Steps:
- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment or a silicone mat.
- In a large bowl combine Metamucil, brown rice flour, almond meal, baking powder and salt. Stir to combine.
- Add in coconut sugar following by coconut oil, non-dairy milk and vanilla.
- Add in chocolate chips.
- Roll dough into 12 balls and flatten slightly on baking sheet.
- Bake for 12-14 minutes or until browned around the edges.
- Let cool for at least 20 mins on baking sheet before removing.
- Store in an airtight container for up to 3 days.

- Healthy Chocolate Chip Cookies Recipe: Preheat oven to 380 degrees. Combine dry ingredients and mix very well. Add wet, and form into a big ball. Now make little balls from the big one. For soft cookies, refrigerate until cold (otherwise, just bake right away). Bake 9 minutes. Remove from oven when they're still a little undercooked, then it's important to let cool 10 minutes before removing from the tray, as they'll continue to cook while cooling. They should have spread out, but every now and then they might not (climate plays a huge role in baking), so just smush down with a spoon if needed. You can also choose to make extra cookie dough balls and freeze them to bake at a later date. For softer cookies, store in a lidded plastic container. FABULOUS FIBER CHOCOLATE CHIP COOKIES
I invented these cookies because I wanted a healthier version of the good old chocolate chip cookies...They are brown (due to the flaxseed meal), crisp on the outside but softer on the inside...and very flavorful. They turned out really nice and everyone liked them. Enjoy!

Steps:
- Preheat oven to 350°. Line a cookie sheet with parchment paper.
- In a small bowl combine first 5 ingredients (dry ingredients).
- In a larger bowl beat sugars and butter until fluffy, then add egg white and dry ingredients, beat well.
- Stir in chocolate chips.
- Shape into little balls (I used my hands, but you could also use tablespoons I guess) and place on baking sheets. Press down with the palm of your hand (they won't spread, so press them as flat as you like your cookies).
- Bake for 15-20 minutes (I baked them for 18 and liked them that way).

- In a large bowl, whisk together the coconut oil, applesauce, brown sugar, granulated sugar, and vanilla extract. Then, whisk in the egg, stopping as soon as it is blended.
- Add the dry ingredients to the wet ingredients. With a rubber spatula, stir to combine, stopping as soon as the dry ingredients disappear. The dough will seem very stiff and dry at first. Use the spatula to gently push and "smush" the dough and stir and fold as needed. It will come together.
- Fold in the chocolate chips. Chill the dough for at least 1 hour, or press plastic over the top and chill for up to 2 days.
