½ lb Pasta, (cooked al dente, drained & cooled (farfalle, cappellini, etc.))
1 ½ cup Chopped Strawberries
1 cup Cherry or Grape Tomatoes, (halved)
2 cups Mixed Salad Greens ((arugula, baby spinach, lettuce etc.))
1 Red Bell Pepper, (chopped)
½ Red Onion, (halved and thinly sliced)
½ cup Feta Cheese Cubes ((Greek Feta is more flavorful, tangy))
¼ cup Chopped Almonds
2 Tablespoons Olive Oil
2 Tablespoons Balsamic Vinegar
1 Tablespoon Honey
¼ teaspoon Black Pepper, (freshly ground)
¼ teaspoon Salt

Steps:

  • In a large bowl, mix together all the ingredients to make the pasta salad.
  • In a small bowl, combine all the ingredients for the balsamic vinaigrette. Whisk well.
  • Pour the vinaigrette over the salad and gently toss to combine.
  • Adjust seasonings to taste and serve.

Steps:

  • In a large pot of salted boiling water, cook farfalle according to package directions until al dente. Drain, then transfer to a large serving bowl.
  • Make balsamic glaze: In a small saucepan, bring balsamic vinegar to a boil. Reduce heat and simmer until thickened, about 10 minutes.
  • To bowl, add feta, strawberries and spinach. Season generously with salt and pepper and toss to combine.

  • Cook pasta according to package directions. 1 tablespoon sugar
1 tablespoon balsamic vinegar
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
3 tablespoons olive oil
4 boneless skinless chicken breast halves (6 ounces each)
ASSEMBLY:
1 package (10 ounces) hearts of romaine salad mix
1 cup cooked gemelli or spiral pasta
1 small red onion, halved and thinly sliced
1 cup sliced fresh strawberries
1/2 cup glazed pecans

Steps:

  • Place strawberries, sugar, vinegar, 1/4 teaspoon salt and 1/8 teaspoon pepper in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream. 1½ cups red grapes (sliced in half)
1 small red onion (sliced thin)
15 ounces mandarin oranges (drained)
8 ounces feta (crumbled)
12 ounces poppy seed dressing (* I used Bitten Lemon flavor)
½ cup pecans
salt and pepper to taste

Steps:

  • Bring a pot of water to a boil. Add the pasta and cook according to the package directions. Drain and rinse pasta with cold water; set aside.
  • In a large bowl, combine cooked pasta, strawberries, grapes, red onion, spinach, mandarin oranges, pecans, and feta with the lemon poppy seed dressing. Season with salt & pepper to taste.
  • Toss salad to combine, and cover. Place bowl in the refrigerator to allow the flavors to meld.
  • Enjoy salad chilled!

1 (22 ounce) package small shell pasta
8 ounces small baby shrimp, precooked
8 ounces imitation crabmeat, cut into small pieces
1 small red onion, chopped finely
4 stalks celery, chopped
6 ounces smoked gouda cheese, diced
1 cup walnuts, chopped
3 tablespoons dried tarragon
salt and pepper, to taste
12 strawberries, halved
2/3 cup mashed strawberry (about 8-10 medium size strawberries)
1 cup plain yogurt
1 -2 teaspoon sugar (optional)

Steps:

  • Cook seashell pasta according to package directions and let stand in sink to cool and allow excess water to drain. Place cooled, drained pasta in a large salad bowl.
  • Add the shrimp, crab, onion, celery, cheese, walnuts, tarragon and salt and pepper to the pasta. With a large spoon, gently mix the salad ingredients until well blended.
  • With a potato masher. mash about 8 medium-size strawberries until you have 2/3 cup of mashed strawberries. (You can also puree them in a food processor if you want a thinner dressing.) Add yogurt and mix well. Then add 1-2 teaspoons or more (if desired) of sugar to reach desired sweetness. Stir well.
  • Add the creamy strawberry dressing to the salad mixture, and blend thoroughly with a large spoon. Chill until ready to serve.
  • For added color, garnish the top of the salad with any remaining strawberry halves.
