Savory Meatloaf With Tomato image

Number Of Ingredients 11

3 medium onions, sliced thin
6 cloves garlic, peeled and chopped
3 large ripe tomatoes, cored and chopped
1 cup bread crumbs
1 1/2 pounds lean ground beef
1 large egg
1 teaspoon dried oregano
2 tablespoons finely minced Italian parsley
Pinch crushed red pepper flakes
Salt and freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Place the onions in a heavy skillet, preferably nonstick. Cover and cook on low heat about 10 minutes, until the onions are soft and just beginning to brown. Stir in the garlic and cook a minute or so longer. Remove one-third of this mixture from the pan and set aside.
  • Add one-third of the tomatoes to the pan and cook about five minutes, until the excess liquid has evaporated. Transfer mixture to food processor and process to chop very fine.
  • Place the finely chopped onion mixture in a bowl and mix well with the bread crumbs, the beef, the egg, oregano, half the parsley, the red pepper and salt and pepper. Form the mixture into a loaf and place in a shallow baking dish. Bake 90 minutes.
  • While the meatloaf is baking, return the reserved onion mixture to the skillet. Add the remaining tomatoes and the olive oil. Simmer over medium heat about 10 minutes. Add the reserved parsley and season to taste with crushed red pepper, salt and freshly ground black pepper. Set this sauce aside until you are ready to serve the meatloaf, then reheat the sauce and serve it alongside.

My Favorite Meatloaf recipe with tomato sauce and brown sugar glaze is flavorful, fork tender and delicious. An easy dinner everyone loves, this classic classic meatloaf recipe is perfect for busy weeknights!

2 pounds lean ground beef
1 cup soft bread crumbs (roughly chopped or torn ½from 3 slices of fresh bread)
1 egg (slightly beaten)
1 15-ounce can tomato sauce divided
½ teaspoon sea salt
½ teaspoon ground black pepper
1 small yellow or white onion (chopped, about 1/2 cup)
½ can tomato sauce
¼ cup water
2 tablespoons Dijon mustard
2 tablespoons vinegar
2 tablespoons brown sugar, firmly packed

Steps:

  • Preheat oven to 350 degrees
  • Place the ground beef into a large mixing bowl
  • Add the breadcrumbs, egg, half the can of tomato sauce, sea salt, pepper and chopped onion, and mix well using your hands
  • Form the meat into a loaf about 2 inches high, and place in baking pan or casserole dish
  • Place loaf into oven, make the glaze, and pour glaze over meatloaf
  • Bake for 1 hour or until internal temperature reaches 160 degrees, according to meat thermometer
  • Pour the remaining half of the tomato sauce into a small mixing bowl, and add the water
  • Add the mustard, vinegar and brown sugar, and mix until well combined

This turkey and beef blended healthy meatloaf recipe keeps all the classic flavors intact but lightens its caloric load thanks to a few easy ingredient swaps no one will ever notice.

1/2 cup uncooked quinoa (, rinsed and drained)
1/2 cup chicken broth (, (or water))
1 tablespoon extra virgin olive oil
1/2 medium yellow onion (, minced)
1/2 red bell pepper (, seeded and diced)
2 garlic cloves (, pressed or minced)
1 tablespoon tomato paste
1 pound 90 percent lean ground beef
1 pound 93 percent lean ground turkey (, (99 percent lean will be too dry))
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1 1/2 teaspoons crushed red pepper flakes
3/4 cup low-fat plain Greek yogurt
2 large eggs (, lightly beaten)
1/4 cup tomato paste
2 teaspoons Worcestershire sauce
1 1/2 teaspoons apple cider vinegar
1 teaspoon honey
3 tablespoons warm water

Steps:

  • Combine the quinoa and chicken broth in a small saucepan and bring to a boil. Lower to a simmer, cover the saucepan with a lid, and cook for 12-14 minutes or until all the liquid has been absorbed. Let the quinoa rest, covered fro 5 minutes, then fluff for a fork. Set aside to cool slightly.
  • Preheat the oven to 350° F. Line a rimmed baking sheet with aluminum foil.
  • Heat the olive oil in a medium sauté pan over medium heat. Add the onion, bell pepper, and garlic and cook for 5 minutes or until the vegetables are very soft but not browned. Stir in the tomato paste and cook for 1 minute, then transfer the veggie mixture to a large mixing bowl. Let cool.
  • While the veggies are cooling, whisk together all the ingredients for the glaze. Set the glaze aside.
  • Add the ground beef, turkey and cooked quinoa, Worcestershire, salt, red pepper flakes, yogurt, and eggs to the mixing bowl with the veggies. Mix everything together with your hands until just combined.Don't over mix or the meatloaf will be dry.
  • Dump the meat mixture onto the prepared baking sheet. It will be very soft and wet. Mold the meat with your hands into a 9 X 5-inch rectangular loaf. Spread half of the glaze evenly on top.
  • Bake for 45 minutes, top with the remaining glaze and bake for another 15 minutes or until the meatloaf is cooked through.
  • Let the meatloaf rest for 10 minutes. Slice into thick pieces and serve.

½ cup ketchup
⅓ cup brown sugar
¼ cup lemon juice, divided
1 teaspoon mustard powder
2 pounds ground beef
3 slices bread, broken up into small pieces
¼ cup chopped onion
1 egg, beaten
1 teaspoon beef bouillon granules

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder.
  • In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.
