Make this yummy cooked oatmeal ahead and refrigerate for quick wholesome and fun start to the day. In the morning, heat in the microwave and invite everyone to sprinkle on their own favorite topping.

1 1/2 cups large flake oats (Robin Hood or Old Mill)
1 cup apple, grated
1/4 cup brown sugar, packed
1 teaspoon cinnamon
2 (370 ml) cans Carnation Evaporated Milk (regular, 2% or fat-free)
yogurt
maple syrup
sliced almonds
mixed fruit

Steps:

  • Preheat oven 350°F Grease an 8-inch baking dish. Combine all ingredients in a large bowl. Pour into prepared baking dish.
  • Bake in preheated oven for 45 minutes or until milk is absorbed and oats are softened.
  • TIPS: Make breakfast fun. Let everyone add their own toppings. Refrigerate any leftovers and just reheat.

A delicious twist on plain old oatmeal. Flavorful and hearty to please everyone in the family! Whole, old-fashioned oats are used.

2 cups old fashioned oats
2 cups milk
1 1/4 cups water
1 apple, peeled and chopped
1/4 cup dried cranberries or 1/4 cup raisins
1/2-1 teaspoon cinnamon (saigon cinnamon is my preference)
1 teaspoon vanilla
honey (optional) or maple syrup, to taste (optional)

Steps:

  • Place milk, water and sugar in saucepan.
  • Chop apple into small, thin chunks. Add it and the dried fruit to the milk mixture.
  • Heat the mixture on medium until boiling or near boiling.
  • Add oats and cinnamon and cook for 3-5 minutes stirring occasionally. If desired, also add honey, brown sugar or maple syrup.
  • When oatmeal is cooked, add vanilla.

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F. Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small.
  • Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with nuts, if desired. (Or stir into the oatmeal.) Bake for 35 minutes or until the center appears *almost* set, which gives us a soft oatmeal. For drier and more solid baked oatmeal, bake until center has set. Cool for 5 minutes before serving. Spoon or slice and serve with yogurt, almond butter or maple syrup if desired. Cover leftovers tightly and refrigerate for up to 1 week.
