TURKEY, HAM, AND SWISS CASSEROLE RECIPE



Turkey, Ham, and Swiss Casserole Recipe image

This turkey casserole is made with leftover cooked turkey, Swiss cheese, and diced ham for lots of flavor.

8 ounces pasta
3 tablespoons butter
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1 cup ham (cooked, diced)
3 tablespoons flour
2 1/2 cups milk
1/2 teaspoon dried marjoram (or thyme)
1 teaspoon salt
1/8 teaspoon ground black pepper
2 cups Swiss cheese (shredded)
2 cups turkey meat (cooked, diced)
Topping:
1 cup soft breadcrumbs
1 tablespoon butter​
Optional: 1 cup frozen peas
Optional: 1 cup carrots

Steps:

  • Gather the ingredients and preheat oven to 350 F.
  • Grease a 2-quart baking dish.
  • Cook pasta (you can use mini fusilli or farfalle, macaroni, or other shapes) in boiling salted water following package directions. Drain, rinse and set aside.
  • Heat butter in a large skillet and saute the onion and celery over medium-low heat until softened.
  • Add ham and stir in flour until well combined.
  • Gradually stir in the milk until thickened. Add marjoram, salt, and pepper. Stir in the cheese, turkey, and peas and carrots, if using.
  • Add the cooked pasta and blend thoroughly. Spoon the pasta mixture into the prepared baking dish.
  • Combine breadcrumbs with 1 tablespoon melted butter; sprinkle over the top of the casserole.
  • Bake for 25 to 30 minutes, until bubbly and the topping is browned.
  • Serve and enjoy!

1 (12 pound) bone-in ham, rump portion
½ cup whole cloves
1 cup packed brown sugar
4 cups water, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
  • Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

This warming bake, rich with sherry and mustard, will use up the Christmas leftovers

350g/12oz cooked turkey , cut into strips
140g thickly sliced cooked ham , cut into strips
175g frozen pea
50g butter , plus a little extra for greasing the dish
50g plain flour
600ml milk
3 tbsp medium sherry
2 tsp wholegrain mustard
100g cheddar , grated
50g chopped mixed nut , such as hazelnuts, almonds, and walnuts

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. Mix the turkey, ham and frozen peas in a buttered ovenproof dish.
  • To make the sauce, put the butter, flour and milk in a saucepan and bring to the boil, whisking all the time, until the sauce is thickened and smooth. Stir in the sherry and mustard, season to taste and simmer for 1 minute. Remove from the heat and stir in half the cheese.
  • To finish the dish, pour the sauce over the ingredients in the dish. Mix the remaining cheese with the nuts and sprinkle on top. At this point, you can keep the bake in the fridge up to 5 hours, or freeze it. When ready, bake for 25-35 minutes until the topping is golden and the sauce is bubbling.

1-1/2 cups milk
2 cups graham cracker crumbs
1/2 teaspoon salt
1/2 teaspoon ground allspice
3 pounds fully cooked smoked turkey ham, ground
1 pound ground turkey
SAUCE:
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 cup packed brown sugar
1/2 cup cider vinegar
1-1/2 teaspoons prepared mustard

Steps:

  • In a large bowl, combine the eggs, milk, cracker crumbs, salt and allspice. Crumble turkey ham and turkey over mixture; mix well. Pat into two ungreased 9x5-in. loaf pans., In a bowl, combine the sauce ingredients; place half in a freezer container. Cover and freeze one loaf and container of sauce for up to 2 months. Pour about 1/2 cup of remaining sauce over the second loaf. Bake at 350° for 45 minutes. Baste with remaining sauce. Bake 35-45 minutes longer or until thermometer reads 165°. 1/4 cup chopped green onion
3 tablespoons flour
1 cup half-and-half
1/3 cup chicken broth
1/3 cup shredded swiss cheese
1/2 teaspoon ground mustard
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups cooked broccoli
4 slices turkey breast
4 slices ham
2 tablespoons grated parmesan cheese
1 dash paprika

Steps:

  • Preheat oven to 350 deg.
  • In a small saucepan, melt butter over low heat. Add green onions; saute for about 1 minute.
  • Add flour, cook, stirring, for 1 minute longer.
  • Slowly stir in half-and-half and chicken broth.
  • Simmer, stirring for about 10 minutes, until smooth and thickened.
  • Add swiss cheese, mustard, salt and pepper. Stir until cheese is melted.
  • Arrange cooked broccoli in a buttered 8x10 inch shallow baking dish. Place sliced turkey and ham over broccoli. Sprinkle with parmesean cheese and paprika.
