Healthy Key Lime Pie Popsicles image

Healthy, refreshing, and super delicious Key Lime Pie Popsicles made with only 4 ingredients. The perfect snack for the season!

4 cups frozen vanilla yogurt (softened)
1 cup frozen limeade concentrate (thawed (or 1 cup of fresh key lime juice))
Zest of 4 key limes
8 Honey Maid Low Fat Honey Graham (finely crushed)

Steps:

  • In a blender, blend the softened yogurt, limeade, and lime zest together well until obtaining a creamy, homogeneous mixture. Fill popsicle molds halfway with blended mixture, place one tablespoon of the crumbs into each mold, and then finish by filling the molds with more of the blended mixture. Insert a popsicle stick into the center of each mold and freeze for at least 6-8 hours.
  • Unmold and serve with the remaining crumbs sprinkled all around the popsicles. Enjoy!

  • To crush graham crackers, add them in a small zip-top bag and close it tightly. Smash the graham crackers in a small rolling pin or bottom of a measuring cup until no large pieces remain. Set aside.
  • Using a microplane or other zester, remove the bright green zest from the lime. Add to your blender. Roll lime on the counter, pressing firming, to release the juices inside. Cut lime in half then juice it into a small bowl. Measure 3 tablespoons of juice into the blender.
  • Cut avocado in half then use a spoon to remove the pit. Scoop the avocado flesh into the blender. Make sure to scrape the inside skin to get every bit off.
  • Add maple syrup, milk, vanilla, and pinch of salt (in brings out the flavors) to the blender then blend until completely smooth. Taste then add more sweetener, if desired.
