tablespoon water
¼ cup molasses
3 tablespoons natural (raw) sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together all-purpose flour and whole-wheat flour, ginger, baking soda, cinnamon, cloves, and salt.
  • Beat butter and 3/4 cup sugar with an electric mixer in a large bowl until smooth. Beat in egg, then stir in water and molasses. Gradually stir in flour mixture until just incorporated. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets; flatten slightly.
  • Bake in preheated oven until cookies are golden brown, 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

These ginger biscuits are very easily made with wholesome ingredients and are perfect for a healthy snack.

Steps:

  • Preheat the oven to 190°C (fan 180°, gas mark 5). Prepare two baking trays with greaseproof paper. Sift the flour into a large bowl and add the oatbran, bicarbonate of soda, ginger and cinnamon.
  • Melt the butter, golden syrup and honey in a small pan over a low heat. Pour over the dry ingredients.
  • Mix well and bring together with hands to make a firm dough.
  • Prepare a lightly floured surface and roll out half of the dough to roughly 5mm thick. Use any shaped cutters (preferably around 5-8cm in diameter) to stamp out the biscuits. Transfer to a baking tray and repeat with the other half.
  • Bake for around 10 minutes, or until slightly browned. Don't worry if the biscuits aren't hardened yet as they do when they cool down. Transfer to a wire rack and leave to cool for about 10 mins.

1 cup chopped crystallized ginger
2 tablespoons white sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Beat butter, 1/2 cup white sugar, and brown sugar in a large bowl with an electric mixer until creamy, 1 to 2 minutes. Beat in egg, ground ginger, and salt. Gradually add flour until cookie dough comes together, 1 to 2 minutes. Fold in chopped crystallized ginger.
  • Place 2 tablespoons white sugar in a shallow dish. Shape dough into balls, and roll one side in sugar. Press onto prepared baking sheets.
  • Bake in the preheated oven until golden brown, 10 to 15 minutes.
